1.香煎鱸魚
材料
A
鱸魚片 1片／sliced sea perch 1pcs
油 適量／oil q.s.
檸檬 適量／lemon q.s.
B
鹽 1/2茶匙／salt 1/2tsp.
胡椒 少許／pepper powder q.s.
米酒 1大匙／cooking rice wine 1tbsp.
薑片 15公克／sliced ginger 15g
蔥段 15公克／chopped scallion 15g
作法
(1)魚片解凍後取出，表面放上材料B後兩面抹勻，靜置5分鐘。
(2)鍋內倒入適量油，放入作法1的魚片，用中火煎到魚片側邊呈現金黃色即可翻面，翻面後加蓋，繼續煎煮2分鐘至熟即可。
2.紅燒鯛魚
材料
鯛魚片 1片／sliced tilapia 1pcs
油 適量／oil q.s.
調味料
A
鹽 少許／salt q.s.
米酒 少許／cooking rice wine q.s.
太白粉 少許／tapioca starch q.s.
B
蔥段 20公克／chopped scallion 20g
辣椒片 10公克／sliced hot pepper 10g
薑絲 15公克／shredded ginger 15g
C
醬油 1大匙／soy sauce 1tbsp.
米酒 1大匙／cooking rice wine 1tbsp.
糖 1/2茶匙／sugar 1/2tsp.
水 適量／water q.s.
烏醋 適量／black rice vinegar q.s.
作法
(1)魚片解凍後取出，表面放上調味料A後兩面輕輕抹勻備用。
(2)鍋內倒入適量油，放入作法1的魚片，用中火煎到魚片側邊呈現金黃色即可翻面。兩面都煎到金黃時放入調味料B，再倒入調味料C，紅燒2分鐘即可。
3.清蒸檸檬魚
材料
鱸魚片 1片／sliced sea perch 1pcs
洋蔥 適量／onion q.s.
檸檬片 適量／sliced lemon q.s.
水 2/3杯／water 2/3cup
調味料
辣椒末 適量／minced hot pepper q.s.
蔥花 適量／chopped scallion q.s.
薑末 適量／minced ginger q.s.
蒜末 適量／minced garlic q.s.
魚露 1.5大匙／fish sauce 1.5tbsp.
檸檬汁 1.5大匙／lemon juice 1.5tbsp.
醬油 少許／soy sauce q.s.
作法
(1)將所有調味料混合成醬汁後備用。
(2)盤子先鋪上洋蔥絲，再放上解凍的魚片，淋上作法1的醬汁，再鋪上適量檸檬片。
(3)電鍋外鍋加2/3杯的水，放入作法2的檸檬魚，蒸到電鍋開關跳起即可。
4.糖醋鯛魚
材料
鯛魚片 1片／sliced tilapia 1pcs
油 適量／oil q.s.
太白粉水 少許／thickener q.s.
調味料
A
鹽 少許／salt q.s.
米酒 少許／cooking rice wine q.s.
太白粉 少許／tapioca starch q.s.
B
蒜頭 適量／garlic q.s.
洋蔥 適量／onion q.s.
紅甜椒 適量／red bell pepper q.s.
黃甜椒 適量／yellow bell pepper q.s.
C
蕃茄醬 1大匙／ketchup 1tbsp.
糖 1大匙／sugar 1tbsp.
白醋 1大匙／rice vinegar 1tbsp.
水 適量／water q.s.
醬油 少許／soy sauce q.s.
作法
(1)魚片解凍後取出，表面放上調味料A後兩面輕輕抹勻備用。
(2)鍋內倒入適量油，放入作法1的魚片，用中火煎到魚片側邊呈現金黃色即可翻面。
(3)兩面都煎至金黃後，依序放入調味料B、調味料C，一起煮滾後加入太白粉水，煮到帶有勾芡感即可。

鹹酸菜煮魚
材料：
台灣魚柳2塊
鹹酸菜1包
辣椒仔2隻
處理：
1. 魚，連包裝袋，清水解凍。
2. 拆開包裝袋，清水沖洗乾淨，擎乾水。
3. 鹹酸菜，清水浸5分鐘。
4. 魚，廚紙索乾。
5. 魚，打直1開2，切一舊舊。
6. 鹹酸菜，揸乾水，清水沖洗乾淨，切一舊舊，放碗內。
7. 辣椒仔，除去椗，洗淨。
8. 魚，加入少量胡椒粉，撈勻。
9. 預備汁料：
a. 雞汁半湯匙
b. 糖1茶匙
c. 生粉1茶匙
d. 水250毫升
10. 預備生粉芡。
烹調：
1. 鹹酸菜，白鑊大火炒香，加入辣椒仔。
2. 加入汁料。
3. 放魚，冚蓋，煮滾。
4. 加入生粉芡，煮至滾起。
5. 完成，上碟，可享用。
Fish with pickled vegetables
Ingredients:
Taiwanese tilapia fillet 2 slices
Pickled vegetables 1 pack
Chili 2 Nos.
Preparation:
1. The fillet, defrost with plastics in tap water.
2. Remove plastics, rinse with tap water. Drain.
3. Pickled vegetables, soak in tap water for 5 minutes.
4. The fillet, dry with kitchen towel.
5. The fillet, cut vertically and divide into 2 shares. Cut in pieces.
6. Pickled vegetables, squeeze it. Rinse thoroughly. Cut into pieces. Put in a bowl.
7. Chili, remove stems. Rinse it.
8. Season the fish with little pepper. Mix well.
9. Prepare sauce:
a. Chicken sauce 0.5 tbsp
b. Sugar 1 tsp
c. Tapioca starch 1 tsp
d. Water 250ml
10. Prepare tapioca sauce.
Steps:
1. Pickled vegetables, fry with no oil at high flame in wok. Add in chili.
2. Add in the sauce.
3. Put fish. Cover up the wok and boil it up.
4. Add in tapioca sauce and boil it up.
5. Complete. Put on plate. Serve.
