I was craving for hawker food recently. Especially what I am cooking today. Fish head noodles soup 鱼头米粉 (Yu Tao Mai Fun) is a popular hawker food in Malaysia. It is believed to have originated from the Teochews. I was mentioning Hokkein but actually it is more Teochew as I suddenly remember the pickled plum and salted vegetable are very common ingredients for Teochew's dishes, especially steamed fish. It is one of my favourite fish soups with noodles. Here this is my first time trying to cook this. I must say I love it. My kids too. I am proud of myself. LOL!
Ingredients for 10 pax:
. 2 kgs grouper fish head, cut into big pieces. U can use any big fish head
. 2 pcs dried fish
. 2 pack thick rice noodles
. 2 pcs pickled mustard/salted veggies, cut into long strips
. 200 g young ginger, sliced thinly
. 5 tomatoes, cut into wedges
. 2 medium or 5 small size tofu
. 6 pickled plums, mashed or whole pieces
. oil
. 5 litres water
For marination of fried fish head:
. 2 tsp white pepper
. 5 tsp salt
. 4 cup cornflour flour, or tapioca flour
For seasoning:
. 2 tbsp fish sauce
. 1tbsp white pepper
. salt to taste (optional)
. 3 tsp sesame oil
. 1 can or 2 evaporated milk
. 6 tbsp Shao Xing Wine or more (optional)
Garnishing:
. spring onions, sliced or cut
Add-on: You can always add extra vegetable like Chinese cabbage or Chinese lettuce. Make sure you have this with cut chilis with soy sauce or some sourish spicy sauce. I also love adding fried onions in my soup.
I will cook this more often for sure.

We are so "ang ang" today. Hot Hot RED to lift up our spirit of another restricted movement order. OK put that negativity aside.
This yummy-licious and appetizing salty veggie tofu soup aka "Ham Choy" soup is one comfort food I will never stop having too. I want to share all recipes from my Poh Poh or Mom to u all slowly but surely. My Mom is also a fabulous cook.
Basically salted veggie is a pickled mustard veggie which are quite affordable, common and down-to-earth kind of ingredient, but delicious and appetizing. Chinese believes this soup can help to reduce internal heat and quench thirst.
Ingredients for 6-8 servings:
. 300 g salted vegetables or 2 packs. More is good!
. one whole skinless chicken or 2 whole chicken bones (you can use spare ribs or pork bones)
. 4 large tomato - cut into wedges
. 2 blocks of tofu
. 3 big onions
. some goji.
. 6 red dates(optional)
. 2 litre of water- just fill up the pot
Add-ons (which I didn't have in stock today):
. 1 whole carrot
. small piece of pounded ginger
. 1 tsp white peppercorns (optional for heat) - roughly crushed
You DON'T need to use any seasoning!
It is so amazing that some of these simplest ingredients can turn a dish into something so flavourful. I normally just cook them at once in a rice pot or pressure cooker. Save time. You can eat it by adding some bihun or glass noodles.

材料:
A.內餡
豬後腿肉250g
蒜頭 3-4瓣
青蔥 150g
調味料 :
醬油 1.5大匙
米酒 1.5大匙
鹽 1/4茶匙
糖 1大匙
粗粒黑胡椒粉 1茶匙
白胡椒粉 1/2茶匙
五香粉 1/4茶匙
麻油 1大匙
B.外皮
a.油皮麵皮部份
中筋麵粉300g
細砂糖15g
鹽1g
液體植物油15g
速發乾酵母 2g
水160ml
b.油酥麵皮部份
低筋麵粉90g
液體植物油30g
C.表面裝飾
熟白芝麻 2-3大匙
*放入預熱至210度c的烤箱中烘烤25-26分鐘至表面金黃
Taiwan Pepper cake full recipe:
serves/makes: 8
Ingredients :
A.filling
250g pork
3-4 cloves garlic
150g Scallion
seasoning :
1.5 tablespoons Soy sauce
1.5 tablespoons rice wine
1/4 teaspoon Salt
1 tablespoon sugar
1 teaspoon black pepper
1/2 teaspoon White pepper
1/4 teaspoon chinese five spices
1 tablespoon sesame oil
B.pastry
a.pastry skin
300g all purpose flour
15g caster sugar
1g salt
15g vegetable oil
1/2 teaspoon instant yeast
160ml water
b.Crispy pastry
90g cake flour
30g vegetable oil
C.Topping
2-3 tablespoons White sesame
*Preheat the oven to 210°C (410°F) 25-26min to golden brown

