Steamboats are a must have staple during the Chinese New Year dinner in many homes. This year we came up with recipes for quick and easy to make soups that you can pick. As Singaporeans spicy food is one of our favourites - and we want to share with you our delectable Laksa and Tom Yum soup base.
For our Laksa soup base, we combined Heinz chicken broth with laksa paste, coconut milk and lots of chopped and oh so fragrant laksa leaves. We add the sliced tau pok to let it soak up all the Laksa soup.
As for our Tom Yum soup base, combine Heinz chicken broth with Tom Yum, lemongrass and kaffir lime leaves, galangal and fresh lime juice to make for a spicy kick in your soup. We added prawns for its sweetness and straw mushrooms for texture. For those who want an added punch simply add Thai bird eye chillies to the soup base!
Bring out the finest flavors this festive season with Heinz Chicken Broth!

Maguro Zuke Don (Marinated Tuna Fish Rice Bowl)
Difficulty: Very Easy
Time: 15min
Number of servings: 1
Ingredients:
90g (3.2oz) Sashimi Grade Yellowfin Ahi Tuna
1/2 tbsp. Sake
1/2 tbsp. Mirin (sweet Sake)
1 tbsp. soy sauce
Wasabi if you like
1 bowl of rice
Kizaminori (shredded Nori sheet)
green onions and/or Shiso leaf
toasted white sesame seeds
Directions:
1. In a small pot, boil down Sake and Mirin to reduce the alcohol content.
2. Add soy sauce and Wasabi, then mix well. (Wasabi will be not spicy if you mix and leave for a while, so kids can eat it with only nice Wasabi aroma.)
3. Marinate tuna Sashimi and put in the fridge for about 10 minutes. (Do not marinate too long or tuna will be salty.)
4. Meanwhile, put rice in a rice bowl and leave to cool. (Cold rice is better because it won't warm up the fish.)
5. Put Kizaminori on the rice, arrange Tuna sashimi, garnish with green onions or Shiso leaves, and sprinkle with toasted white sesame seeds. You can place a bit of fresh Wasabi on top if you like.

Hello friends! Today we're going to share with you how to make a classic Thai dish: Tom Yum Goong (ต้มยำกุ้ง/ tom yam soup/ tom yum kung).
Tom yum goong is a type of sour and spicy Thai soup, usually cooked with shrimp or a mix of seafood, like squid, fish. In Thai language, tom means the boiling process, and yam means “mixed” or “salad”. The essential ingredients of tom yum are herbs such as lemongrass, galangal, kaffir lime leaves, these 3 main herbs give the soup flavor, they are absolutely necessary. The rest of the ingredients are lime juice, fish sauce, Thai Chili paste and red chili crushed. Tom Yum is spicy, sour, savory, and addictive. Hope you like this video.

How to make Tom Yum Goong Soup
Tom Yum Soup Recipe
☞ Yield: Serve 2~3
✎ Ingredients
shrimp 4, medium size
oyster mushrooms 80g
lemongrass 2 stalks
galangal 2 inch chunk
kaffir lime leaves 5
shallots 4
chilli Q.S
cilantro roots 2
Thai chilli paste 30g (1.5tbs)
fish sauce 35g (2.5tbs)
lime juice 20g (1.5tbs)
chicken stock 500ml
sugar 7g (1/2 tbs)
* If the chicken stock is unsalted, you can add 1/4 tbsp salt
*Most store-bought chicken stocks are salted, so don't need to add salt, you can mix 250ml stock with 250ml of water.
✎ Instructions
1. Use a scissor to cut the sharp point of the shrimp (telson and rostrum), but keep the head-on, also cut the antennas and legs. Then open the shell along the back of the shrimp and remove the shell and vein. Spoon the shrimp yellow in the head, it’s full of flavor, set aside.
2. Slice the galangal. Unlike ginger, galangal is too hard to cut through, so be carefully. Crush the lemongrass with the back of the knife, and cut into small chunks. Remove the thick vein from the lemon leaves, then tear into small pieces. Remove the leaves from cilantro, but keep the roots.
3. Pour oil into the skillet, add “shrimp yellow” and sauté over medium heat, add Thai chili paste, and cook until well combined.
4. Pour 500ml stock into the soup pot, bring to a boil, add cilantro roots, galango, lemongrass, shallots and lemon leaves, turn to the low heat, cook for 3 minutes.
5. Add shrimp yellow chili paste, stir slightly until well combined. Add mushrooms, cook until soft.
6. Add fish sauce, sugar and lemon juice.
7. Add shrimp and cook until they are all cooked through. Taste and add more seasoning if needed.
8. Turn off the heat and add chiles, but this is optional.

3 pieces of fermented tofu (you can use spicy fermented tofu too)
2 tablespoons of the accompanying sauce from the fermented tofu
1 tablespoon light soy sauce
2 tablespoons Chinese cooking wine (Shaoxing Huatiao wine)
3 cloves garlic (chopped)
0.5 teaspoon sugar
1 thumb size young sliced ginger (julienned)
Stem from 2 stalks of spring onion (lightly smashed)
1kg (35oz) chicken (you can use any parts of a chicken)
2 tablespoons cornflour
