翻聽Bob Dylan的《Desolation Row》湧起一股莫名的觸動,感覺就像走過了一條漫長的荒涼之路。頭兩句不知怎的讓我想到最近的香港:
They’re selling postcards of the hanging
They’re painting the passports brown
他們販售吊刑的名信片
他們把護照髹成啡色
然後我便分外留神聽接下來發生甚麼事:
The beauty parlor is filled with sailors
The circus is in town
Here comes the blind commissioner
They’ve got him in a trance
One hand is tied to the tight-rope walker
The other is in his pants
And the riot squad they’re restless
They need somewhere to go
As Lady and I look out tonight

美髮店擠滿了水手
馬戲團就在城後

我很喜歡這一種講故事的歌,因為這才叫做「吟遊」。當現在的歌失去了這種吟遊性,就空餘下一堆感質。我們已經不再用灰姑娘來形容負責打掃地方的女人,我喜歡這樣的形容,但設定跟原著是反轉的:掃完地,一到十二點,她就準時穿回自己的玻璃鞋。
然後已經好夜好夜了:

Bob Dylan這首歌可能戲仿了英國詩人ES艾略特的長詩《荒原》,這首詩的一大特色是沒有人能看懂一個字——每個字都懂,湊起來卻不成意思。之前跟大家介紹過的艾茲拉龐德,勉強把《荒原》翻改成可讀的版本,加了很多註腳,務求令世人讀得通它的真意。這個情節,Bob Dylan也收錄在《Desolation Row》第九節裡面:

聽過這麼多段,就像走完了一段漫長的荒涼的路,有一種想哭的感覺。Bob Dylan的音樂經常都給予的這種荒涼感,只有經歷很多的人才會有這種感覺,寫得出這種詞,流下了這滴淚。

It was heavenly good that my saliva still running out when I am talking about this. The marination was far more complicated, time consuming and costly that nowadays no restaurant will do. however, the result was extremely good that it becomes priceless. It is exactly love at the FIRST BITE. That is the motivation I am so determined to rewrite and show it to you. It is so pity such such Cooking wisdom, knowledge and effort from our old respectable predecessors will be disappeared very soon.
I do believe I have the responsibility to inherit such knowledge to our youngsters and all the people over the world who love and enjoy food. Indeed, the recipe is not only about food, it also includes love, childhood and passion. Enjoy!
Ingredients:
3 chicken legs
1.5tbsp soy sauce
1.5tsp salt
2tbsp maggie's seasoning soysauce
2tsp five spice powder
1.5tsp white pepper powder
2 eggs
90g flour
90g cornflour
Some Ketchup for Dipping
材料:

