青芒果 vs 黃芒果
夏天到處都見到芒果的蹤影,金黃色澤、軟綿多汁的口感有誰不愛?且慢!有時看到青皮芒果是未熟透嗎?青芒果及黃芒果是兩個品種,青芒果外青內黃,果肉口感較爽脆,味道帶微酸,較適合做沙律、冷盤;而黃芒果果肉軟綿,味道較甜膩,多直接吃或做甜品及飲品。
不少人以為芒果「濕熱」,食材本身不會「濕熱」,「濕熱」是指人體致病的原因及體質;芒果性熱且肥甘黏膩,助濕生痰,故容易令體質偏熱人士增加「濕、熱」症狀,然而芒果有益胃、止嘔、止暈、解渴、利尿的作用,配合體質適量進食就可以享受芒果的滋味了。
芒果 — 性熱,具益胃、止嘔、止暈、解渴、利尿作用。多種原因造成的頭暈皆可食用芒果紓緩症狀;適合慢性氣管炎咳嗽、氣喘患者食用;皮膚敏感及過敏體質患者須謹慎食用。糖尿病患者不宜進食。

Green mango vs Yellow mango
It is not difficult to find shops selling mangoes during summer, and it is an absolute delight to indulge in the sweet and juicy fruit. We often think a green mango is an unripe mango, but that is not always the case.
Green mangoes and yellow mangoes are actually two different varieties. Green mangoes have green skin but yellow flesh. Its flesh is crunchier and more sour in taste, and they are suitable to be used in salad and cold dishes. Yellow mangoes, on the other hand, are softer and sweeter, and they are often used in desserts or consumed directly.
Many people believe mangoes are ‘damp and hot’ in nature, but the term ‘damp heat’ is in fact used to describe the body constitution and the cause of illness. Since mangoes are warm in nature and are sweet and sticky, they can easily cause dampness to accumulate in the body and cause phlegm. Hence, individuals with a heat related body may experience damp heat symptoms.
Nonetheless, mangoes are good for the stomach, can relieve nausea and dizziness, quench thirst, and induce urination. We should be able to enjoy mangoes by consuming an appropriate amount of the fruit based on our body constitution.
Mango - Hot in nature. It can nourish stomach, relieve vomiting and dizziness, relieve thirst and promote diuresis. Dizziness caused by various reasons could be relieved by eating mango. It is suitable for those with chronic bronchitis cough or asthma. Those with skin allergy and sensitive body type should eat less. It is not suitable for diabetic patients.

青瓜磨頭去苦味
料理青瓜時,習慣性將兩端切去,然後將切出的部份與青瓜身打圈式磨擦,直到磨出白色泡沫,媽媽說這樣做青瓜便不會苦,很多時我們入廚也跟著做但不求甚解。
原來青瓜、南瓜等葫蘆瓜科植物都含有帶苦味的葫蘆素,用來避免被蟲吃掉,葫蘆素集中在青瓜皮和莖的部份,將青瓜頭以打圈形式磨擦就有助去除這種苦味物質。除了打圈磨擦,將青瓜頭尾切去及刨皮,也有助去除苦味。其實一般青瓜的苦味不易察覺,但受天氣、土壤等影響,部份青瓜含有較多葫蘆素,味覺敏感的人便吃得出來。
青瓜 — 又名黃瓜,性涼,有清熱利水、生津解渴、利尿的作用,適合身體有偏熱症狀、濕熱、陰虛及血瘀體質人士食用,氣虛、血虛、陽虛、痰濕及氣滯人士則不宜多吃。

Rubbing the ends of the cucumber to remove its bitterness
When preparing cucumber, we would normally slice off the ends and rub them against the remaining part of the cucumber to release a white, foamy substance. Our mothers explained, by doing so, we can get rid of its bitterness. We often heeded the advice, but never really understood the logic behind.
Cucurbitaceae species such as cucumber and pumpkin contain cucurbitacin, which gives out the bitter taste to protect themselves of pests. Cucurbitacin often gathers on the skin and at the stem of the fruit, hence slicing the cucumber’s ends and rubbing them in a circular motion can remove the bitterness. Removing the cucumber skin can also do the trick.
The bitterness in cucumber is actually not obvious, but some are more bitter than others, depending on the weather and soil conditions they are grown in. In addition, individuals with sensitive taste buds can also tell the difference.
Cucumber – cool in nature, clears heat and promotes diuresis, promotes fluid production and relieves thirst. Suitable for those with heat-related symptoms, damp-heat, yin deficiency and blood stasis body types. Those with qi deficiency, blood deficiency, yang deficiency and qi stagnation should eat less.