1.讓肉類快速入味
鹹豬肉
材料:
五花肉 700公克/pork belly 700g
醃料:
蒜泥 60公克/garlic puree 60g
黑胡椒粉 1大匙/black pepper powder 1tbsp.
五香粉 1茶匙/Chinese five spices 1tsp.
鹽 1茶匙/salt 1tsp.
糖 2茶匙/sugar 2tsp.
米酒 2大匙/cooking rice wine 2tbsp.
作法:
1. 五花肉放入真空保鮮袋中,再加入所有醃料,利用袋子將醃料和肉混合抹勻。
2. 放入真空機,選擇【真空/密封鍵】,密封真空後放入冰箱冷藏,醃8小時至入味即可。(一般醃漬約需2天才能入味)
3. 取出放入已預熱的烤箱中,以180℃烤約20分鐘即可。
2.真空浸泡入味又軟嫩
醉雞
材料:
A
去骨雞腿 4支/chicken thigh 4pcs
鹽 適量/salt q.s.
米酒 適量/cooking rice wine q.s.
B
當歸 5公克/dong quai 5g
枸杞 10公克/goji berry 10g
鹽 1茶匙/salt 1tsp.
高湯 300公克/stock 300g
紹興酒 300公克/Shaoxing wine 300g
作法:
1. 去骨雞腿撒上鹽、米酒,利用錫箔紙捲起,將雞腿煮熟。
2. 將煮熟的雞腿放入真空保鮮罐,放入材料B。
3. 將真空吸管配件一端插入抽氣孔,另一端插入專用真空罐上,選擇【專用罐真空鍵】,浸泡約6小時至入味。(一般浸泡約需至少1天才能入味)
4. 取出切片食用即可。
3.可以做舒肥料理
香料雞胸
材料:
雞胸 1付/chicken breast 1pcs
鹽 適量/salt q.s.
白胡椒粉 適量/white pepper powder q.s.
義大利綜合香料 適量/Italian seasoning q.s.
作法:
1. 密封袋中放入雞胸,撒上鹽、白胡椒粉和義大利綜合香料,將醃料和雞胸混合抹勻。
2. 放入真空機,選擇【真空/密封鍵】,密封真空。
3. 萬用鍋內鍋中加入水,放入真空後的雞胸肉。
4. 選擇舒肥,設定65℃、20分鐘。
5. 取出切片即可。
4.單片分裝更新鮮
香煎鮭魚
材料:
鮭魚 1片/salmon 1pcs
黑胡椒粉 適量/black pepper q.s.
鹽 適量/salt q.s.
作法:
1. 將真空袋裁切成需要的大小,再將袋子放入真空機中,選擇【封口鍵】,將其中一端密封。
2. 鮭魚放入真空袋中,撒上鹽和黑胡椒粉,在袋中混合抹勻。
3. 將袋子以放入真空機,選擇【真空/密封鍵】,密封真空後放入冰箱冷藏醃漬約20分鐘即可。
4. 取出將鮭魚放入鍋中,雙面煎至金黃上色且熟即可。
5.做冰箱小菜快又方便
醃鹹蜆仔
材料:
蜆仔 600公克/Asian clam 600g
蒜仁(拍鬆) 20公克/garlic
薑片 15公克/ginger 15g
辣椒 1根/chili pepper
調味料:
米酒 50公克/cooking rice wine 50g
醬油 100公克/soy sauce 100g
糖 1大匙/sugar 1tbsp.
煮蜆仔的水 250公克/stock 250g
作法:
1. 蜆仔用中火隔水加熱至蜆仔微微開口,取出瀝乾。
2. 將蜆仔放入真空保鮮罐中,放入其餘材料,再倒入所有調味料。
3. 將真空吸管配件一端插入抽氣孔,另一端插入專用真空罐上,選擇【專用罐真空鍵】,放入冰箱冷藏約1小時至入味即可食用。(一般醃漬約需1~2天才能入味)

●豚挽肉:約350g
●にんじん:1本
●長ねぎ:1本
●生姜
●えのき:2パック
●仙台味噌:大さじ
●お酒:大さじ4
●砂糖:大さじ2(もっと糖質を抑えたい方はラカントでもOK)
●醤油:大さじ1
●あごだしの白だし:小さじ1(干し椎茸を使わない場合は倍量くらい入れて下さい)めんつゆ、本だしでもOK
●あれば干し椎茸と戻し汁:2個くらいと100ml
●米油(普通の油でもOK)
●ブラックペッパー
●お好みで七味唐辛子(これがまためっちゃ合うんです♪)
※材料の分量を変更される方や味の濃さに不安がある方は調味料は少し少なめにして
味見をしてから足してあげると失敗しないでお好みの味の濃さに出来ますよ。

究極のご飯泥棒『やみつき肉味噌えのき』を作りました。
茸や出汁、肉や香味野菜の旨みが凝縮されていて
味の深みが凄い事になってます。
生姜やネギの香りも良いのですが
最後にかけたブラックペッパーの香りがまた
やみつきにさせてくれます♪
あまりにもご飯が進むのでご飯三合が秒で無くなりましたw
ご飯にはもちろん、パスタや中華麺に合わせても最高に美味しいですよ。
糖質制限をされている方には豆腐や焼いた厚揚げの上に乗せたり
油揚げの中に入れて焼いても最高に美味しいと思います。
とても簡単なので是非作って色んな物に合わせて食べてみて下さい。
[Ingredients] (Storage Period: about 4 days refrigerated)
● Minced pork: about 350g
● Carrot: 1 stick
● Leek: 1
● Ginger
● Enoki mushrooms: 2 packs
● Miso: 4 tablespoons
● Sake: 4 tablespoons
● Sugar: 2 tablespoons (you can use Lakanto if you want a lower sugar content)
● Soy sauce: 1 tablespoon
● Fish white soup stock: 1 tea spoon (if you don't use dried shiitake
mushrooms, double the amount)
● Dried shiitake mushrooms and broth (if available): about 2 and 100 ml
● Rice oil (regular oil is also OK)
● Black pepper
● Spicy powder to taste (It goes really well with it ♪ )
If you want to change the amount of ingredients, or if you are not
sure about the intensity of the flavor, use a little less seasoning.

The flavor of the mushrooms, soup stock, meat, and savory vegetables
is concentrated in this dish. The depth of flavor is amazing!
The aroma of the ginger and leek is good, but the black pepper at the
end makes it addictive ♪
It was so good that I finished three cups of rice in a second lol
It tastes great with rice, pasta or Chinese noodles.
If you are on a carbohydrate restriction diet, you can put it on top
of tofu or baked fried tofu, or bake it inside fried tofu.
It is very easy to make, so please try making it and eating it with a
variety of things.
