Lai Yee's Kitchen - Homemade Red Bean and Matcha Mochi

Jom, we go to Japan today!
Konnichiwa everyone. Who doesnt like Japan? If you have not been, let me tell you more. Japanese are super good with the pastry and confections like sweets, wagashi, mochi and many other snacks. Mochi is one of Maya's favourite dessert snacks. She will request to have Mochi every day or any other day. So I have decided to make my own today. I am not an expert, but it is fun to do!

Ingredients for 10 small mochi:
. 160g Glutinous rice flour
. 40g Corn starch
. 60g sugar
. 280g milk (I used Almond milk for this recipe)
. 20g oil (I used coconut oil)
* Mix all this together and steam for 30mins

. 4 tbsp of glutinous flour to make Cooked Flour for roling
. Red bean paste (Which I bought at Lazada under JK Bakery Shop)
* you can always make from scratch!

Hope you find this recipe easy, I like the consistency and stickiness. Will not change any of the recipe. Unless you have a better to share with me, I shall try out again. Share ok!

Miss traveling really. I went to Japan many times. Mostly for shows. 1995, i was there for Osaka Grandprix Young Designer competition and brought back Cotton Award. Then I was there in Osaka again for Sakura Collection show 2014. I used to travel to Canada via Tokyo and stopped over for a night or 2, just to enjoy the vibes and the crazy fashion streets there. It was so fun and cool. Japan is filled with kawaii stuff which none of us should say NO to. Eye candies everywhere really!

After numerous successful bakings recently, it naturally spurs up my confidence to even attempt on my fave but rather challenging 🇫🇷 patisserie, "Croissant" which i usually have it at cafe. I was actually craving for it and with the current movement restriction order in place, that doesn't help either.

Until- i heard of this frozen 🥐 from Bakery Cafe HACHI!

So i decided to take a quick break from the kitchen and try out these frozen croissant (available via delivery) by following the simple instructions given and the result is simply stellar! ♥

Now, you and me can bake our own croissants freshly from the oven easily anytime, anywhere, just at the comfort of our home.
(Not forgetting it also saves our time tremendously if we were to make it from scratch- we all know how taxing it would be)

麵包每日由女店主親手製造，而且menu轉得非常頻密，大概每星期就更新一次！店子不是好大，加上疫情關係，座位就更少了... 建議排隊的時候問清楚是外賣還是堂食的人龍，不然就排冤枉隊咯🤭
手作麵包從左至右介紹一下。這裡最著名的，大概是麻糬作品吧🤤 即使每星期更換一次menu，當中都必定會有一款麻糬包包！
伯爵茶麻糬貝果 ($40HKD) 別說麻糬了，根本就連bagel本身都煙煙韌韌的😍 煙韌控肯定會一試就愛上！還有，bagel焗得好高身好fluffy，外表就已經令人垂涎三尺了🥯
茉莉綠茶紅豆貝果 ($45HKD) 煙韌bagel裡面有紅豆，綠茶醬和芬芳的茉莉味。噢，by the way，Oppa食完後才發現這兩個貝果原來都是純素Vegan的!?🌱 這可能是我食過最好味的純素麵包👍🏼
黃豆粉醬抹茶卷 ($38HKD) 抹茶麵包裡面捲入了黃豆粉醬，然後上面再塗上了濃濃的抹茶醬🍵 好像令我想起小時候看的“日本麵包王”... 嗯，我大概就是那種反應💆🏻‍♂️
Finishing off my documentation of @dear.coffee.bakery in #TaiWai. The breads here are freshly handmade from scratch daily by the owner👩🏻‍🍳 They offer around 4 choices of bread everyday, but the menu changes once per week, so every visit is special and unique!🤩 Shop is not large, and due to the Coronavirus, seat availability is even more limited. Make sure you know what you’re lining up for, since there’s a line for dine-in and another for takeouts.
Here are the names from left to right. Their mochi products are super famous😍 Despite the constant menu updates, they never fail to include at least one item with mochi in the mix!
Earl Grey Bagel with Mochi ($40HKD) Asian bagels are different from typical bagels becuz these are somehow chewier🥯 With the addition of mochi inside, my jaws almost fell apart from chewing😂 Also loved how the bagels looked super tall and pillowy!
Jasmine Green Tea Bagel with Red Bean ($45HKD) The gentle touch of jasmine was fragrant and nice, nothing artificial here. Btw, it was after the meal that I realized that both of the bagels were Vegan?!🌱 What?! These are probably the best vegan, leavened baked goods I’ve ever had🤯
Uji #Matcha Roll with Kinako Paste ($38HKD) Matcha bread with Kinako rolled in btwn the layers, then finished off with matcha spread🍵

1) Do you like eating cakes?

Well I must say that cakes are the best comfort food in the whole world. Everytime I pass a bakery, I often stand there for a few good minutes so that the freshly baked chocolate cakes with sugar dusting would whiff through my senses, and makes me feel so happy.

2) Do you like dessert?

Well I must say that I’m a big fan of dessert because it helps put me in a good mood. You know the feeling when you’ve turned to a box of chocolate on a bad day just so you could feel that there’s still hope left in this world.

Nothing give me more pleasure than eating my favorite dessert.

3) Have you ever made cakes?

Yes, I have. I’ve learned how to make them from scratch. But I think the whole process of baking is a little bit complicated because it involves a lot of different ingredients and also equipment. It’s nice to bake once in a while
