If I'm honest, I actually have a hidden agenda behind telling you not to pound back water when breaking fast 👹 A sip or a small glass won't make a difference but from experience people are awful at keeping to small guidelines so it's easier to assume no water for intents and purposes 😅

🤔 Think of what you CAN'T eat with a dry mouth and no water to wash it down: starchy and fried, processed, low nutrient food. No one wants deep fried chicken and rice in this situation 🍗 When you're dehydrated, a cool refreshing salad or fruit holds far more appeal 🍉 and this is what you should be prioritising not empty calories 🍚

In this episode, we went down to Chir Cafe+Bar to destroy a Cheesy Fondue Korean Fried Chicken Sandwich Challenge! Chir Cafe+Bar, located in Holland Village, serves Korean-Western fusion food in creative ways like Bulgogi Cream Pasta and Chir Chicken Croffle. It just opened at the beginning of this year, with a very chic and stylish décor.
For my challenge, I requested for a mega-sized Fondue Chicken Burger. Normally, it is served with one whole deep-fried chicken thigh sandwiched between a brioche bun and smothered in a cheesy sauce. Mine came with 10 chicken thighs, reaching 13.5 inches, and drenched in jugs of cheesy goodness. It was so high that it was difficult to keep upright.
I usually sip steadily during my challenges, but this burger was so delicious that I took my first sip only after the 8th thigh. Each piece of meat was thick, well-marinated and juicy. The cheese sauce added a pleasant tang and sweetness to the rich meat. I wanted to do it fast at first, but I really took my time to enjoy the burger instead after realizing how enjoyable it was.
While I would strongly recommend the Fondue Chicken Burger, we also sampled the breadth of their menu with interesting and tasty dishes like the Butternut Pumpkin Tartine and the Bulgogi Cream Pasta. Do visit Chir Café+Bar for their unique spin on Asian-Western cuisine!

【材料】
豚バラ肉…150g
キャベツ…150g
厚揚げ…300g
油…小さじ1
【A】
みそ…大さじ1
めんつゆ(2倍濃縮)…大さじ2
酒…大さじ1
【作り方】
1, キャベツ、厚揚げ、豚バラは一口大に切る。【A】は合わせておく。
2, フライパンに油を熱し、豚バラ肉をほぐしながら炒めて塩少々。
3, 色が変わってきたら、厚揚げを入れ、焼き色がついてきたら、キャベツを入れてさっと炒め合わせる。
4, 全体的に油が回ってきたら【A】を回し入れ強めの中火でさっと炒めて皿に盛る。

Pork belly ... 150g
Cabbage ... 150g
Deep-fried tofu ... 300g
Oil ... 1 tsp
[A]
Miso ... 1 tbsp
Mentsuyu (2x concentrated) ... 2 tablespoons
Liquor ... 1 tbsp
[How to make]
1. Cut cabbage, deep-fried tofu, and pork belly into bite-sized pieces. [A] is put together.
2. Heat the oil in a frying pan and stir fry while loosening the pork ribs and a little salt.
3. When the color changes, add thick fried chicken, and when the brown color comes out, add cabbage and stir quickly.
4. When the oil comes out as a whole, turn [A] and stir on medium heat for a short time to serve.

A year is almost gone and it's time to plan for our reunion dinner again. This Fortune Abalone Pot is a simplified version of your typical Pun Choi / Pen Cai 盆菜. If you still prefer Pun Choi but you want some idea on how to prepare the gravy, you can watch this video to get some ideas.

Ingredients:
Serves 8 - 10 pax
(A) Marinated chicken - Marinate, pan-fry then set aside
150g of boneless chicken thigh meat
0.5 teaspoon of cornflour
0.5 teaspoon of sesame oil
1 teaspoon of light soy sauce
A few dashes of white pepper
(B) Marinated Chinese mushrooms
5 pcs of dried Chinese mushrooms - rehydrated
1 teaspoon of sesame oil
1 teaspoon of light soy sauce
0.5 teaspoon of sugar
(C) Saute sea cucumber to remove as much moisture as possible
Some cooking oil
3 slices of ginger
120 of fresh sea cucumber
(D) Prawns - pan-fry and set aside
6 pieces of prawns - remove shells and veins
(E) Strain abalone & sea asparagus from can
1 can of Fortune baby abalone (keep brine for later use in this dish)
1 can of Fortune sea asparagus (keep brine for later use in this dish)
(E) Putting the dish together
1 thumb size ginger - sliced
3 cloves of chopped garlic
Marinated mushrooms (B)
1L of water
Sea asparagus brine
Abalone brine
2 tablespoons of Fortune abalone sauce
0.5 tablespoon of premium dark soy sauce
Half a carrot - sliced thinly
80g of abalone mushrooms
Pan-fried sea-cucumber
240g of egg tofu (air-fried or deep-fried)
Some cornstarch solution
Other ingredients

1 head of broccolli
250g of cabbage
Line all ingredients in a claypot using cabbage as the base first. Then add gravy to claypot and bring the whole pot to a boil. Once done, drizze over 1 teaspoon of sesame oil before serving.
