May be 1 day I should write a book about Cantonese food somehow lol together with 知心友 😂 since many details are forgotten nowadays sigh
In this small yet famous shop here, the Fried Pork is in an elongated shape, which I am subjectively not a fan of, also its grainy batter is sort of weird. It also comes with sauce on the side, which in itself is a taboo since Kitchens are usually judged by how well they coat the fried pork with the sauce, after leaving the wok 離鑊. The sauce is not bad, but somehow if u smell it, it attacks your nostrils like it's using a bad vinegar. I know it sounds a bit weird, but for some reason, u can almost judge this recipe by smelling alone 🤔 Upon tasting it, its still a bit off balance and dark, but u can tell they have dissolved some Hawthorn berry chips 山楂餅 into it.

During this period, it is important that everyone stays home as much as possible. While travelling seems beyond reach, the Singapore Tourism Board wants you to experience VisitSingapore by sharing locally inspired cocktail recipes that you can recreate at home.
Today, we are sharing with you a local classic, the Singapore Sling. This cocktail was created in the early 1900s at the Long Bar in Raffles Hotel. It is a “tiki” style cocktail that is sweet, refreshing and very delicious. Our version of the Singapore Sling uses fresh pineapple juice –although it might be a little more troublesome but trust us, it is totally worth it. We are also using the Singapore Dry Gin from Brass Lion Distillery, this gin is perfect for this drink as it contains aromatics like torch ginger flower and lemongrass.
Try making the Singapore Sling at home! You should also visit Singapore to try the OG version at the Long Bar once this is over. Until then, let's all cheers from the comfort of our own homes.

Serving:
Ingredients:
30ml Brass Lion Gin
Juice from ¼ Pineapple
20ml Cherry Heering
30ml Fresh Lemon Juice
15ml Grenadine
5ml Cointreau
5ml DOM Benedictine
3 dashes Angostura
Soda Water
Steps:
1. Blend fresh pineapples into juice, and strain into a cocktail shaker.
2. Add fresh lemon juice, grenadine, Brass Lion Gin, Cherry Heering, DOM Benedictine, Cointreau and angostura bitters. Stir and taste.
3. Add ice into a highball glass. Add ice into the shaker and shake for 6-8 seconds.
4. Strain into highball glass with ice. Top with soda water. Garnish with pineapple wedge and cherry.

Virgin Mojito Of 3 Types Recipes
✎ Ingredients
☞ For the Virgin Mojito
fresh mint leaves, 2g, 12 to 14 small or 6-8 big ones
limes, 35g, cut into wedges
brown sugar 20g
ice cubes or crushed ice
mineral sparkling water or club soda, chilled
☞ For the Mango Mojito
fresh mint leaves, 2g, 12 to 14 small or 6-8 big ones
limes juice, 10g
brown sugar 10g
mango puree 50g
fresh mango, QS (optional)
ice cubes or crushed ice
mineral sparkling water or club soda, chilled
☞ For the Pineapple Mojito
fresh mint leaves, 2g, 12 to 14 small or 6-8 big ones
limes juice, 10g
brown sugar 10g
fresh pineapple 50g
ice cubes or crushed ice
mineral sparkling water or club soda, chilled
Instructions
☞ For the Virgin Mojito
1. Put 20g of brown sugar, 50g of lime wedges in a tall cocktail glass.
2. Slapping mint leaves between hands, and rub the mint leaves around the rim of the glass and drop them in, then gentle mashed with a muddler, to release the mint oils and lime juice. The mint leaves should not be shredded.
3. Fill the glass with ice cubes, and add the natural mineral sparkling water. Stir to mix up the sugar. Taste, and add more sugar if desired.
4. Garnish with lime or mint, serve and enjoy.
☞ For the Mango mojito
1. Put mango cubes in a food processor or blender until smooth.
2. Add 1 tbsp or 10g of brown sugar, 10g of lime juice, and mint leaves in a tall cocktail glass, then gentle mashed with a muddler, to release the mint oils and lime juice.
3. Pour 50g of mango puree and several mango cubes.
4. Fill the glass with ice cubes, and add the natural mineral sparkling water. Stir to mix up the sugar. Taste, and add more sugar if desired.
5. Garnish with mango, and serve.
☞ For the Pineapple Mojito
1. Rimming a glass. Wet the rim with a piece of pineapple. Put salt on plate, then dip the rim in salt.
2. Add 1 tbsp or 10g of brown sugar, 10g of lime juice, mint leaves and 50g of pineapple slices in a tall cocktail glass, then gentle muddle the pineapple and mint leaves.
3. Fill the glass with ice cubes, and add the natural mineral sparkling water. Stir to mix up the sugar. Taste, and add more sugar if desired.
4. Garnish with pineapple, and serve.

Melted butter (unsalted) 30g

Cream cheese 250g
Fresh cream 200ml
6 pieces of cream sand cocoa cookies
① Sugar 60g
① 1 teaspoon lemon juice
3g powdered gelatin
Water (for gelatin) 15 ml
Hot water (hot water, 60°C)
----- Toppings -----
8 pieces of cream sand cocoa cookies
[How to make]
1. Make a base. Put the cream sand cocoa cookie in a storage bag with a zipper and beat it with a rolling pin. When it becomes fine, add melted butter and mix well. Fill the molds without any gaps, press them into the refrigerator, and cool them in the refrigerator for about 30 minutes.
2. Make the dough. Put the cream sand cocoa cookie in a zipper storage bag and crush it roughly with a rolling pin.
3. Fill the powdered gelatin with water, soften it, and dissolve it in a water bath.
4. Put the fresh cream in a bowl and mix with a hand mixer until the horns stand.
5. Put cream cheese in another bowl and mix with a rubber spatula until creamy. Add 1 and 3 and mix well, add 2 and 4 and mix thoroughly.
Pour into a 6.1 cream cocoa cookie for topping, wrap it in your hand and wrap it in the fridge for 1 hour. Once hardened, cut into pieces and serve in a bowl.
[Cooking Tips]
The temperature of the hot water used for gelatin varies depending on the manufacturer you are using, so please check and follow the usage instructions.
Be careful not to boil gelatin because it will be hard to harden when it is boiled.
In addition, please note that it may not harden if you put fruits such as raw pineapple, kiwi, papaya containing proteolytic enzymes.
