Lai Yee's Kitchen - Nutella Bars
Another Spoil-Your-Kids-Day kind of dessert for Friday movie night. They were craving for Nutella and so I am making Nutella bars for them. It is so easy to prepare and no baking is needed. Let's do it!
Ingredients for 8-9" square tray/bowl :
- 1 pack of Digestive biscuits, pounded
- 1 cup of dark chocolate chips or any baking chocolate
- 1/2 cup maple syrup or sugar. I like them less sweet, so I had reduced to 1/4 cup
- 1/2 cup butter, melted
- 5 tbsp Nutella
- 2 tbsp peanut butter (optional)
Add-ons: you can always add hazelnuts, coconut powder or almond flour into the crust for more nutty flavour. Have fun!
I did not show u where I have added the peanut butter in the video. But you may add between the crust base and the chocolate layer. I left them in the freezer for about 1hour. It was delicious. So nice with a cup of coffee or tea.

Lai Yee's Kitchen - Braised Basil Chicken Yee Mee Noodles红烧罗勒鸡焖伊面
Selamat Hari Malaysia! Proud to be a Malaysian. A country filled with flavours, culture, good people and great weather. So today I am cooking a fusion fried noodle. I just took out whatever I have in my fridge and started cooking this. Yummy though. Sometimes no planning is good and can be exciting with the outcome. Jom masak masak!
Ingredients :
- 1 pack of 5 small yee mee rolls
- 15 or more drumettes or chicken fillets
- 2 packs or basil leave (Roughly 150g or more)
- 200g shredded long cabbage
- 2 tbsp chopped garlic
- 3 tbsp chopped onion
- 2 tbsp shredded ginger
- 2 tbsp soy sauce
- 2 tbsp oyster sauce
- 1 tbsp dark soy sauce
- 1/2 tbsp white pepper
- 1/2 litre water or more
You can always add any other type of vegetable. I love braised yee mee noodles, it has a smoky taste and very appetizing.

Lai Yee' Kitchen - Hash Brown

So this is Part 1 :
We must spoil our kids once in a while and today is Saturday, it is definitely worth doing so. Let's go..we make hash browns!
Mika has a special request for these browns. He wants them to be spicy. They are nice actually. Good suggestion Mika!
Ingredients (for 3 to 4 regular pizza size hash browns):
- 8 big potatoes
- 2 cups of all purpose flour (I used gluten free flour)
- 2 tbsp chili powder (optional)
- 1 tsp chili flakes (optional)
- 3 tsp black pepper
- 2 tbsp salt
- 4 eggs
- 1 cup cheese
- oil
I fried them into a shape of the pan like pizza with the thickness around 1.5cm to 2cm, but you can also make them very thin and crispy. I like both styles.

You will need to prepare mushroom broth as the base. I didnt have mushrooms, so I did not show u in the video. You can grind the mushroom to add thickness to the soup! Also I had too little chili in the soup. Be Brave, add more!
Ingredients for 4 to 5 servings :
For the actual Laksa paste -
. 5 fresh chillies if u like it spicy
. 12 shallots
. 2 stalks lemongrass
. 4 cloves garlic
. 1 small piece turmeric around 3cm size
. 1 small piece of fresh peeled galangal (or ginger) 4 to 5cm size
. 1 tablespoon vegan shrimp paste (or miso)
- Blend all that into a paste, then saute in hot oil for 8 to 10mins -
For The BROTH :
. 6 to 7 cups of water or Mushroom broth
. around 6 pieces of Asam Keping or tamarind paste 3 tbsp. brown sugar
. salt for tasting
. 1 tbsp soy sauce
. one or more rolls of cut vegetarian fish
- Boil all together with the sauteed paste -
For Garnishing:
. Daun kesum leaves/ asam leaves
. Fresh mint. thin sliced ginger flower and lemon grass
. Chopped or sliced pineapple
. Finely sliced red onions
. Vegetarian shrimp paste for tasting
. some cut lime . you can also add thin slices of lettuce
Last but not least, the Laksa noodles or thick vermicelli/Bihun noodles.
