Dos Mestizos Boracay
I stumbled upon this fancy restaurant, Dos Mestizos which you can locate at the Main road, Station 1. Across Seawind Resort.
I was fascinated with how they seem to always get people to dine in and have drinks. On May 12, 2021, I visited the place and dined in and it was not a pleasant experience as I expected.
I am DJ Macky Suson, and I have been here in Boracay for two weeks. After living in Singapore for 10 years and suffered from mental health disorders, I chose Boracay as my place to recover. I have decided to review the places I go to, to help this beloved island improve on things it offers- food, a place to stay, drinks, activities, price and most importantly, the service.
I was greeted by the owner, if I am not mistaken with warm welcome which I expected as I always see him at the place talking to people. Dos Mestizo’s signature ‘Mestizo’ is traditional Spanish dishes elevated by complementing Filipino flavors and other carefully selected ingredients imported from Europe. The menu was not that comprehensive and all I could see was Paella. And so I thought, that’s probably what they are pushing and that’s their best selling food. I ordered a glass fresh pineapple juice, PAELLA VALENCIANA, small. The price was roughly 30 Singapore Dollars and I was expecting for it to be really good.
There was a complimentary bread that’s served and I actually loved it, specially the sauce. After finishing it, I thought, the paella could be better. It was not the case.
In Barcelona, they have a fast food for paella and most locals there said it’s bad. The truth is, my paella experience at that fast food in Barcelona was a lot way better than in Dos Meztisos.
PAELLA VALENCIANA looked great. I wish it tasted great but it was not the case. It was really dry to begin with. The rice seemed to be hit by El Niño as it was as dry as the season. The overall taste was okay. I mean for 30 Singapore Dollars, it’s unacceptable. The serving was good for 1 adult and one kid. The nightmare happened when I ate a portion of meat which tasted rotten. It seemed like it was placed in the fridge for months and they did not notice. It destroyed the entire experience. But at that time, I wanted to throw up but I could not because the owner was literally in front of me and so with other 3 guests.
This place is probably great for drinking but for food, I would not recommend for people to come here. I am happy I did not have food poisoning.

聖誕前重新整理了一下這個皇牌食譜給大家🥰早前還因為這個西班牙海鮮飯被飲食男女邀請了做人物專訪🤣現在回想起也很有趣~
真的所有人都對這個西班牙海鮮飯的香味和味道讚不絕口~希望大家喜歡😍
𝑴𝒆𝒓𝒓𝒚 𝑪𝒉𝒓𝒊𝒔𝒕𝒎𝒂𝒔🎄✨
🔸材料(2-3人份)🔸
1. 西班牙米 3杯(約240毫升)
2. 大蝦 6條
3. 大青口 6隻
4. 魷魚 1條
5. 蕃茄 2個
6. 迷你小紅黃椒 3粒
7. 洋蔥 1/4個
8. 西班牙臘腸Chorizo 50克
🔸調味料🔸
1. 水 30毫升
2. 牛油 8-10克
3. 大蒜 2-3瓣
4. 雞汁 10毫升
5. 魚露 10毫升
6. 鹽 1茶匙
7. 甜椒粉 Paprika 1-2茶匙
8. 白酒 50毫升
9. 番紅花 1撮(可用3-4茶匙薑黃粉代替)
10. 香葉 3片
🔸伴碟🔸
1. 檸檬
2. 蕃茜
🔸做法🔸
1. 把一撮番紅花和香葉泡水。
2. 海鮮洗淨,蝦眼蝦刺蝦腳蝦尾剪掉,挑走蝦腸。需要吐沙的貝類海鮮請提前準備。
3. 魷魚處理乾淨後切圈。
4. 海鮮瀝乾水後用鹽和胡椒醃好備用。
5. 蔬菜及米洗淨,蔬菜切粒並瀝水待用。蕃茄上下𠝹十字,用熱水焗幾分鐘然後去皮。
6. 把番紅花和香葉水用小火加熱。出現水泡後關火。稍稍待涼後加入甜椒粉、雞汁、魚露、牛油拌勻成為已調味的番紅花水。
7. 下油開鍋。
8. 加入蝦頭煎香,同時用工具按壓蝦頭擠壓蝦膏和蝦汁,大約煎5分鐘。
9. 加入洋葱和蒜蓉煎香及煎至金黃色帶點焦糖化。
10. 加入白酒煎香。
11. 把蝦頭放入篩內,用力把蝦汁和白酒按壓出來。
12. 加入西班牙臘腸碎煎香。
13. 再把蝦頭按壓多一次出蝦汁。
14. 加入蕃茄和紅黃椒粒炒香,這時候蔬菜會出水,成為高湯。
15. 加入已調味的番紅花水拌勻。
16. 加入米,輕輕拌勻。這時米和水應該剛好拌成濕米,用工具撥開米的時候不見有任何水跡。
17. 熄火,鋪上海鮮及香葉並合上蓋子。按照以下焗爐/ 爐頭版繼續加熱。

