四年前餐廳開張就放在菜單上的一道魚饌,不單單是招牌菜,而且已成為餐廳的DNA,不管菜單怎樣更新,都一定保留。不花巧、簡約但選材到位、演繹精準的一道菜,以日式混合法式的烹調技術去表達了中菜蒸魚+魚湯文化的精髓,看到一個廚師寬闊的視野。這一晚徹底感動我的是,這已經吃過無數次的菜,還是吃出了不同之處,味道更好更有深度了,跟大廚Chef Maxime 查詢,他說是的,他最近在細節上作了調整及改良。
一道他做了至少一千次的菜,仍找到可以突破之處,反映一個廚師在不斷尋求進步的決心,以及對自我要求之高是異於常人。
Akamutsu, the rosey seabass wrapped in Brittany Kombu with verbena and steamed with Sake over hot stones ----- the fish dish placed on the menu since day one in @ecriturehk . I think this is more than a signature dish now, it has also become part of the DNA of the restaurant. A rather simple dish, no dazzling elements, no fancy factor, however with the well-selected ingredients and calibrated execution, @mximeagilbert successfully expressed the beauty of Chinese Steamed fish + fish soup culture through his excellent cooking skill with both Japanese and French cooking techniques applied to it.
I have had this dish for many times, but the latest experience touched me greatly ----- it tastes slightly different, even better of course, the flavour carried more in-depth, and the fumet texture is thicker and smoother than the past. I checked with Chef Maxime, he said yes, he has recently made some minor adjustments in the details hence the improved version is borned. Wow! A dish that he has cooked at least a thousand times, but still able to find a way for the breakthrough, you can tell a determined and self-demanding person he is, to constantly seek improvement for better results. Respect.

今年的农历新年与以往不同,大家都必须遵守各国政府定制的标准作业程序,百年一遇的疫情就在这个年代碰巧被我们遇上了。

Rice Noodles and Seabass with Black Bean Sauce
ราดหน้าปลากะพงเต้าซี่สูตรนี้ นอกจากโดดเด่นด้วยเส้นที่กรอบจากการทอดแล้ว ตัวซอสเต้าซี่ยังมีส่วนผสมของมะกอกดำที่เพิ่มมิติให้กับเนื้อสัมผัสและรสชาติ
ปลาทับทิมขนาด 5-6 ขีด 1 ตัว / น้ำสะอาด 1 ลิตร + สำหรับผสมแป้งมัน/
แป้งสาลีเอนกประสงค์ สำหรับชุบทอด / น้ำมันรำข้าว 2 ช้อนโต๊ะ /
น้ำมันรำข้าว สำหรับทอด / ก๋วยเตี๋ยวเส้นใหญ่ 150 กรัม / มะกอกดำ 3 ผล/
เต้าซี่ ½ ช้อนโต๊ะ / กระเทียม 4 กลีบ / ซอสหอยนางรม 20 กรัม/
ซีอิ๊วขาว 20 กรัม / น้ำตาลทราย 1 ช้อนชา / พริกไทยขาวป่น ปรุงรส/
คะน้าฮ่องกง (ซอย) 2 ต้น / เห็ดออรินจิ 50 กรัม / แป้งมันฮ่องกง 1 ช้อนโต๊ะ/
น้ำมันงา 1 ช้อนชา
1. แล่ปลา หั่นเนื้อปลาให้เป็นชิ้นหนา นำก้างและหัวไปต้มในน้ำสะอาดประมาณ 30 นาที เพื่อให้ได้ซุปกระดูกปลา
2. นำเส้นใหญ่ลงไปทอดในน้ำมันรำข้าวที่ 160 องศาเซลเซียสให้กรอบ ตักขึ้นมาพักไว้ เคล้าปลาในแป้งอเนกประสงค์บางๆ นำลงไปทอดต่อจนกรอบและสีสวย พักไว้เช่นกัน
3. สับกระเทียม เต้าซี่ และมะกอกดำให้ละเอียด นำไปผัดกับน้ำมันจนส่งกลิ่นหอม
4. ตักน้ำซุปกระดูกปลาประมาณ 1 ถ้วยตวง ใส่ลงในกระทะ เมื่อน้ำเดือดแล้ว จึงใส่เห็ด และคะน้าฮ่องกง
5. ปรุงรสด้วยซอสหอยนางรม ซีอิ๊วขาว น้ำตาลทราย และพริกไทยขาวป่น
6. ผสมแป้งมันกับน้ำสะอาดเล็กน้อย ค่อยๆ เทใส่ส่วนผสม และคอยจนได้ความข้นที่ต้องการ ใส่น้ำมันงา และยกออกจากความร้อน
7. ตักซอสราดบนเส้นใหญ่ทอดกรอบ ตามด้วยปลาทับทิมทอด และพริกไทยขาว
Rice Noodles and Seabass with Black Bean Sauce
Fermented black bean give a deep rich salty taste to the sauce which subdue the fishiness and highlight the crunch from the crispy rice noodle.
Tilapia 1 / Water 1 l + extra for potato starch / All-purpose Flour for coating/
Rice Bran Oil 2 tbsp / Rice Bran Oil / Flat Rice Noodles 150 g / Black Olives 3/
Fermented Black Bean ½ tbsp / Garlic 4 cloves / Oyster Sauce 20 g / Light Soy Sauce 20 g/
Sugar 1 tsp / White Pepper / Chinese Broccoli (sliced) 2 / King Oyster Mushroom 50 g/
Potato Starch 1 tbsp / Sesame Oil 1 tsp
1. For the fish: filet the fish, cut the fillet into thick slices. Boil the fish head and bone in the water for 30 minutes to make a simple fish stock.
2. In the pan, heat the oil to 160°C and fry the rice noodles until the edges are golden; set aside to drain. Lightly dust fish slices in flour and cook the fish in oil until crispy; set aside to drain as well.
3. Mince garlic, fermented black bean and olive, stir fry with oil until fragrant.
4. Add 1 cup of fish stock that we made to the pan, once the stock is boiling, add mushroom and Chinese broccoli.
5. Season with oyster sauce, light soy sauce, sugar and white pepper.
6. Mix potato starch with water and slowly drizzle into the sauce to achieve your desired consistency. Add sesame oil and remove from the heat.
7. To serve, transfer crispy rice noodles to the plate, pour the sticky sauce over; garnish with crispy fish and white pepper.

