ไก่เปรี้ยวหวานสไปซี
Spicy Sweet & Sour Chicken
สะโพกไก่ทอดในสไตล์ไก่คาราเกะแบบญี่ปุ่น แต่หมักด้วยน้ำปลาในรสแบบไทยๆ เคล้ามากับซอสเปรี้ยวหวานสำเร็จรูปที่ปรุงให้แซ่บด้วยพริกกระเทียมโขลก

-ไก่ทอด-
สะโพกไก่ (หั่นเต๋า) 400 กรัม
กระเทียม (บด) 2 กลีบ
น้ำปลา 1 ช้อนโต๊ะ
แป้งมันฮ่องกง 4 ช้อนโต๊ะ
แป้งสาลีอเนกประสงค์ 2 ช้อนโต๊ะ
น้ำมันรำข้าว สำหรับทอด

-ซอสเปรี้ยวหวานสไปซี-
กระเทียม 1 กลีบ
หอมแดง 1 หัว
พริกชี้ฟ้าแดง 1 เม็ด
พริกเหลือง 1 เม็ด
ยี่หร่า (คั่ว) ¼ ช้อนชา
ลูกผักชี (คั่ว) ½ ช้อนชา
ซอสเปรี้ยวหวานแม่พลอย 4 ช้อนโต๊ะ
น้ำปลา ½ ช้อนโต๊ะ
น้ำมันรำข้าว 1 ช้อนโต๊ะ
โหระพาทอด ½ ถ้วย

1. หมักไก่ กับกระเทียมและน้ำปลา เป็นเวลา 1 ชั่วโมง ตั้งน้ำมันให้ร้อนดี ผสมแป้งมันฮ่องกงและแป้งสาลีให้เข้ากัน นำไก่ลงไปเคล้าให้แป้งเกาะเคลือบดี นำลงทอดจนสุก พักไว้ ทอดใบโหระพา พักไว้
2. โขลกลูกผักชี และยี่หร่า ตักออกมาพักไว้ โขลกกระเทียม หอมแดง พริกชี้ฟ้า และพริกเหลืองให้พอแหลกดี ใส่เครื่องเทศกลับลงไป
3. ตั้งน้ำมัน ใส่เครื่องที่โขลกลงไป ผัดให้เครื่องที่โขลกสุกดี ใส่ซอสเปรี้ยวหวาน ปรุงรสด้วยน้ำปลา เคี่ยวให้ข้นขึ้น นำออกจากความร้อน ใส่ไก่ลงไปเคล้าให้ซอสเคลือบดี
4. ตักใส่จานเสิร์ฟ โรยด้วยโหระพาทอด

Spicy Sweet & Sour Chicken
Chicken thigh are lightly coated in starch and fried to perfection, tossed in a spiced sweet and sour sauce and decorated with glassy crispy Thai basil leaves.

- Fried Chicken-
Chicken Thigh (diced) 400 g
Garlic (mashed) 2 cloves
Fish Sauce 1 tbsp
Potato Starch 4 tbsp
All-purpose flour 2 tbsp
Rice Bran Oil

-Spicy Sweet & Sour Sauce-
Garlic 1 clove
Shallot 1 bulb
Red Chilli 1
Yellow Chilli
Cumin Seed (toasted) ¼ tsp
Coriander Seed (toasted) ½ tsp
Sweet and Sour Sauce 4 tbsp
Fish Sauce ½ tbsp
Rice Bran Oil 1 tbsp
Fried Thai Basil ½ cup

1. Marinate chicken with garlic and fish sauce for an hour. Heat the oil in a pan, combine potato starch and all-purpose flour, coat the chicken lightly and fry in the oil until golden brown. After frying the chicken, fry Thai basil for a garnish.
2. Pound coriander seed and cumin seed. Remove spice from the mortar, add garlic, chillies and shallot and pound to form a paste before adding spice back into it.
3. Heat the pan with a tablespoon of oil, add the spice paste and cook until fragrant. Add sweet and sour sauce and fish sauce. Reduce to thicken before removing from the heat. Combine chicken with the sauce.
4. Garnish with crispy Thai basil before serve.
