Soon Kee Boneless Duck Rice started in Jalan Besar in 1986 before moving to Longhouse Hawker Centre in Thomson. After the defunct Longhouse Hawker Centre was demolished, one of the brothers, Ong Soon Hwa, opened a stall in Ang Mo Kio while the other opened a stall in Balestier Market. Mr Ong's son, Jun Ru, decided to learn how to make duck rice from him after his own bistro has closed down. “It is his recipe and if it were to be lost, it would be a waste,” said Jun Ru.
The duck was nicely tender and juicy, with no hint of gaminess. The unquestionably delicious yam rice, which is cooked with braising sauce, deserves a special mention. Oh yes, on rainy days, I love to order their comforting duck porridge too! Long House Soon Kee (Boneless) Braised Duck Rice’s gravy is concocted from a myriad of herbs and spices, making it thick and fragrant. Don’t forget to get the chilli dip which comprises sambal, garlic and vinegar. It’s piquant and super shiok!

OK, OK; we’re not going to claim you can recreate generations of gastronomical knowledge by following a recipe. But it is possible to at least channel the culinary spirit of a city where people pledge their loyalty to hawker stalls selling chicken rice and bak kut teh (a revitalizing pork-rib soup) the way that others might to sports teams. For something relatively simple, New York Times Cooking recommends mee goreng, or fried noodles. If you’re feeling ambitious, there’s this braised duck. Be warned: just reading the recipe will have you salivating.

This is a recipe designed for your leftover meat in the fridge. As part of Chinese New Year celebrations, my parents gave us a roasted duck and roasted chicken which ended up untouched because there was really too much food to go around. Instead of just heating them up and eat them as is, I asked Roland to make them less boring by cooking them again to make them more flavourful. For this recipe, Roland decided to use the roasted duck but you can also use roasted chicken or other leftover meat.

We would like to give special thanks to La Gourmet for letting us try out their high quality mul;ti-cooker in the video. This multi-cooker is really awesome because not only you can use it as a pressure cooker and rice cooker, you can also stir fry, deep fry, double boil, bake as well as steam your favourite dishes in it. Ingredients:
Serves 5 - 6 pax
1 thumb size ginger - sliced thinly
4 cloves of chopped garlic
200g of salted Mei Cai
200g of sweet Mei Cai
2 tablespoons of oyster sauce
1 whole roasted duck
Enough water to cover the meat
Thicken the sauce separately with the following ingredients

1/2 teaspoon of sugar
2 tablespoons of premium dark soy sauce
Some cornstarch solution
2 tablespoons of Chinese cooking wine (Shaoxing Huatiao wine)
