Bánh Mì or Vietnamese sandwich as most people know it, is a classic east-meets-west delicacy.
The French people brought baguette into Vietnam and they cleverly made it their own. Vietnamese baguette is light, airy and has a thinner crust compared to its French cousin. (in fact it is quite similar to those neighbourhood bakeries we find in Singapore!). A typical Bánh mì is filled with crunchy tangy pickled daikon, carrots and cilantro. And of course meat! Usually pork-belly, crushed meatballs or Vietnamese sausages. (there are just so many variations! Our Vietnamese friends, do correct us if we are wrong)
Now what if we stuff crispy pork belly in that crispy and airy baguette? Remember the Sio Bak (roasted pork belly) video we posted a year ago? To add some oomph to the siobak, we decided to caramelize it with some oyster sauce.
The final product is a sandwich with a crunch on the outside and the inside (lots of vegetables!) and umami.

洋蔥 1/4,筍 1/3,白菜 1,冬菇 2,甜椒 1/4,蔥 1/2,蒜 2,生抽 1 tsp,料理酒 1 tbsp,蠔油 1 tsp,水 1杯,生粉水 2 tbsp
做法:
1. 將洋蔥,筍,白菜,冬菇,甜椒切件
2. 將免治豬肉,生抽,料理酒,胡椒粉,蛋白,生粉搓勻,壓成圓餅,煎至香口
3. 將蔥,蒜,生抽,料理酒,洋蔥,甜椒,筍,冬菇,蠔油炒勻,加入水,肉丸,白菜,生粉水,炒勻

400g Minced Pork
Seasoning: 1 Tsp Soy Sauce, 1 Tbsp Cooking Wine, 1 Pinch Pepper, 1 Egg White, 2 Tbsp Starch
1/2 Green Onion, 2 Clove Garlic, 1 Ginger, 2 Shiitake Mushroom, 1/4 Onion, 1/3 Bamboo Shoot, 1/4 Paprika, 1 Bok Choy
Sauce: 1 Tsp Soy Sauce, 1 Tbsp Cooking Wine, 1 Tsp Oyster Sauce, 1 Cup Water, 2 Tbsp Starch Water ( 1 Tbsp Starch/1 Tbsp Water), 1 Tsp Sesame Oil
※PREPARATION:
1. Prepare the vegetables.
2. Combine pork with soy sauce, cooking wine, pepper, egg whites, and starch. Make a meat ball shape.
3. Add enough oil to a pan and cook meatballs until golden.
4. Add oil to preheated wok (in high heat), stir fry green onion, ginger and garlic.
5. Add soy sauce, cooking wine, onion, paprika, bamboo shoot, shiitake mushroom and season with oyster sauce.
6. Add water, and fried meatball, and bok choy.
7. When it starts to boil, add starch water to thicken. Finish off with little bit of sesame oil.