Pada kali ini Chef Chew dan pasukannya dari Utara Hotel Armada PJ menawarkan Golden Reunion Dinner yang mana mereka menyediakan pelbagai hidangan mewah masakan Cina tradisional merentasi bufet mereka untuk hidangan Tahun Baru Cina 2020.

ƯỚP CÁNH GÀ - MARINATED CHICKEN
- 10 cặp cánh gà - 10 pairs chicken wings
- 2 muỗng súp gừng - 2 tbsp ginger
- 3 muỗng súp tỏi - 3 tbsp garlic
- 2 muỗng súp mật ong - 2 tbsp honey
- 2 muỗng súp dầu hào - 2 tbsp oyster sauce
- 4 muỗng súp rượu trắng - 4 tbsp wine rice
- 3 muỗng súp nước tương - 3 tbsp soy sauce
- 1/2 muỗng súp hắc xì dầu - 1/2 tbsp dark soy sauce
THÀNH PHẦN HUN KHÓI - TEA-SMOKED INGREDIENTS
- 100 gr gạo - 100 gr rice
- 80 gr trà lài - 80 gr jasmine tea
- 60 gr đường vàng - 60 gram brown sugar
THỰC HIỆN
- Trộn đều tất cả các thành phần ướp cánh gà. Cho vào ngăn mát tủ lạnh ướp khoảng 4 tiếng.
- Lót 1 lớp giấy bạc dưới chảo và cho các thành phần hun khói vào trộn đều. Sử dụng 1 vỉ nướng giống như clip để cách với lớp hun khói.
- Sau đó, xếp cánh gà vào và đậy kín chảo bằng 1 tấm giấy bạc.
- Nấu ở lửa nhỏ 30 phút, sau đó tắt bếp và giữ yên giấy bạc trong 20 phút để hun khói.
- Ăn kèm với tương ớt, tương cà hoặc tương mận
METHOD
- Marinate all ingredients of marinated chicken. Refrigerate for up to 4 hours
- Put aluminium foil below of pan or pot then put all tea-smoke ingredients. Take equipment same video clip put in then arrange all chicken wings.
- Low heat 30 mins then turn off heat and keep aluminium foil for 20 mins.
- Already served with chili sauce, ketchup or plum sauce
