I was just telling my dear friend @annpllee about how much I miss a classic Victoria Sponge — the way they do it in the UK. And she very kindly whipped one up for me. 🥰
By “whip”, we’re talking homemade strawberry and raspberry preserves, buttercream of French butter, cream and tonka beans…sandwiched in a mid-bodied butter sponge cake that is light yet solid enough to hold all that cream and caramelised preserves well.
No one makes this classic English cake so good, I tell you. Ann has elevated it to a new level. I feel like the Queen of England, eating this hahaha!
May Anne has asked for a slice but I’m inclined to say no, a horrible mother I am. 😂 Will just buy her a random butter cake from a bakery, slather some jam from Harrods and pray she can’t tell the difference. 🙈
* Sadly, this cake is not for sale. You’ll have to crawl and beg her to make this for you. 🤪

Do you know that a typical French breakfast is generally light, sweet and fairly simple?
It can include croissants for sure, but most commonly, it will comprise bread with jam/butter or cereals for kids.
As for me, I eat bread with red berry jam along with a cup of coffee for my breakfast. 🍞☕
I found this delightful raspberry “Framboise” jam at Carrefour in which the fruit flavor is preserved. It feels delicious! The raspberry perfume will brighten your day up! ☀

Hello everyone, today we're going to show you how to make a beautiful pink-red jam with the wonderful fragrance of litchi, raspberry and rose, it’s inspired by classic french jam *Confiture Ispahan*, which was created by Pierre Hermé and Christine Ferber.
This recipe is step by step guide to make a homemade preserve. It's easy and so delicious. Mix with 3 fruits to create a fantasy flavor to become a longtime favorite. Even a jam-making novice can make it easily.

Confiture Ispahan Recipe
☞ This recipe can make 3 jars (150ml, each)
✎ Ingredients
raspberries 300g, fresh or frozen
litchi 200g, pitted and skinned
granulated sugar 350g
lemon juice 20g
rose water 25ml
✎ Instructions
1. Rinse and rub the litchis under a running tap, and soak them for 3~5 minutes. Then wash again, drain and pat them dry with a tea towel or paper towel.
2. Remove the skins and pits of litchis, and cut into 3-4 pieces.
3. Leave the frozen raspberries to finish defrosting at room temperature for 20 minutes.
4. Add raspberries into a food processor, pulse until mixture become smooth. Place a fine mesh strainer over a saucepan, pour the pureed raspberries into the sieve, mash and press with a spoon to remove the seeds. But if you don’t mind the seeds, you can ignore this step.
5. Add litchis, lemon juice and sugar to the saucepan, mix well and then heat to a simmer over medium heat, turn off the heat.
6. Pour the fruit mixture into a large bowl. Cover with a parchment and plastic wrap, let cool and then place in the refrigerator overnight.
7. The next day, to sterilize jam jars at first. Pour the mixture puree into a saucepan. Stir gently over a medium high heat, bring to a boil, and boil for more 10 minutes. stir frequently and skim skim the foam.
8. After 10 minutes, add rose water to the jam, and bring to a boil again.
9. Remove from heat and ladle hot jams into sterilized jars. Place lids and seal. Turning the jars upside down. Let cool and place in the refrigerator.

昨天早上不到八點鐘我就到了 Four Seasons George V 飯店,因為和甜點主廚 Maxime 約好為他的甜點與麵包作品拍照。從早上超過10種的維也納酥皮麵包與早餐麵包類,一直到整個旅館與三個米其林餐廳Le Cinq(三星)、L'Orangerie(一星)、Le George(一星)幾乎所有的甜點,包括最新的夏季創作。
為了這個project,我前一天買了一張新的記憶卡,並直接命名為「Maxime」? 最後拍了接近800張照片、還有好幾個影片。第一個剪輯出來的短片是 Maxime 主廚在我面前示範組裝他的招牌甜點「蛋白霜之花」( Fleur de Vacherin )。雖然已經看過這朵花非常多次,但我仍然為整個構思與需要高難度技巧才能完成的作品屏息。如果是我來做的話,應該會把大部分的蛋白霜花片折斷、而且在雪酪融化前都不可能完成。

I spent a wonderful day yesterday at Four Seasons Hotel George V, Paris with the chef Maxime Frédéric and his incredibly delicate pastries and desserts, thanks to the hard work and support of his team!
In this short video the chef demonstrates how his signature dessert "Meringue Flower" ("Fleur de Vacherin" in French) is made. The meringue petals are extremely fragile so it requires an extreme concentration and skill to assemble. Maxime has dedicated this creation to Rose, his grandmother, whom he always visited with the flowers of the same in his childhood.
This dessert is a "revisité" of "Vacherin", a classic French dessert made of a meringue container enveloping ice creams and sorbets. Maxime's Fleur de Vacherin, is made of anise sablé, raspberry juice and jam, raspberry sorbet, a mousse made "fromage blanc", a fresh cheese originated in northern France, and then finally the meringue petals that form a perfect flower.
