一秒躁底宜疏肝清熱
經常煩躁不安、急躁易怒、心浮氣躁,少少事情就可以「一秒躁底」,情緒就像跑車由零加速至100km/h的速度一樣,究竟這些人是否天生情緒管理特別差?未必!中醫理論認為煩躁與熱有關,肝膽火旺會引致口苦口渴、舌紅、小便黃、脅痛頭痛、晚睡多夢、煩躁易怒等症狀,經常熬夜、壓力大、飲食不節、嗜食辛辣、常喝酒、重口味食物都是常見成因。
想改善火爆情緒宜清熱疏肝,從避免進食辛辣、溫補、重口味食物開始,適量飲用涼茶,如雞骨草、菊花茶等等,清熱祛濕,也可進食屬性偏涼的食材如火龍果、冬瓜、綠豆、霸王花等,另外還要找適合自己的宣洩渠道,適度減壓。
雞骨草素馨花茶
功效:疏肝清熱,紓緩煩躁心情、容易眼火爆情緒等症狀。
材料:雞骨草9克、素馨花3克、綠茶包1個
做法:材料洗淨放保溫瓶,以熱開水沖洗一遍,注入熱開水焗約5-10分鐘即可。此茶可反覆沖泡至味淡,建議一星期連續飲用2-3天,連續兩星期為一個療程。

Soothe the liver and clear heat to ease irritability
Some people are quick-tempered and always feel frustrated and get annoyed, and their emotions change quickly like a roller-coaster ride, but does that mean they have anger management issues? Not necessarily!
Chinese Medicine theories believe this is related to heat in the body. Heat accumulated in the liver and gallbladder can cause bitterness and dryness in the mouth. Other symptoms include red tongue, yellow urine, abdominal pain and headache, insomnia and excessive dreaming, and irritability. The common causes are sleeping late, stress, unhealthy diet, and regular consumption of alcohol and hot, spicy, and heavily flavored foods.
To improve this condition, we need to clear the heat and soothe the liver. Avoid eating hot, spicy, heavily flavored foods and ingredients that are warm in nature. Consume an appropriate amount of herbal tea made with ingredients such as Chinese prayer bead grass and chrysanthemum, as they can clear heat and eliminate dampness from the body.
We can also consume ingredients that are cool in nature such as dragon fruit, winter gourd, mung bean, and night blooming cereus. At the same time, we can find other healthier alternatives to vent out frustration and relieve stress.
Chinese prayer bead grass and jasminum tea
Effects: Soothes the liver and clears heat. Relieves emotional symptoms such as irritability.
Ingredients: 9g Chinese prayer bead grass, 3g jasminum, 1 green tea bag
Preparation: Place all ingredients into thermos, rinse once with hot water, and add in hot water and steep for 5-10 minutes. This tea can be re-brewed until its flavor weakens. For best results, drink consecutively for 2-3 days. Two weeks for a treatment.

CheckCheckCin:陽光普照被視為好天氣,但熱邪過盛也會消耗氣和陰液,所以炎熱天氣下我們特別容易出暗瘡、頭瘡、喉嚨痛、發燒等上火症狀。如果所住地區溫暖又乾燥,身體需要一點點偏涼的湯水,宜選擇屬性偏涼的蔬菜入饌,例如番茄、西芹、青/白蘿蔔、白菜等,配搭具清熱解毒、消暑祛濕功效的綠豆,有助清熱解毒。
番茄 — 性涼,有生津止渴、健胃消食、涼血平肝功效,適合發熱口乾、食慾不振者食用,它亦有護膚美白的功效。惟注意番茄性涼,胃寒人士不宜食用,寒性痛經女士在月經期間勿吃,胃酸過多者不宜空腹食用。

做法:
1. 所有材料洗淨,番茄切件;薯仔去皮切塊;椰菜及西芹切塊備用。
2. 鍋中加入2000毫升水,放入全部材料,武火煮至水滾,調文火煮1.5小時,最後下鹽調味即可。

