受邀到Courtyard Hotel作客,品尝他们Penang Kitchen的美食。了解到这家酒店的总经理 #Subash先生 是一位很有经验的大厨。他是印度裔澳洲人,早年曾经在各大米其林餐厅服务过。
他来槟城之前也在中国服务了一段时间,所以对东西方的美食文化有着一定的认识。
对于 #Courtyard 酒店里的 #Penang Kitchen, 他更着力于道地与优质的本地美食,他深信只用让客人吃好了,住好了,才能让客人有回到家一样舒适的感觉。我相信有着Subash先生高要求的监督,Penang Kitchen的出品必定不让我失望。
这天,先来的是小点心 #炸豆饼Vadai , 口感细致,外酥内软,每一口香酥,配搭chutney酸辣酱十分开胃。

[二品御厨中餐馆]
槟城Sungai Ara隐藏着一家特色中国式餐厅《二品御厨中餐馆》,他们坐落在这家咖啡店内《Bikers Pitstop Kopitiam》~没想到这个地区也能吃到正宗的中国菜,也很不错了~
他们主打一些特色招牌菜,大多数是四川菜和东北菜为主~比如《新疆椒麻鸡》,《辣子鸡》,《泡椒田鸡》,《东北饺子》,《烤鸡肉/羊肉串》等都各有特色及美味😋 尤其是《新疆椒麻鸡》,在槟城很少见这道菜色,椒麻的味道好刺激啊😝
此外,这家咖啡店的饮料也很特别,老板推出了一系列的清爽饮料,泰式珍珠奶茶与绿茶,招牌咖啡冰,花茶等等,全都不错喝哦👍

This is our easy and yummy version of House Special Fried Rice cooked in Chinese style 招牌炒饭. Just so you know, there's no single right way to cook this house special fried rice. Every restaurant as their own style of cooking. We have created this based on some of your preference e.g. some of you like sesame oil, oyster sauce, onions, garlic etc in your fried rice. Hope you'll like it!

We would like to give special thanks to Shogun by La Gourmet for letting us try out their high quality non-stick pan in the video respectively. If you like to buy them, you can go to any of the major departmental stores in Singapore such as Isetan, Robinsons, Takashimaya, BHG, OG, Metro or Tangs. Ingredients:
Serves 4 - 5 pax
Fry (A) together
0.5 tablespoon of sesame oil
150g of cabbage - cut into cubes
1 cup of mixed vegetables (consist of corn, peas and carrots)
Fry (B) together
2 tablespoons of sesame oil
3 pcs of shallots - sliced thinly
4 cloves of chopped garlic
120g of prawns w/ veins removed & cut into bite sizes
Last fry - Putting the entire dish together

Some cooking oil
6 eggs
4 bowls of rice (cook 2 cups of raw rice in your rice cooker as usual - put rice in fridge after in has cooled down)
1 tablespoon of light soy sauce
0.5 tablespoon of oyster sauce
0.5 teaspoon of salt
Add fried (B)
150g of char siu - cut into cubes
Add fried (A)
2 stalks of spring onion
A few dashes of white pepper
Add another 0.5 teaspoon of salt or to taste

Chinese Fried Rice is a simple and yet difficult to master dish but once you get the hang of it, you can fry this super yummy easy meal anytime.
This is our Din Tai Fung inspired Shrimp Fried Rice. In case you haven't heard about Din Tai Fung, it is a chain of restaurants originating in Taiwan. Back in 1993, New York Times ranked them as the Top 10 Best Restaurants in the World. In 2010, the restaurant's first branch in Hong Kong at Tsim Sha Tsui was awarded one Michellin star and their second branch at Causeway Bay was also recommended by Michellin Guide. Although Din Tai Fung is known to specialise in xiao long bao (Chinese steamed dumplings), their egg fried rice with pork chop is also really popular amongst diners. Of course that includes us :). We actually stood outside DTF kitchen to figure out what ingredients were used. Opps - I hope we won’t be banned from Din Tai Fung because that’d be tragic. Whenever we dine at Din Tai Fung, fried rice is one of our must-order dishes but instead of ordering shrimp fried rice, we always go for their pork chop fried rice. OMG so good! I'll get Roland to show you how to prepare their pork chop next time.
Many different cuisines such as Indonesian, Malay, Japanese, Thai etc today all have their own version of fried rice but did you know that fried rice was actually first developed during the Sui Dynasty in China? This means that all variety of fried rice available in the market today can actually trace their origins back to Chinese Fried Rice.
Sorry I digressed...Back to this recipe - if you don't like prawns, please feel free to omit it.

位于Bayan Baru Promenade的 @点心栈 (D’Piazza旁边新商店),主打早市点心和煮炒,点心方面有蒸点也有炸的,除了有我们熟悉的叉烧包、烧卖、虾饺、猪肠粉、萝卜糕、虾卷之外,还有一些比较特别的比如香蕉炸虾筒,就是结合了鲜虾和香蕉包裹在腐皮之内;还有一款鱼翅汤饺,大大颗的饺子浸泡在透彻的高汤内~
最赞的是,每一桌都可以发现中间会有铁网,只需告知服务生,他们就会“开炉”,不稍一会儿就有蒸汽缓缓冒出来啦;点心上桌时可以把蒸笼直接放在蒸炉上面,保证点心还是热乎乎的啦!!??
除了点心之外,他们还有超过10种的煮炒,当中热卖的就是他们的海鲜滑蛋河粉,另外还有特别的煮炒比如广式焖伊面,炒伊面加入了很多的新鲜石斑鱼肉片和大虾;我们品尝到的两款炒饭类,一款是腊味还有一款是招牌,腊味加入了很多的腊肠丁,吃出丰富腊味;招牌炒饭最吸引的就是上面一坨的螃蟹肉,而且还加入了大虾一起翻炒,炒饭还粒粒分明到味~
如果你走到店后面,他们采用透视玻璃,可以看到点心师傅在厨房制作点心的一举一动,而且可以看到他们的厨房超干净的,这么光明正大让顾客看厨房,这样顾客也吃得安心~