冬瓜淡菜瑤柱湯
材料:
冬瓜1斤半
淡菜20隻
瑤柱4粒
薑4片
鹹蛋1隻
皮蛋1隻
處理:
1. 淡菜,清水浸20分鐘至軟身。
2. 瑤柱,清水沖洗乾淨,清水浸軟。
3. 冬瓜,洗淨表皮,放砧板上,用菜刀,小心切去表皮,保留表皮。
4. 冬瓜肉,1開4,除去籽,切細舊。
5. 皮蛋,連包裝袋,用菜刀輕拍蛋殼,取出皮蛋,清水洗乾淨。
6. 鹹蛋,加入少量清水在包裝袋內,用小刀刮去灰,清水洗乾淨,打在碗內。
7. 薑,去皮,切幾片。
8. 皮蛋,1開8。
9. 淡菜已浸好,取出中間異物。
烹調:
1. 大火在鑊中燒燒油半湯匙。
2. 爆香薑片。
3. 加入淡菜,炒一下。
4. 加入清水1升。
5. 加入冬瓜粒及冬瓜皮。
6. 加入瑤柱及瑤柱水,大火滾起。
7. 加入鹹蛋黃,大火滾起後,轉中慢火煲20分鐘。
8. 湯已滾好,夾起冬瓜皮及薑片。
9. 加入皮蛋及鹹蛋白,滾起。
10. 完成,倒入大碗內,可享用。
Mussels soup with winter melon and dried scallops
Ingredients:
Winter melon 1.5 catty
Mussels 20 Nos.
Dried scallops 4 Nos.
Ginger 4 slices
Salted egg 1 No.
Century egg 1 No.
Preparation:
1. Mussels, soak in tap water for 20 minutes until it turns soft.
2. Dried scallops, rinse with tap water. Soak in tap water until they turn soft.
3. Winter melon, rinse its skin, put it on chopping board, cut its skin with chopper carefully and retain its skin.
4. Flesh of winter melon, divide it into 4 shares. Remove its seeds. Cut into small pieces.
5. Century egg, beat its shell in plastics with chopper. Take out the egg. Rinse with tap water.
6. Salted egg, add in little water into the plastics. Scratch the ash with a small knife. Rinse with tap water. Break it into a bowl.
7. Ginger, peel and slice.
8. Century egg, divide it into 8 shares.
9. Mussels have been soaked well, take out sea plant inside.
Steps:
1. Heat up oil 0.5 tbsp at high flame in wok.
2. Fry ginger well.
3. Put mussels, fry for a while.
4. Add in water 1L.
5. Add in winter melon cubes and skin.
6. Add in dried scallops with its syrup. Heat up at high flame.
7. Add in salted egg yolk. Heat up at high flame. Turn to medium~low flame after boils up. Boil for 20 minutes.
8. Soup has been cooked well, pick up the skin of winter melon and ginger slices.
9. Add in century egg and salted egg white. Boil it up.
10. Complete. Pour into a big bowl. Serve.

皮膚乾燥,潤肺潤膚湯
材料:
大白菜2棵(大約半斤)
雪耳1個
紅蘿蔔1個
菜乾1兩
馬蹄8粒
粟米1支
豬腱12兩
蜜棗3粒
處理:
1. 雪耳,清水浸20分鐘。
菜乾,清水浸20分鐘。
2. 白菜1開4,清水浸10分鐘。
3. 紅蘿蔔,去皮。
4. 馬蹄,清水沖洗乾淨,切去兩端,輕手去皮。
5. 紅蘿蔔、粟米、蜜棗及馬蹄,清水洗淨。
6. 紅蘿蔔,切一舊舊,放入煲。
7. 粟米,切細舊,放入煲
8. 馬蹄,輕手拍一下,放入煲。
9. 白菜已浸好,沖洗乾淨,擎乾水。
10. 雪耳,揸乾水,清水洗乾淨,再揸乾水。
11. 菜乾,清水沖洗幾次,揸乾水。
12. 菜乾,1開2,放入煲。
13. 雪耳,1開4,放入煲。
14. 白菜,放入煲。
15. 豬腱,在上面切幾刀,放入煲。
16. 加水落真空煲,加入清水至4升容量,煲40分鐘,焗1小時。
如果用明火煲,加入清水至4升半容量。大火滾起湯後,轉中慢火,煲90分鐘,焗1小時,就可以了。
17. 用“濃香煲湯”功能,煲40分鐘,完成。
18. 湯焗1小時,就可以飲用了。

3. Carrot, get it peeled.
4. Water chestnut, rinse with tap water. Cut both ends, lightly peel.
5. Carrot, sweet corn, candied dates and water chestnut, rinse thoroughly.
6. Carrot, cut in pieces, put in pot.
7. Sweet corn, cut in pieces, put in pot.
8. Water chestnut, beat lightly, put in pot.
9. Pak choy, has already been soaked well. Rinse thoroughly and hang dry.
10. Snow fungus, squeeze it. Rinse thoroughly and squeeze it again.
11. Dried pak choy, rinse it several times, squeeze it.
12. Dried pak choy, divide 1 pak choy into 2 pieces. Put into pot.
13. Snow fungus, divide it into 4 pieces. Put into pot.
14. Pak choy, put into pot.

16. Add water into vacuum cooker, up to 4L volume of it. Cook for 40 minutes and leave it for an hour.
If the soup is to be made by gas cooker, add water up to 4.5L. Heat up at high flame. Turn to medium~low flame after boils up. Boil for 90 minutes. Leave it for an hour. Then can be served.
17. Use "porridge/soup" function, cook for 40 minutes. Complete.
18. Leave the soup in the cooker for 1 hour. Serve.