According to Chinese Medicine theories, the pathogenic factor can invade the body and exhaust the yin, and this is why we experience dry mouth and sore throat easily.
When the body cannot dissipate heat on time, yin-yang balance is disrupted, causing us to develop a heatstroke. Therefore, individuals who live in dry and warm areas should consume soups and vegetables that are cool in nature such as tomato, celery, green/white radish, Chinese cabbage, not forgetting mung beans, which can relieve the summer-heat and clear toxins from the body.
Tomato - cool in nature, has the effects of promoting fluid promotion, quenching thirst, strengthening the stomach, aiding digestion, cooling blood and calming the liver. Suitable for fever, dry mouth, those with poor appetite. It can nourish and whiten skin. But it is cool in nature making it not suitable for those with cold stomachs. Women with cold type menstrual pain should not eat tomatoes during menstruation. Those with gastric hyperacidity should not consume it with an empty stomach.
Tomato and potato soup with mung bean
Effects: Clears heat and strengthens the spleen, relieves dry mouth, sore throat, stuffiness and other symptoms caused by hot weather.
Ingredients: 3 tomatoes, 2 potatoes, 1/2 cabbage, 2 stalks of celery, 20g mung bean
Preparation:
1. Rinse all ingredients thoroughly. Cut the tomato into pieces. Peel the potato and cut into pieces. Cut the cabbage and celery into pieces.
2. Combine all ingredients with 2000ml of water in a pot and cook on high heat until boiling. Turn to low heat and simmer for 1.5 hours. Add salt to taste.

飲湯是香港人的養生秘技之一,根據季節與體質,挑選合適的食材或藥材,煲出一鍋保健湯水,美味之餘又能強身防病。如果你是入廚新手,覺得煲湯材料配搭很複雜,又不懂藥材屬性,不妨從簡單的瓜湯開始,按個人體質選擇合適的瓜類,簡單配以粟米、紅蘿蔔即可煲出清甜湯水;想湯味更濃郁可加入肉類,或豆類如黃豆、紅腰豆,甚至果仁如腰果、合桃、栗子亦可。
偏熱人士
症狀:喉嚨痛、口瘡、暗瘡、尿少色黃、大便偏乾硬/便秘
宜選瓜類:苦瓜、節瓜、絲瓜、木瓜

2. 鍋中加入2500毫升水,放入全部材料,武火煮至水滾,調文火煮1小時,最後下鹽調味即可。

Gourd-based soups
Hong Kong people like to drink soup to maintain our general wellbeing. To make ourselves a pot of delicious and healthy soup, we can choose the most suitable ingredients and Chinese medicines based on the season and our body constitution.
If you have neither the experience in cooking nor the confidence in making a pot of soup, try starting with a simple gourd-based soup. Choose the gourd (or melon) based on your body constitution and add in corn and carrot to sweeten the soup.
To make the soup more flavorful, you can add meat or beans such as soybean and kidney beans or nuts such as cashew, walnut, and chestnut.
🔥 Individuals with heat in the body
Symptoms: sore throat, mouth sores, acne, yellowish urine, dry and hard stools/constipation
Melon choice: bitter gourd, hairy gourd, loofah, papaya
💦 Individuals with accumulated dampness in the body
Symptoms: a person has had enough hours of sleep but still experiences fatigue, sweat easily, chest tightness, poor appetite, water retention problem, and produces loose stools that stick to the toilet bowl.
Melon choice: winter gourd, old cucumber, loofah, hairy gourd
🤯 Individuals with lots of pressure
Symptoms: feeling emotional, frequently sighing, hypochondrium distension, breast swelling, belching and constipation
Melon choice: chayote, loofah, papaya, cantaloupe
❄️ Individuals of aversion to cold
Symptoms: cold limbs and body, excessive sleepiness, excessive sweating, high volume of urine, loose stool or stool with undigested food
Melon choice: pumpkin
Chayote and corn soup with lotus seed and lily bulb
Effects: clears the heart and calms the mind, relieves symptoms such as poor sleep quality and fatigue.
Ingredients: 2 chayote, 2 ears of corn with silk, 1 carrot, 40g lotus seed, 20g lily bulb, 2 candied dates
Preparation:
1. Rinse all ingredients thoroughly. Peel the chayote and slice into pieces. Remove husks from corn keeping the silk and cut into pieces. Peel the carrot and cut into pieces.
2. Combine all ingredients with 2500ml of water in a pot and cook on high heat until boiling. Turn to low heat and simmer for 1 hour. Add salt to taste.

材料:

處理:

烹調:
1. 大火在鑊中燒熱油100毫升。
2. 在墨魚內加入生粉1湯匙撈勻,轉中火慢煎,冚蓋焗2分鐘。
3. 在墨魚內加入鹽半茶匙,轉大火,炒勻。
4. 完成,上碟,可享用。
Stir frying squids with table salt
Ingredients:
Squid 2 Nos.
Preparation:
1. Tear off the skin of squids.
2. Rinse the squids under running tap.
3. Tentacles of squids, tear its skin properly.
4. Mouth of squids, remove their teeth.
5. Squids, rinse thoroughly. Dry with kitchen towels. Cut with size 1cm per each.
6. Tentacles, cut in small pieces.
Steps:
1. Heat up oil 100ml at high flame in wok.
2. Put tapioca starch 1 tbsp in the squid, mix well. Fry at medium flame. Cover up the wok for 2 minutes.
3. Add in salt 0.5 tsp in the squid. Turn to high flame. Fry well.
4. Complete. Put on plate. Serve.

