經歷了前些時候的綿綿細雨,這幾日,香港又恢復了陽光普照的晴朗天氣,不僅適合到海邊走走,曬曬太陽並欣賞無敵的維港美景,友人也多選在此時相約餐敘、同時小酌怡情;而位於中環商圈,開幕不久的日式餐廳ODDS所提供之時令佳餚,便讓貓兒的味蕾留下了深刻印象。
集結了頂級壽司、鐵板燒、やきとり(日式燒鳥,Yakitori)、酒吧和咖啡廳於一身的ODDS餐廳,以華麗的時尚料理著稱,頂尖食材經由廚師的創意巧思,呈現出一道道令人驚豔的和風饗宴,貓兒品嚐了幾道經典特色佳餚,包括:
《煙燻吞拿魚腩佐日本四國產曉蛋香醬油》端上桌的煙燻秀帶來視覺與嗅覺震撼,肥美濃郁的鮪魚腩,入口滑嫩,油花彷彿融化散開,沾上自製松前漬的四國曉蛋黃,更是有種海陸完美結合。
《吞拿魚腩黑毛和牛他他佐魚子醬》將和牛肉與鮪魚腩切細再拌勻之後,以魚子醬、⻘森蒜及金箔點綴,放在店家自製的罐頭裡,搭配鬆脆的鱈魚薄片,入口鹹香夠味,是一道精彩的佐酒開胃小點。
《粟米慕絲、日本精選海膽、鰹魚高湯啫喱》造型彷彿小甜筒的這道料理,是將日本玉米打成慕絲狀,佐以鰹魚高湯做成的果凍,最後再放上日本時令海膽,口感香濃滑嫩,層次多元豐富。
《鵝肝富有柿蓉最中餅》先以自製雞湯低溫慢煮法國鵝肝製成鵝肝醬,再加入處理過的日本富有柿乾及威士忌,做為餅的餡料,嚐來外鬆脆、內軟綿,令人齒頰留香。
《杉板燒赤鯥》選用四國德島原條赤鯥,先抹上少量天然珠洲鹽,然後以杉板燒烤,這種傳統京都式烹法,除了能保持魚的鮮嫩肉質,更令杉木的香氣滲入魚肉之中。
《和牛海膽釜飯》這道靈感源自香港人喜歡的煲仔飯;首先將新潟越光米放入煲內煮至半熟,再加上煎過的飛驒A5和牛(亦或宮崎A4和牛),上桌前再置入海膽,絕妙的組合,每一口都好滋好味。
定位為高端時尚路線的ODDS餐廳,菜餚表現令人驚艷之餘,摩登亮麗的橢圓形酒吧也吸引了眾人目光;用餐區的兩側則為壽司吧和鐵板燒區,也是廚師們在客人面前大顯身手的絕佳位置。此外,餐廳上層還設有一間可容納12人的多用途包廂(這回貓兒便是在包廂享用佳餚,環境舒適且不受打擾);對於喜愛日式料理,暫時又還無法前往日本旅遊的朋友們,不妨前來中環ODDS,展開一場舌尖上的東京之旅。

You can of course use Salmon, scallop, or any other Sashimi-grade fish instead! Enjoy :)

Maguro Zuke Don (Marinated Tuna Fish Rice Bowl)
Difficulty: Very Easy
Time: 15min
Number of servings: 1
Ingredients:
90g (3.2oz) Sashimi Grade Yellowfin Ahi Tuna
1/2 tbsp. Sake
1/2 tbsp. Mirin (sweet Sake)
1 tbsp. soy sauce
Wasabi if you like
1 bowl of rice
Kizaminori (shredded Nori sheet)
green onions and/or Shiso leaf
toasted white sesame seeds
Directions:
1. In a small pot, boil down Sake and Mirin to reduce the alcohol content.
2. Add soy sauce and Wasabi, then mix well. (Wasabi will be not spicy if you mix and leave for a while, so kids can eat it with only nice Wasabi aroma.)
3. Marinate tuna Sashimi and put in the fridge for about 10 minutes. (Do not marinate too long or tuna will be salty.)
4. Meanwhile, put rice in a rice bowl and leave to cool. (Cold rice is better because it won't warm up the fish.)
5. Put Kizaminori on the rice, arrange Tuna sashimi, garnish with green onions or Shiso leaves, and sprinkle with toasted white sesame seeds. You can place a bit of fresh Wasabi on top if you like.

一口サイズで食べやすく、酢飯と明太子の二種類の味が両方楽しめちゃう♡
製氷皿に具材を詰めて、トッピングするだけのなのでとっても簡単!

キューブ寿司
2人分(2×6口の製氷皿1つ分)
材料:
■酢飯
温かいごはん 400g
砂糖 大さじ2
酢 大さじ2
塩 小さじ1
辛子明太子 40g
■具材(5種類)
サーモン(刺身) 2枚
いくら 適量
大葉(千切り)適量
ㅤㅤㅤㅤㅤㅤㅤㅤㅤㅤㅤㅤㅤ
まぐろ(刺身) 2枚
万能ねぎ 適量
ㅤㅤㅤㅤㅤㅤㅤㅤㅤㅤㅤㅤㅤ
たくあん(千切り)適量
まぐろ(たたき) 適量
白ごま 適量
ㅤㅤㅤㅤㅤㅤㅤㅤㅤㅤㅤㅤㅤ
いか(刺身) 2枚
大葉(半分に切る) 1枚
木の芽(あれば)適量ㅤㅤㅤㅤㅤ
きゅうり(長さ8cm、縦に薄切り) 4枚
辛子明太子 適量
糸唐辛子 適量
作り方:
1. 酢飯を作る。小さめのボウルに砂糖、酢、塩を入れ、砂糖が溶けるまで混ぜる。
2. 温かいご飯に(1) を回し入れ、切るように混ぜる。100g分を取り分け、辛子明太子を加えて混ぜておく。
3. 製氷皿の底にサーモン、まぐろ、たくあん、いかと大葉を貼り付け、きゅうりは十字になるように貼り付ける。
4. (3) に酢飯を詰め(いかときゅうりには辛子明太子入りの酢飯)ラップをかけて上からぎゅっと押さえ、5分ほど置いてなじませたら、竹串などを使って取り出す。
5. トッピングを添えたら、完成!

■Sushi rice
400g steamed rice (hot)
2 tablespoons sugar
2 tablespoons vinegar
1 teaspoon salt
40g spicy mentaiko
■Toppings
2 slices salmon sashimi
Some salmon roe
Some perilla leaves (aka shiso, shredded)
2 slices tuna sashimi
Some scallion
Some takuan-pickled radish (shredded)
Some tuna tataki
Some white sesame seed
2 slices squid sashimi
1 perilla leave (cut into halves)
Some konome-leave
4 slices cucumber
Some spicy mentaiko
Some chili threads
PREPARATION
1. To make sushi rice, mix sugar, vinegar, and salt in a small bowl until sugar dissolves.
2. Pour (1) over warm steamed rice and fold in with a wooden spatula until just combined. Separate 100g of rice and mix with spicy mentaiko.
3. Place some toppings (salmon, tuna, takuan-pickels, squid, perilla leaves, and cucumber) onto an ice cube tray. Make sure to place cucumber slices to make crosses.
4. Put sushi rice into the tray (3). For squid and cucumber, use spicy mentaiko sushi rice. Plastic-wrap the tray and press down. Let it sit for 5 minutes and remove.
5. Finish with rest of toppings.
6.Enjoy!