1. 放入已預熱的焗爐用180度焗30分鐘。
2. 最後加上香草和檸檬伴碟。
🔹爐頭版🔹
1. 小火加熱20分鐘,熄火焗10分鐘。
2. 最後加上香草和檸檬伴碟。
🔹小TIPS🔹
1. 薑黃粉是番紅花的替代品,味道相近。
2. 懷孕的女生不能吃番紅花。
3. 如果有蘑菇及貝類海鮮,本身水份高,可以不用額外加水。米:水=1:1.2。
4. 如果用蝦/魚高湯代替水,再加月桂葉和番紅花煮會更佳。

🔸Ingredients (2-3 servings)🔸
1. Spanish rice 3 cups (around 240g)
2. Prawns 6
3. Mussels 6
4. Squid 1
5. Tomatoes 2
6. Mini Red and Yellow Pepper 3
7. Onions 1/4
8. Spanish Chorizo 50g
🔸Seasoning🔸
1. Water 30 ml
2. Butter 8-10g
3. Garlic 2-3 petals
4. Chicken essence sauce 10 ml
5. Fish sauce 10 ml
6. Salt 1 teaspoon
7. Paprika 1-2 teaspoons
8. White Wine Chardonnay 50 ml
9. Saffron 0.5-1 teaspoon
10. Bay leaves 3 pieces
🔸Garnish🔸
1. Lemon
2. Parsley
🔸Steps🔸
1. Soak saffron and bay leaves in water.
2. Clean and devein the prawns. Peel it if necessary.
3. Clean the squid and cut into round pieces.
4. Sautee the seafood with salt and pepper.
5. Clean the veggie and rice if necessary and set aside. Cut the top and bottom of tomato and soak in hot water before peeling the skins.
6. Chop the chorizos into pieces.
7. Heat the saffron and bay leaves water in low heat. Turn it off when there is water bubbles. Add paprika, chicken essence sauce, fish sauce and butter inside after cooling down.
8. Heat the pan with oil.
9. Fry the prawns head around 5 minutes and squeeze the prawns head juice with tools.
10. Fry the onions and garlic into golden color.
11. Add white wine.
12. Squeeze the prawns head in the sieve for the last time.
13. Fry the chorizos.
14. Fry the tomatoes and mini peppers until the veggie juice mix with the sauce.
15. Add the seasoned saffron and bay leaves water.
16. Add the rice and stir it evenly with the sauce lightly. The rice and the sauce are well mixed together and there is no water on the pan when you stir the rice.
17. Turn off the fire, put the seafood and bay leaves on the rice. Cover it with the lid.
18. Cook it with oven or cast iron pot.

Preheat the oven at 180‘C and bake with 30 minutes.

Cook the paella in low heat for 20 minutes. Turn it off and leave it for 10 minutes.
19. Garnish with herbs and lemon and then you are ready to serve your guests 😀

今天睡到自然醒,一邊吃早餐,我一邊隨性翻閱英國宮的家具家飾型錄,阿卡一邊做他的拼貼畫繪本,突然轉頭過來說:
「這應該是我30多年來第一次,在星期天有著星期天的感覺!」
我:那是什麼感覺?
「可以睡到自然醒,慢慢吃早餐,不焦慮自己應該要做這個做那個才沒有在浪費時間浪費生命,很舒服很放鬆,就像星期天應該要有的心情。」
到底童年和青少年時期受到卡媽多強大的精神壓迫,才能讓自己活得這麼累啊?

