One of our first outings to dine-in for Ben's birthday and I have to say, I was a little anxious and worried at first but with the proper SOPS from the restaurant and us practising it as well, we felt safer. That aside, I see many people judging others who go out, and vice versa, those going out judging those who stay-in. During this period, let's have compassion and hold judgments to yourself because those who are out need to do it to make a living because many people are suffering, and perhaps many go out to get some fresh air as they need it for their mental health as we are social creatures whereas for those who are home, they perhaps have comorbidities, or couldn't take the vaccine due to health issues, etc. So, this post is a call to have more compassion during these trying times, and the world adjusting to the new normal 🙏

I have a new favourite restaurant in town and it’s @osteriabbr at @raffleshotelsingapore! I have been a huge fan of the establishment since they first opened in 2019 and was devastated when they shut their doors due to Covid. Back and stronger than ever, the new Osteria BBR brings you the freshest and the best from the Italian Riviera. Prices are incredibly reasonable, the curated wine list exceedingly impressive, and the food disarmingly delicious. This is one of my favourite dishes - Red Prawn Tartare with fine jelly, buffalo mozzarella and Kristal caviar. I’d recommend the 7-course tasting menu ($108/guest) + wine pairing. The bubbly at Raffles Hotel is always good but the wine that truly blew me away was the Barbera D’Asti. I have to reiterate that Osteria BBR seems to be offering unbeatable value - 2 course lunch : $36, 3 course lunch : $42 (from Monday - Saturday), daily happy hour from 3pm - 8pm, 1/2 dozen oysters + bottle of Prosecco : $88. Prices start at just $28 for pizzas, and $32 for pastas. And here we are talking about a beautiful restaurant by @alainducasse, one of the best chefs in the world, at the iconic and luxurious Raffles Hotel. I still can’t believe my eyes when I look at the prices on the menu.
I don’t know about you, but I know I will be back again, and again, and again. Definitely aiming to try everything on the menu!

Seeing the new post of @supertastermel , remind me I am actually keeping a video that @chef_menex making his Si-Chuan Crispy Chicken with the most original way : hand held the chicken, then pour boiling oil over and over again until it is cooked. Chili oil is being used in the video as Chef Menex is making a spicy version rather than a ordinary one. When you deep fried the chicken via this way, the skin will not absorb excess oil hence it stays crispy for a long time. The man who invented this technique was Chui Fook Chuen, the founder of Fook Lam Moon, the father to the founder of Seventh Son Restaurant, Chui Wai Kwan.
Chui Fook Chuen’s vital fried chicken technique affected the entire Chinese culinary world and the theory behind is still being widely apply in the Chinese culinary industry.
@chef_menex from @chinatanghk transformed the traditional Cantonese crispy chicken to the spicy new version he created : marinated the chicken overnight with various Si-Chuan spices then pour boiling chili oil to deep fried it until it’s cooked. As seen in the video.

●鶏もも肉:約800g
●花かつお:約15g
●醤油:大さじ2
●みりん:大さじ1
●お酒:大さじ1
●創味シャンタン:小さじ1(ウェイパーでもOK)
●生姜:小さじ1/2
●にんにく:小さじ1/2
●片栗粉:大さじ6
●米油(普通の油でもOKだけど米油だとヘルシーになるよ)
※漬け時間は鶏肉を常温に戻している時間だけでOKです

今回はお店で食べるよりお家で作る方が絶対美味しいと思った自信作です!
香りや衣まで本当に美味しい花かつおの香味唐揚げを作りました。
衣が今までにない食感でめちゃくちゃサクサクしてて
一口食べるとジュワっと鶏やかつお等の旨みと香りが溢れて
噛めば噛むほどむちゃくちゃ旨いんです。
後からかつおの風味が鼻から抜ける感じもとても上品で本当に堪らないですよ♪
お陰でご飯3合が秒で無くなりましたw
唐揚げが大好きなのでお店に唐揚げがあれば必ず頼むくらいなんですが
感動するほど美味しい唐揚げってなかなかないんですよね…。
正直、こうちゃんの唐揚げを超える唐揚げに出会った事がないです。
ただ一年間何度も作り続けてこの世界一美味いから揚げを超えるような
から揚げを完成させました。
漬け時間も短く、調味料の数も多くない本当に簡単なレシピになってます。
是非一度、この花かつおの唐揚げを試して欲しいです。
こうちゃんの唐揚げは本当に視聴者さんに大好評なんですが
今回の唐揚げもきっとあまりの美味しさに鳥肌が立つと思いますよ♪
ご飯とお酒の用意は忘れずに!!
[Ingredients]
● Chicken thighs: about 800g
● Hana Katsuo (Bonito Flakes): About 15g
● Soy sauce: 2 tablespoons
● Mirin: 1 tablespoon
● Sake: 1 tablespoon
● SOMI shantung (you can also use Weipa): 1 teaspoon
● Ginger: 1/2 teaspoon
● Garlic: 1/2 teaspoon
● Potato starch: 6 tablespoons
● Rice oil (You can use regular oil, but rice oil will be healthier)

We made a flavorful Japanese fried chicken with bonito flakes that is truly delicious, right down to the aroma and batter.
The batter has an unprecedented texture and is extremely crispy.
When you take a bite, the flavor and aroma of the chicken, bonito,
etc. overflows, and the more you bite into it, the more delicious it becomes.
The bonito flavor that comes out of your nose afterwards is also very elegant and really irresistible ♪
Thanks to this dish, three cups of rice were gone in seconds lol
I love fried food so much that I always order fried food when I find it at a restaurant, but it's hard to find fried food that tastes so good that it impresses me.
To be honest, I have never found a fried chicken that surpasses Ko-chan's one.
We kept trying it over and over again for a year and perfected it to surpass the most delicious fried chicken in the world.
And finally we found a really simple recipe with a short marinating time and not too many seasonings.
I would like you to try this fried chicken with bonito flakes.
Ko-chan's fried chicken is really popular among the viewers, and I'm sure you'll get goosebumps from the deliciousness of the fried
chicken this time, too lol

To the fascinating world of standing swallowing! I visited "Drinking place eating place trip" in Chiyoda-ku, Tokyo. It is a bar under the guard, about a 1-minute walk from the east exit of "Suidobashi Station" on the JR Chuo Line. Although it is a compact store, I was able to spend a very comfortable time in a cozy atmosphere. The food is very reasonable, and it's a big attraction that you can drop in and drink quickly. Please take a look at the atmosphere of the restaurant, which is easy for one person to drink!
