ARMY STEW RECIPE
You will need:
2 Packet of Army Stew
100 grams firm tofu
Spam
Sausage
200 grams shiitake mushrooms
200 grams enoki mushrooms
150 grams Korean rice cake
Green onion
Cheese
Egg
STEP 1
Create a broth by adding Army Stew Ramyun seasoning and a vegetable satchet to boiling water.
Add in Korean chilli paste.
STEP 2
Once that is stirred through slowly, add tofu, kimchi, mushroom, sausage, spam and rice cake. Place the lid on and simmer for a few minutes.
STEP 3
Once the ingredients are cooked, place the noodles in and simmer again for 3 minutes.
STEP 4
Add green onion, cheese and crack an egg!
CARBONARA STIR FRIED SHIN RAMYUN RECIPE
You will need:
Shin Ramyun 1 bag
1 Cup of Whipped Cream
½ Cup of Milk
1 Teaspoon of Shin Ramyun Soup Base
Bacon 3 strips
Mushroom 5 pieces
3½ oz of Broccoli
Onion ½
1 Teaspoon of Garlic
2 Teaspoons of Parmesan Cheese
½ Teaspoon of Salt
½ Teaspoon of Black Pepper
Young Leaves 10g
STEP 1
Stir-fry garlic, onion and bacon in an oiled pan.
STEP 2
Add whipped cream, milk, and Shin Ramyun soup base into the pan.
STEP 3
Boil Shin Ramyun noodle for 2 minutes and drain the noodles.
STEP 4
Add the boiled-noodle, salt, black pepper, parmesan cheese, and broccoli into the pan.
STEP 5
Put noodles on a plate, and top with young leaves

大暑養生重點:「清熱利濕,健脾益氣」
豆腐:益氣寬中、生津潤燥
青瓜:清熱利水,生津解渴
韓式豆漿冷麵
材料:韓式或日式素麵200克、包裝軟豆腐半塊、無糖豆漿200毫升、青瓜半根、小番茄數粒、雞蛋1隻、芝麻少量、泡菜(隨口味添加)、鹽及黑胡椒少量
做法:
1. 青瓜及小番茄洗淨,青瓜切絲,小番茄切半。雞蛋烚7-8分鐘備用。
2. 將軟豆腐及無糖豆漿放入攪拌機攪勻至質地幼滑,加適量鹽調味,放冰箱備用。
3. 鍋中放適量水,水沸後放素麵,依照包裝說明煮到適當程度撈起,以冷開水沖洗後瀝乾。
4. 大碗中放入素麵,放上青瓜絲、小番茄、雞蛋及泡菜,加上豆漿濃湯即,灑上芝麻及黑胡椒即成。

Korean soya milk cold noodles
Ingredients: 200g Korean or Japanese somen, half pack of soft tofu, 200ml unsweetened soya milk, half a cucumber, a few cherry tomatoes, 1 egg, sesame, kimchi, salt & pepper
Preparation:
1. Rinse the vegetables. Slice cucumber into thing shreds and cut cherry tomatoes in half. Boil the egg for 7-8 minutes till cooked.
2. Put soft tofu and soya milk into blender, blend till smooth and add salt to taste. Chill soya milk soup in refrigerator.
3. Boil and drain somen according to the package directions, drain and shock in cold water bath.
4. Serve somen in a bowl with cucumber slices, cherry tomatoes, boiled egg and kimchi, pour chilled soya milk soup, add sesame and black pepper to taste.

Gyozas. Dumplings. Potstickers. Mandus...whatever it is, the name doesn’t matter as long as its delicious. Ordered this veggie Mandu as it contained kimchi and tofu but couldn’t really catch the kimchi part or any mild kick of spices here. Nonetheless a pretty good vegetarian option to go with creamy garlic Alioli

We love Kimchi Jjigae (also known as kimchi soup or stew in English). This soup is super easy to make and you just need to cook some rice to go with it and call it a day. So easy! A big shout-out to Lady Boss Choi of Hanwoori Korean restaurant in Singapore. This restaurant is in our neighbourhood and her kimchi jjigae is really really good. If you don't like seafood, you can also use shabu shabu pork belly or beef. You don't have to season the meat, just add them around the same time as we added the seafood.

Seafood Kimchi Jjigae 韩国海鲜泡菜汤 (Kimchi Soup / Stew)
Ingredients:
Serves 4 - 5 pax

1.5L water
6 tablespoons light soy sauce
4 cloves of chopped garlic
1 teaspoon grounded black pepper
6 tablespoons Korean chilli powder (gochugaru)
3 tablespoons gojuchang (Korean chilli paste)
450g kimchi
300g silken tofu
1 red onion - sliced
4 fresh shitake mushrooms - sliced
3 potatoes - sliced
50g sweet potato vermicelli (can be replaced with glass noodles)
2 stalks of spring onion (can be replaced with scallion)
1 teaspoon salt (season to taste)
200g prawns
200g baby octopus (can be replaced with squid)
300g venus clams
150g enoki mushrooms
Add some white vinegar at the end of the cooking if you like the soup to be more tangy.