盆菜2020
材料:
李錦記蠔皇元貝頂級鮑魚1罐
白切雞半隻
叉燒1斤
豬皮半斤
魚蛋8粒
蘿蔔(大)1個
冬菇8隻
西蘭花(大)1個
處理:
1. 蘿蔔,刨去表皮,洗乾淨,切一舊舊。
2. 豬皮,清洗乾淨,切開一塊塊。
3. 西蘭花,切開一舊舊,盡量切至大小一樣,用粗鹽放水中浸一浸。
4. 煲滾一鑊水,加入粗鹽1茶匙,加入蘿蔔及豬皮,滾起後,再放魚蛋灼一灼。
5. 西蘭花,已用鹽水浸了一會,清水沖洗乾淨。
6. 蘿蔔及豬皮,已灼了一會,再加入魚蛋灼一灼,擎乾水,清水沖洗乾淨,再擎乾水。
7. 打開罐裝鮑魚,逐隻夾起放在碟上。
8. 罐內的鮑魚汁倒在碗中備用。
烹調:
1. 冬菇,白鑊,大火爆香,同時加入蘿蔔及豬皮。
2. 在鑊中加入水250毫升,再加入一半鮑魚罐內的汁及0冰糖1大粒,大火滾起,轉中火,炆10分鐘。
3. 炆了10分鐘,已收汁,加入魚蛋,撈勻,放上碟。
4. 另一邊,中火煲滾一鑊水,加入油1湯匙,放西蘭花灼2分鐘,擎乾水。
預備好瓦煲,內放一個合適的蒸餸架,戴上透明膠手套,依次序放好:
1. 先放蘿蔔。
2. 放白切雞及叉燒。
3. 豬皮,放在白切雞及叉燒中間。
4. 魚蛋,放在豬皮側邊。
5. 西蘭花3朶,放豬皮的另一邊
6. 冬菇放西蘭花,近瓦煲邊。
7. 剩下少許瑤柱絲,都放在材料上。
8. 剩下的西蘭花,沿瓦煲的另一邊,整齊的放好。
鮑魚的烹調程序:
1. 鮑魚罐內的汁加入鑊中,加入一倍份量的水,大火煮滾。
2. 放鮑魚熱一熱。
3. 放鮑魚在盆菜上面,小心排列好。
4. 鑊中的鮑魚芡汁,淋在盆菜上。
盆菜,大火煲滾,完成,可享用。
Poon choi 2020
Ingredients:
Lee Kum Kee Premium Abalone in Premium Oyster Sauce with Dried Scallops 1 can
Steamed chicken half No.
Roasted pork 1 catty
Pigskin 0.5 catty
Fish balls 8 Nos.
White radish (large) 1 No.
Mushrooms 8 Nos.
Broccoli (large) 1 No.
Preparation:
1. White radish, get it peeled. Rinse, and cut into pieces.
2. Pigskin, rinse and cut into pieces.
3. Broccoli, cut them about in the same size. Soak in salty water.
4. Boil up a wok of water. Put cooking salt 1 tsp. Put white radish and pigskin.
5. Broccoli, has been soaked in salty water for a while, rinse thoroughly.
6. White radish and pigskin, have been soaked for a while, put fish balls soaking for a while. Hang dry. Rinse with tap water. Hang dry again.
7. Open the can of abalone, put on plate one by one.
8. Syrup in can, is to be put in a bowl to get ready for use.
Steps:
1. Mushrooms, fry with no oil at high flame in wok. Fry with white radish and pigskin at the same time.
2. Put water 250ml, and half can of sauce with rock sugar 1 big cube into wok. Heat up at high flame, turn to medium flame after boils up. Braise for 10 minutes.
3. Have already braised for 10 minutes, sauce has become thick. Mix well with fish balls. Put on plate.
4. On the other side, heat up a wok of water at medium flame. Put oil 1 tbsp, put broccoli soaking for 2 minutes. Hang dry.
Get ready for a pot, put a steaming rack which can be fitted in the pot. Put on transparent gloves, put the following in order:
1. Put white radish first.
2. Put chicken and roasted pork.
3. Pigskin, put in between the chicken and roasted pork.
4. Fish balls, put besides the pigskin.
5. Broccoli 3 Nos., put on the other side of pigskin.
6. Mushrooms, to be put besides the broccoli alongside the pot.
7. Little shredded dried scallops left, put on top of the ingredients.
8. Little broccoli left, to be put in order on the other side of the pot.
Preparation steps of abalone:
1. Heat up the abalone sauce in can with a can of tap water at high flame in wok.
2. Heat abalone in wok for a while.
3. Put abalone in good order on top of poon choi.
4. The sauce in wok is to be put on top of poon choi.
Poon choi, heat up at high flame. Complete. Serve.

Portuguese Garlic Shrimp by Jimmy’s Table
This is definitely one of our favorite dishes to eat in Portugal. We ate this in Lisbon, Algarve and Porto. Every restaurant that had this dish, we ordered it. My version is a more elevated version where I infused the olive oil with shrimp shells to give a powerful shrimp flavor blast! It also makes for a fantastic dip for crunchy French bread. What's best is that this dish is so easy to make! Hope you enjoy it!
Ingredients 食材:
0.5-1 kg of large red shrimps or langoustines with heads (大蝦)
1/2 cup (15 pieces) of Garlic - sliced (大蒜)
1 cup of Cilantro - leaves only (香菜)
2 lemons - halved and squeezed for juice, seeds removed (檸檬)
1-2 tablespoons of paprika (紅甜椒粉)
1 glass of white wine (白酒)
5-6 tablespoons of garlic infused olive oil (大蒜橄欖油)
Salt - for taste (鹽)
Finishing Ingredients 撒料調味:
1/2 lemon (檸檬)
1/4 cup cilantro (香菜)
Fresh loaf of crunchy french bread (法國麵包)
STEP 1
Cut garlic into slices.