魚肚雞翼煲
材料:
雞翼10隻
魚肚1磅
洋蔥1個
薑1舊
處理:
1. 雞翼,清水解凍。
2. 雞翼解凍後,用粗鹽乸10分鐘去除雪味、腥味及加入鹹味。
3. 魚肚,大火煲滾1鑊水,出水,加入鹽1茶匙及白醋1湯匙,去除腥味。冚蓋,轉中慢火,煮10分鐘。
4. 雞翼,已用鹽乸10分鐘,清水沖淨,揸出血水,清水再沖洗乾淨,廚紙索乾。
5. 雞翼調味:
a. 胡椒粉少許
b. 蠔油1湯匙
c. 生抽半茶匙,撈勻。
d. 老抽半茶匙
撈勻,醃10分鐘。
6. 洋蔥,1開4,去皮,搣開一塊塊,清水洗乾淨。
7. 魚肚已煮了10分鐘,熄火,焗10分鐘。
8. 薑,去皮,洗淨,切片。
9. 魚肚已浸了10分鐘,倒去水分,清水洗乾淨,擎乾水。
烹調:
1. 大火在鑊中燒熱油半湯匙。
2. 爆香薑片及魚肚。
3. 另一邊預備煲仔。
4. 加入油半湯匙,燒熱。
5. 加入洋蔥在煲仔內,冚蓋,轉中慢火。
6. 魚肚已炆了3分鐘,加入調味料:
a. 蠔油1湯匙
b. 糖1茶匙
7. 轉大火,加入清水500毫升,冚蓋,大火炆。
8. 煲仔內的洋蔥已煮至軟身,冚蓋。
9. 魚肚已開始軟身,轉大火,加入雞翼,炒勻,冚蓋。
10. 雞翼及魚肚已再滾起,已收汁,炒勻。
11. 熄火,倒雞翼及魚肚入煲仔,大火滾起煲仔。
12. 完成,加入芫荽粒及辣椒粒,可享用。
Chicken wings claypot with fish maw
Ingredients:
Chicken wings 10 Nos.
Fish maw 1 lb
Onion 1 No.
Ginger 1 No.
Preparation:
1. Chicken wings, defrost with tap water.
2. Chicken wings, season with cooking salt for 10 minutes ater defrost, to remove the unpleasant smells and tastes, and add some salty tastes to them.
3. Fish maw, heat up a wok of water, soaking it with salt 1 tsp and white vinegar 1 tbsp removing the unpleasant smells. Cover up the wok, turn to medium~low flame, boil for 10 minutes.
4. Chicken wings, have been seasoned for 10 minutes, get them rinsed. Squeeze the blood away. Rinse them again and dry with kitchen towel.
5. Season the chicken wings:
a. Pepper little
b. Oyster sauce 1 tbsp
c. Light soya sauce 0.5 tsp, mix well.
d. Dark soya sauce 0.5 tsp
Mix well. Season for 10 minutes.
6. Onion, cut it into 4 equal shares. Get it peeled and slice by slice. Rinse with tap water.
7. Fish maw has been boiled for 10 minutes, turn off fire, leave it for 10 minutes.
8. Ginger, get it peeled. Get it rinsed and sliced.
9. Fish maw has been soaked for 10 minutes, pour away water. Rinse thoroughly and hang dry.
Steps:
1. Heat up oil 0.5 tbsp at high flame in wok.
2. Fry the ginger and fish maw well.
3. Get ready the claypot on the other side.
4. Add oil 0.5 tbsp and heat it up.
5. Put onion into claypot. Cover it up and turn to medium~low flame.
6. Fish maw has been braised for 3 minutes, add seasoning:
a. Oyster sauce 1 tbsp
b. Sugar 1 tsp
7. Turn to high flame, add water 500ml. Cover the pot, braise at high flame.
8. Onion in claypot has been softly braised. Cover up the pot.
9. Fish maw has been softly braised, turn to high flame. Add chicken wings, fry well. Cover up the pot.
10. Chicken wings and fish maw have been boiled up again. The sauce becomes thick, fry well.
11. Turn off fire. Put chicken wings and fish maw into claypot. Heat up the pot at high flame.
12. Complete. Put coriander and chili cubes on top. Serve.