紅豆湯+湯圓
材料

紅豆(泡水4小時) 1量杯 red beans 1cup
水 6量杯 water 6cup
二砂糖 2大匙 light brown sugar 2tbsp.
B
水 800ml water 800ml
小湯圓 適量 tangyuan q.s.
芋圓 適量 taro balls q.s.
作法
1. 在其中一鍋中放入紅豆、材料A的水,蓋上鍋蓋設定煲湯功能煮約1小時10分鐘。
2. 待完成後打開加入糖拌勻,紅豆湯完成。
3. 再另一鍋倒入材料B的水,蓋上鍋蓋設定燉煮功能煮至水滾沸。
4. 打開放入湯圓、芋圓,再煮至湯圓與芋圓浮起來。
5. 取紅豆湯加入湯圓、芋圓即可。
咖哩雞+白飯
材料
A
白米 3杯 rice 3cup
水 3杯 water 3cup
B
雞肉 350公克 chicken 350g
馬鈴薯 150公克 potato 150g
紅蘿蔔 60公克 carrot 60g
洋蔥 50公克 onion 50g
咖哩塊 4小塊 curry cube 4pcs
水 450ml water 450ml
作法
1. 在其中一鍋中放入材料A,蓋上鍋蓋設定米飯功能煮30分鐘。
2. 另一鍋倒入2茶匙油,加入洋蔥、雞肉、紅蘿蔔、馬鈴薯與水,蓋上鍋蓋設定燉煮功能。
3. 燉煮時間約20分鐘後,打開鍋蓋放入咖哩塊,拌煮至溶化,再煮至咖哩濃稠,咖哩即完成。
4. 將煮好的飯盛碗,淋上咖哩即可。
牛肉鍋+煮麵條+蒸鮮菇
材料

牛肉鍋湯包 1包 beef soup 1pack

麵條 140公克 noodles 140g
水 800ml water 800ml

鴻喜菇 1/2包 bunashimeji 1/2pack
雪白菇 1/2包 white bunashimeji 1/2pack
辣椒 1/2條 chili 1/2pcs
作法
1. 其中一鍋放入水,蓋上鍋蓋設定燉煮功能煮水。
2. 再另一鍋中放入牛鍋湯包,再放上蒸盤放入材料C,蓋上鍋蓋設定燜煮功能15分鐘。
3. 帶水滾後,放入麵條,不加蓋煮約3分鐘,取出瀝乾盛盤。
4. 將蒸鮮菇取出,牛肉湯淋在麵條中即成牛肉麵。

For this video, we went down to Ho Ho Chimek where they assembled a beautiful Bossam platter for me to devour. Ho Ho Chimek is an authentic Korean restaurant located in East Village that specialises in Korean Fried Chicken while also offering a host of other delectable Korean cuisine. For this challenge, I was offered a secret menu Bossam (Korean Pork Belly) option, together with Kimchi Fried Rice and Jajangmyeon Noodles, that were assembled beautifully onto my giant plate.
Bossam is a unique Korean style of eating involving boiled pork belly served with a number of condiments that you then wrap up in a lettuce leaf into a neat little package. For myself, I was given kimchi, garlic, Bibimbap sauce and spring onions. On its own, the pork was reminiscent of char siew, but slightly fattier and sweeter. Eaten with all the condiments in a wrap, the flavours truly complemented one another with the kimchi and garlic tempering the cloying flavour of the pork together with the satisfying crunch of the lettuce.
The Kimchi Fried Rice was topped with fried eggs and had the distinct tangy flavour from the kimchi juice added. It was specked with kimchi and chicken luncheon meat, with the meat adding a needed savoury dimension with each bite. The Jajangmyeon noodles, a noodle dish topped with a thick black bean sauce and bits of pork, was not overpowering in the slightest as is common for poorly done Jajangmyeon, with the unique black bean flavour and juicy chunks of pork.
This was an enjoyable challenge with a good bit of variety, although the unctuous pork became rather overwhelming towards the end especially with my refusal to eat it as a wrap. I also tried their famous Korean Fried Chicken which was extremely crispy and flavourful on the outside, while juicy inside. The soy-garlic marinade really shone through. Additionally, the Bossam is apparently not publicised because it is very difficult for the owner’s mother to create, although it is one of their best offerings.
Do visit Ho Ho Chimek to get your Korean cravings satisfied! They will be offering a slightly smaller version of this platter for $68 from this Friday onwards, with the addition of Tofu Stew, and aptly named “OPPA Zermatt’s Platter”.
