經典歐培拉蛋糕
一個下午茶，不需要什麼甜點塔或甜點 buffet，簡單來一個歐培拉蛋糕配上一杯 Earl Grey tea，就可以享受一個簡單又不失奢華的下午茶時光。
歐培拉蛋糕也被稱為歌劇歐培拉蛋糕，標準傳統的歐培拉蛋糕總共為7 層，主要有沾滿咖啡糖漿的杏仁海綿蛋糕，咖啡奶油霜和巧克力醬。
我的歐培拉蛋糕裡的杏仁海綿蛋糕運用了美國加州杏仁粉製成，每層杏仁海綿蛋糕浸滿了濃郁的黑咖啡糖漿，配上阿拉比卡咖啡豆和進口奶油製成甜而不膩的咖啡奶油霜，夾著一層由頂級比利時70%黑巧克力製成的巧克力醬，最後淋上頂級巧克力製成的鏡面glaze。
簡單配上新鮮草莓，更讓每一口都有齒口留香和清爽的口感。

L'Opera
Know as Gâteau Opéra in French, this classic cake was mainly consists of 7 layers with combination of Almond sponge soaked with coffee syrup, buttercream icing and chocolate ganache filling.
In my Opéra cake, the Jaconde sponge was made of California ground almond soaked in espresso coffee syrup, layered with flavourful yet less fat Italian meringue based Arabia bean infused buttercream, and a layer of premium Belgian Callebaut 70% dark chocolate ganache, lastly finishing with chocolate mirror glaze.
I had paired this classic cake with some strawberry for refreshing after taste sensation.
