Legend Palace 勵宮酒店 的勵皇軒除了單點菜單外,還有近年流行的「廚師發辦」選項,做中菜的「廚師發板」比起日式更有難度,因為中菜有較多元化的做法包括蒸、炒、煮和燉等,主廚 Johnny 認為中式餐飲不只是傳統以「一大碟」的形式呈現,大家需要構思如何有新的方法令更多人了解中餐。以勵皇軒的招牌菜「富貴雞」為例,以焗「梳乎厘」的方式為靈感,廚師把蛋白包裹着內有火腿粒、蝦仁和蓮子的雞腿肉,一切開,酒香噴發四射,富美感又美味,一起來看更多:
Besides a la carte, The Grand Palace also offers a seasonal ingredient-driven tasting menu. Compared with the “omakase” in Japanese style, a Chinese tasting menu is more challenging because of the cuisine’s complex cooking technique including steaming, frying, boiling or braising, etc. Chef Johnny believes that Chinese cooking shouldn’t be confined as a “one big plate” cuisine, we need to think of some new approaches to let more people to know about Chinese cuisine. Take the Roasted Chicken with Chinese Wine Flambe as an example, chef revisited the traditional recipe with the inspiration from the french Soufflé dessert. The dish is served with incredible aroma during the cutting process, full of flavours and aesthetics as well. See more in this episode of Edible City:

來自台灣的日式梳乎厘班戟🥞 超鬆軟好食!!! 因為今次想去打卡,所以沒有叫含有雪糕的配搭,怕拍照時會溶掉😂 有機會的話,絕對想再去試一下!這裏唯一的缺點就是沒有座位😖 武漢肺炎期間又不想隨便到處坐或放置食物,所以進食過程挺狼狽的。
焦糖奶油脆脆 ($65HKD) 雖然它不像Flipper’s/幸福,真真正正來自日本,但我可以保證,食物質素沒有差別👍🏼 我特別喜歡pancake上面的忌廉,輕盈可口☁️ 最後還灑上了腰果,cranberry乾和焦糖脆脆!Yummy die😍
珍珠瀑布 ($52HKD) 視覺效果一流🤤 但論味道Oppa就較欣賞前者啦。難怪餐牌上亦沒有將它列明為店長推介。不太清楚流質的是不是奶蓋🤔 反正就覺得蛋味好重。

With Coronavirus running amok, we’re reluctant to sit or put our food just anywhere, so it can be quite a hassle😔
Caramel Cream & Crunch ($65HKD) Souffle Pancake with Whipped Cream & Caramel Honeycomb. SO good😍 The pancakes were fluffy, and I was particularly enchanted by the pile of cream on top☁️ Cashews, craisins and other toppings were also added along with the crunchy honeycomb pieces. Yum!
Pearl Syrup ($52HKD) Felt like this was a bit of a misnomer cuz the literal translation should’ve been “Boba Waterfall”😂 Mouthwatering presentation, but taste-wise I prefer the former option🤔 Felt like the chewy texture of the pearls did not match with the pancakes too well.

之前與其他YouTuber合作拍片時,示範了這道當年我在藍帶第一堂甜品課中學過的「飄浮之島」。雖然很簡單,但好像不是太多人聽過或者吃過這到甜品。就讓我分享這道由最基本的蛋白霜和蛋奶醬組合而成的甜品給大家吧!
P.S. 學會焦糖裝飾也可以套用在其他甜品上呢!
Floating Island was one of the first desserts that I learned in Le Cordon Bleu Culinary Arts Institute years ago. It is a combination of meringue and creme anglaise. Let me share with you the techniques and details of making this classic French sweet indulgence.

This version of omelette is nothing like the omelettes that you have tried before. It is VERY FLUFFY and melts in your mouth. If you have time, feel free to try it out! It is actually fun whisking the egg whites by hand and the final product tastes divine! You can even add cheese / sauces to make it even tastier!

Hi, everyone. :) Today we'll show you how to make a delicious and fluffiest skillet pancake inspired by a famous Japanese TV series: Castella Pancakes.
This castella pancake is very popular because of a Japanese TV series named "Solitary Gourmet (孤独のグルメ, Kodoku no Gurume) " which based on a bestselling comic. The story is about a traveling salesman Gorō visits lots of places on business, but he gets hungry easiely after visiting customer, so finding a local cuisine to enjoy is the most important thing of his day.
This dessert appeared in the fourth episode of the eighth season. It’s fluffy and smell so good. You can tell it's the one of the most comforting food. In this video, we’d like to share with you how to make it at home, just use a cast-iron skillet. This pancake is a matter of time, so the most important thing is always serve immediately out of oven. :-)

Castella Pancakes/Skillet Souffle Pancake Recipes
Cast-iron skillet size : Ø 16cm
✎ Ingredients
egg 2
granulated sugar 35g (10g for yolk, 25g for egg white)
honey 15g
milk 30g
cake flour 40g
baking powder 2g
butter, powdered sugar for garnish
✎ Instructions
1. Oil the skillet (Canola oil or grape seed oil is ok)
2. Separate egg yolks from egg whites. Place the egg white to freeze for 5-10 minutes.
3. Mix egg yolk with 10g granulated sugar, honey and milk, whisk until well combined.
4. Sift the flour and baking powder into the egg yolk mixture. Whisk until the flour is no longer visible. Set aside.
5. Beat egg whites on medium high speed. Gradually add sugar in thirds, beating until soft peaks form.
6. Add 1/3 of the meringue into egg yolk batter and mix well until the meringue are no longer visible.
7. Pour the batter into meringue, blend with a spatula to mix the batter to be smooth flowing and glossy.
8. Pour the batter into a 16cm cast-iron skillet, knock the pan lightly over the table to remove the larger air bubbles.
9. Preheat the oven to 180°C, bake for 20 minutes in total, at the 9 minute, take it out, use a sharp knife to cut a cross marking on cake's surface. Return into oven immediately, continue baking until cook though.
10. Remove from oven, top with a pad of butter and sprinkle some powdered sugar. The cake is incredible fluffy and delicious, enjoy it immediately.
