Baked baby back ribs with Char Siu sauce 1 rack of baby back ribs Char Siu sauce or favorite barbecue sauce 1 Tbsp maltose 1. . Wash and dry the ribs. Remove the membrane at the back. 2. Use a brush to apply an even layer of Char soy sauce all around the rib . Wrap with cling film and marinate overnight. 3. Preheat oven to 120 C . Wrap the ribs tightly with aluminum film, put in oven and bake for 2 1/2 hours. When done , take out to rest. 4. Put 1 Tbsp of maltose with some water in a small pot and heat to desolve. 5. Set oven to broil at 273C and put the ribs on the top layer, brush with syrup and broil for 5 mins until bubbly . 6.