將大蒜切成片。
STEP 2
To prepare the shrimp, we need to remove the shell without removing the head and tail. We do so by using a pair of scissors to cut down the spine of the shrimp from where the head meets the body upto one segment before the tail.

準備蝦子,將蝦殼身的部分剝除,保留頭跟尾巴,所以我們可以準備剪刀,從跟蝦頭連接的地方至蝦尾巴部分剪開。
STEP 3
Then start to peel away the shrimp shell and legs in the middle section. Be careful not to peel off the tail or head. Save the shells to be used to flavor the oil. Remove the dark, digestive tract along the spine, as this is dirty and you don’t want to eat it. Rinse with cold water to clean and drain.

接著剝除蝦子中斷的殼跟腳的部分,小心不要將頭跟尾巴去除了。記得將蝦殼留著,要來增加油的風味。接著也將蝦子的腸泥一併去除,並用清水簡單沖洗、瀝乾蝦子。

On the stove, add in 5-6 tablespoons of garlic olive oil until entire surface is covered with a layer of oil and heat up your pan. The shrimp and garlic infused olive oil will be used later to dip your bread in, so be generous!

在鍋中放入5-6匙大蒜橄欖油,直到整個蓋過鍋底,然後開火加熱油。因為等會兒會再另外加入蝦子與蒜頭,最後麵包也要沾這個由來享用,所以油量放的不能太少唷!

When the oil is very watery in the pan, it is hot enough. On low to medium heat, add in shrimp shells to fry. The goal is the get all of the great shrimp flavors into the olive oil.

當油加熱至水狀時,代表已經足夠熱了。將火調至中火,加入蝦殼先炒香。這個步驟是為了將蝦子的香味煮入油中。

When the shrimp is fried, about 5-8 minutes, then remove and strain the rest of the oils from the shrimp shells.

將蝦殼炸約5-8分鐘後,將蝦殼撈起然後瀝乾蝦油。
STEP 7
Add in garlic slices to simmer and fry into the shrimp olive oil for about 30 seconds to a minute without browning the garlic too much.

Add in shrimp one at a time and ensure entire pans surface is utilized. Add 1-2 teaspoons of sea salt for taste. Evenly add in 1-2 tablespoons of paprika.

慢慢的將蝦子排入鍋中,好好利用與鍋子接觸的地方來烹煮。加入1-2茶匙海鹽,再均勻加入1-2湯匙紅甜椒粉。

After cooking for about 1-2 minutes, flip the shrimp to cook the other side until golden orange.

大約烹煮1-2分鐘左右後,將蝦子翻面煎至金黃橘色的狀態。

Add in 1/2 cup of white wine. Squeeze in a lemon. Cook for about 5-10 minutes until shrimp are fully cooked. This will depend on the size and thickness of the shrimp.

接著加入1/2杯白酒,擠入檸檬汁,接著再繼續煮5-10分鐘,讓蝦子完全熟透。(烹煮時間會因蝦子大小不同而不等)

Be sure to taste the garlic shrimp olive oil sauce to see if you need to add in more salt, wine, or lemon juice. Towards the end, pour in another 1/2 cup of wine so that it will give it a more fragrant wine taste.

自行嚐嚐蝦油的味道是否足夠,若不夠可以再加鹽巴、白酒跟檸檬來做調整。最後在要起鍋前,將剩餘1/2杯的白酒加入鍋中,能讓這道菜更有葡萄酒的香氣。

Lastly, add in the cilantro and stir in. We don’t want to over cook the cilantro.

For plating, you can either serve it in a pot or directly using a cast iron pan. Prepare some sliced french bread for dipping. Add in half a lemon. I used a torch to burn the lemon for a good lemon smell, but it can also be squeezed into the shrimp. Top it with some cilantro.

關於擺盤,可以直接使用烹煮時的鐵鍋,或者準備鐵盤來擺也很有葡萄牙的風味。準備一些切片的法式麵包。我用噴槍稍微烤檸檬切面,以在這道菜聞到更濃厚檸檬的香氣,也可以將其擠入菜中。
