參加咗沁之料理嘅清酒晚宴,跟來自京都其中一間傳統清酒莊「英勳」的第五代莊主Hiroshi Saito先生會面,英勳自1895年便在京都造酒,是晚試了3款清酒加1款生薑酒配7道菜。水天一碧配松葉蟹,清酒屬淡麗辛口型,清爽得黎餘韻帶點甘口,接著試了最好賣嘅古都千年配刺身、燒魚及天婦羅,此清酒圓潤而充滿果香,帶點醬油及甘口,刺身非常新鮮美味。最後以一吟(精米步合35%)配手握江戶前壽司,勁好味,非常江戶style,淸酒非常幼滑,優雅而尾段帶甘口。我覺得英勲嘅酒非常傳統風格,如果你喜歡尾段帶d澀澀地,佢絶對係你杯茶!
Attended Sushi Love x Eikun Sake Pairing Dinner & tried one of the most traditional
Sake breweries from Kyoto since 1894, Eikun, and met with d 5th generation owner Mr. Hiroshi Saito! Tried 3 sakes to pair with 7 courses, the 1st sake Suitenippeki is light & refreshing with a hint of bitterness in the end, it paired with Japanese crab with Citron Jelly. The 2nd sake Kotosennen paired with sashimi, grilled fish & tempura, the sashimi is so fresh & yummy, the sake is very fruity and rounded with savoury & a hint of bitterness in the end. The last sake is Ichigin (35%polished rice), it paired with Edomae sushi. The sushi is soooo yummy & authentic, the sake is so refined with a hint of bitterness. The style of Eikun Sake is very traditional, if u like traditional sake with a hint of bitterness, this is surely your cup of tea!
