Tired of eating pasta and all-day breakfast? Try Three cup chicken (三杯雞)! It is one of the most classic Taiwanese recipes but hard to imagine having it in a cafe.
If you don’t understand what’s three-cup refers to, let me tell you here - The name “three-cup chicken” comes from the three key ingredients: sesame oil, Chinese rice wine, and soy sauce. “Cups” refer to the equal ratio instead of literal measurement.
The chicken was so tender with a strong toasted sesame fragrance. Jasmine Rice is another highlight of the set which had a pleasant aroma, making my mouth water! Served with black fungus and lotus root.
據說,三杯雞就是麻油一杯、米酒一杯、醬油一杯,想不到cafe內會有如此傳統菜式賣!整體味道很不錯,雞肉肉質既嫩滑又香口,炒得很好,也有雲耳和蓮藕;另外飯的質素也是上乘,估計是絲苗香米,吃過就知多好味。

One Pot Sesame Oil Chicken Rice
Ingredients:
Serves 6 pax

60ml (2 fl oz) sesame oil
1 thumb-size young ginger (sliced thinly)
460g (16.2 oz or 1 lb) chicken thigh meat (cut into bite sizes)
2 tablespoons Chinese white rice wine (optional)
5 cloves garlic (sliced thinly)
A few dashes of white pepper
3 cups rice (use a rice cup to measure or a 210ml (7.1 fl oz) cup to measure)
2 tablespoons oyster sauce
1 teaspoon chicken stock powder (You can use chicken stock to replace water)
1.5 tablespoons premium dark soy sauce
3 cups water (use a rice cup to measure or a 210ml (7.1 fl oz) cup to measure)
2 stalks spring onion (cut into finger length)

材料:
三黃雞 1隻(約2磅)
香茅 4-5條
南薑、生薑 各1塊
絲苗米 隨意
斑蘭葉 2條
蒜頭 2個
青檸 4個
泰國辣椒仔 隨意
糖 2茶匙
越南魚露 2茶匙
水 1/4杯
雞粉 1湯匙
鹽 1湯匙
做法:
1.雞洗乾淨用雞粉加鹽內外擦勻,室溫醃製1小時
2.蒸熟後冷卻,保留蒸雞汁煮飯,然後拆肉
3.米先洗淨,瀝乾水之後,用雞油或其他油先爆香香茅、南薑、蒜頭,然後加入米一齊炒
4.放入電飯煲以一份米比0.9水分的比例,用蒸雞汁加水,加斑蘭葉煮飯
5.煮熟後,將所有料頭取出,加入適量椰漿再煮
秘製醬汁:
青檸汁、蒜頭、辣椒、南薑、糖加水,用攪拌機打碎,加入薑茸用魚露調味
Hainanese Chicken Rice
Ingredients:
Yellow Hair Chicken 1 pc (Approximately 2 lbs)
Lemongrass 4-5 pcs
Galangal 1 pc
Ginger 1 pc
Jasmine rice Amount depends on personal preference
Pandan leaves 2 pcs
Garlic 2 heads
Lime 4 pcs
Thai chili Amount depends on personal preference
Sugar 2 tsp
Vietnamese fish sauce 2 tsp
Water ¼ cup
Chicken powder 1 tbsp
Salt 1 tbsp
Steps:
1. Clean chicken, rub chicken powder and salt on skin and inside cavity, marinate in room temperature for 1 hour.
2. Steam chicken. Once cooked, let chicken cool to room temperature and keep chicken drippings for the rice. Cut chicken into pieces.
3. Wash rice and drain. Heat pan with some chicken fat or other cooking oil. Sauté lemongrass, galangal and garlic cloves. Add rice and stir-fry.
4. Add stir-fried rice into rice cooker. Add water and chicken drippings using 1:0.9 rice to water/chicken drippings ratio. Add pandan leaves to cook with the rice.
5. Once rice is cooked, remove all ingredients except the rice. Then add coconut milk to the rice and cook again.
Special sauce:
- Blend lime juice, garlic cloves, Thai chili, galangal, sugar and water together. Season sauce with ginger paste and fish sauce to taste.

INGREDIENTS
A. Simple syrup
- 250 gram sugar
- 250 gram water
- 1/8 tsp cream of tartar (or 1/8 tsp lemon juice)
B. Green tea filling
- 100 gram yellow beans/ mung beans
- (at least) 300 ml hot water
- 45 gram sugar
- 45 gram coconut oil (peanut or other normal cooking oil can be a substitute)
- 5 gram all purpose flour
- 2 gram matcha powder (or more depending on the quality of your matcha powder and your taste)
- 40 ml water (to dissolve flour and matcha powder)
C. Mooncake Skin dough
- 400 gram simple syrup (from A)
- Approx. 200 gram cooked glutinous rice flour
- 1/2 tsp pomelo essence (or jasmine/ rose essence)
Notes:
- It can take 1 - 1.5 hour to make the filling. Folding and stirring the filling on low heat not only helps water to evaporate from the filling but also helps the sugar and oil to be incorporated better in the beans. As a result, your filling can stay longer at room temperature.
- You can find cooked glutinous rice flour at Asia groceries. This flour is already cooked and is ready to eat. This is also a kind of special flour and should not be replaced by any other types of flour. Cooking glutinous flour in a pan on low heat does not create the similar type of flour as the flour will have slightly yellow-brown color and quite strong smell.
- Pomelo essence can also be found in Asian groceries. However, you can substitute this essence with other flavors that you like.
- The amount of 200 gram cooked glutinous rice flour is approximate. This amount may vary depend on the type of flour and its oldness. Older flour tends to absorb more water, hence you will need less of this flour than newer one.
- The mooncake mold that I used in the video is a 150 gram - mold (i.e., molds that create cakes of 150 gram). For snowskin mooncakes, normally the ratio of dough: filling is 2 : 1. For example, a 150 gram cake should have 100 gram dough and 50 gram filling. However, you can change this ratio if you prefer more filling. Also, for mooncakes, it's better if you make the cakes slightly bigger than the cavity of the mold. In this video, I use 110 gram skin dough and 60 gram filling for a 150 gram - mold.
These mooncake molds can be found easily on either Amazon US or Ebay. The cavity of the molds is normally stated in the information provided by the sellers. Note that silicon molds are not recommended for this type of mooncakes.
