🥦 和平食譜:烤蔬菜溫沙拉 Warm salad
天氣漸漸轉涼了,來碗口感跟風味都十分豐富、有層次的溫沙拉吧🌱,沙拉裡增添了茴香香草,其獨特的香氣,絕對能讓你眼睛為之一亮喔🤩🤩🤩
step1.洗淨黑米與藜麥,並用1:1的水量,下鍋蒸熟。
step2.將櫛瓜、杏鮑菇切薄片,同時,洗淨鹿角萵苣、紫高麗菜和茴香。
step3.將煮熟的鷹嘴豆,用少許橄欖油、小茴香粉、胡荽粉、鹽、黑胡椒調味,拌勻後,放入烤箱以180度,烤15分鐘。
step4.起一油鍋,將杏鮑菇、櫛瓜煎至兩面金黃,加少許鹽、胡椒調味。
step5.拿一大碗當攪拌盆,加入橄欖油、海鹽、胡椒、蘋果醋、檸檬汁,再放入鹿角萵苣,充分拌勻。
step6.緊接著,拿一個喜歡的盤子,開始擺盤囉😉依序排列鹿角萵苣、紫高麗菜、櫛瓜、杏鮑菇、烤鷹嘴豆、玉米粒,中間擺上一球黑米藜麥飯,最後,隨性灑上黑白芝麻、茴香、檸檬汁,即完成。
step7.享用前,請充分攪拌喔。

我想,這就是所謂的 "和平飲食" 呢😚
🥦 和平食譜:紫蘇涼拌米粉
純米米粉,配上特調「神秘魔法紫蘇醬汁」,吃起來酸酸甜甜,若隱若現的花生香非常迷人!
清爽又滿足的一碗料理,很適合悶熱的現在呢💪🏻

/ 步驟 /
step1.將板豆腐跟雪白菇分別香煎至金黃色,並以少許海鹽與黑胡椒調味。
step2.川燙蓮藕片約5分鐘,撈出放涼。
step3.此時,製作魔法紫蘇醬汁:將紫蘇葉洗淨切成小丁,與泡發的枸杞一同放入小碗中,加入黑白芝麻、花生油、柑橘醋、無麩質醬油、楓糖漿、海鹽,並用適量冷開水調開,放置一旁備用。
step4.緊接著,就可以來川燙米粉囉:待水滾後,放入米粉煮約30秒,即可熄火,讓米粉繼續浸泡在熱水中至完全軟化,就可以撈起來囉~。
step5.取一大碗,先放入燙好的米粉,再淋上 step3. 的魔法紫蘇醬汁,最後,依序擺上香煎板豆腐、雪白菇、蓮藕片、醃蘿菠塊,即完成。
step6.大口享用吧。
/ 材料 /
- 純米米粉....... 1片
- 蓮藕.............. 6片
- 板豆腐.......... 1/2塊
- 雪白菇.......... 1/2包
- 醃蘿菠塊...... 適量 (可省略)
🌱魔法紫蘇醬汁
- 紫蘇葉............. 10片
- 枸杞................. 適量
- 楓糖漿............. 1 匙
- 花生油............. 2 匙
- 柑橘醋............. 1 匙
- 無麩質醬油...... 3 匙
- 黑白芝麻.......... 適量
- 海鹽................. 適量
- 冷開水............. 適量
🌞 補充:
1.如果手邊沒有花生油,可用其他油類代替。 (但是花生油是最佳推薦喔)

One Pot Sesame Oil Chicken Rice
Ingredients:
Serves 6 pax

60ml (2 fl oz) sesame oil
1 thumb-size young ginger (sliced thinly)
460g (16.2 oz or 1 lb) chicken thigh meat (cut into bite sizes)
2 tablespoons Chinese white rice wine (optional)
5 cloves garlic (sliced thinly)
A few dashes of white pepper
3 cups rice (use a rice cup to measure or a 210ml (7.1 fl oz) cup to measure)
2 tablespoons oyster sauce
1 teaspoon chicken stock powder (You can use chicken stock to replace water)
1.5 tablespoons premium dark soy sauce
3 cups water (use a rice cup to measure or a 210ml (7.1 fl oz) cup to measure)