昨天阿卡照例要在週末做西班牙鍋飯(Paella)🥘,平常都做雞肉版,這天說要做海鮮版。他早上去遛狗時我上市場,特別了交代我買烏賊(Calamar)和淡菜(Mejillones)。我到轉角那家最熱門的海鮮攤抽號碼牌,要命!老闆們還在應付20多號,我抽到57號!
既來之則安之,我這次決心不轉往另外一家生意冷清但是漁獲較少的攤,坐在店鋪準備的塑膠椅上慢慢等,順便觀察別人買什麼、怎麼切。
輪到我時烏賊已經沒了,買了20顆淡菜外,又忍不住也買了一個鮭魚下巴(這裡叫做耳朵Oreja de Salmón)、剩下的一小塊鮪魚肚(Ventresca)、一打煮米飯的小甜蝦(Gambas Arroceras)、一打可以直接吃的大西洋甜白蝦(Langostinos)🦐
回到家,阿卡一邊煮海鮮飯,我打電話回家,跟胡爸胡媽姐夫隔著電話乾杯,他們爽喝百富威士忌🥃我們喝啤酒🍻連線氣氛超高昂,阿卡說害他也好想喝威士忌啊🤤
掛上電話,換我接手廚房,做了一鍋綠咖哩淡菜、煎了鮪魚肚,搭配海鮮飯吃。這還真的是我們隔離60多天以來,第一次吃海鮮!阿卡說現在每天看到路上一堆人根本在開夏日露天派對,吃蝦子再也沒有罪惡感了啦😂
我回說:拜託!這一打煮飯的蝦子才3歐多、另外那一打也是,其實根本就不是什麼奢侈品好嗎?!
飯後阿卡午睡,我拾起好久不見的彩色鉛筆,把為了下週拍攝工作而送來家中的一堆花裡面,剩下還綻放的花朵畫了下來🎨
晚上8點一起去遛狗,天光還好亮,宣告著西班牙的夏日真的來了!一路上遇到了盛開的茉莉花牆,優雅可愛又芳香,我興奮地拿出相機拍攝。和美麗的花不期而遇,總是帶給我幸運和幸福的感覺🥰

轉回今天,阿卡早上去遛狗時,我把家裡打掃了一番,清灰塵、吸地毯、用漂白水拖地... 隔離這60多天來,曾是懶惰太太的我大變身,打掃的次數可能比過去6年來的總數還要多😜
阿卡回來時我還在拖地,他開始整理明天出門拍攝要帶的器材,我放著童年時會跟胡媽一起聽的老歌:「意難忘」、「痴痴的等」、「情人的眼淚」,再跳到爵士經典老歌「Summer Time」,最後轉回阿卡超愛的美空雲雀「蘋果花」。星期天,猴子聽音樂🐵
午餐除了繼續吃「隔夜吃會更入味的」海鮮飯 (百試不爽),我用阿卡最近熱愛的日式照燒醬、加入也是阿卡最近最愛的魁北克香料、加入我愛的韓國辣豆醬,烤了鮭魚下巴、牛五花肉片,吃得好過癮😋
照樣晚上8點一起去遛狗,走的路線是本週阿卡新發現的大學城一帶,馬路大條、綠意盎然。我們在一個圍起來的草地上,60多天以來首次解開了狗兒子Godzi的繩子讓他跑一跑、玩好久沒得玩的你丟我撿,阿卡竟然給我感動到說他要哭了😭
走著走著,遇見了好久不見的——馬德里最炫目迷人的金黃色夕陽!阿卡帶著狗兒子跑向夕陽,一家三口都覺得好感動,曾經的日常、今日的奢侈🌇
不變的是,我發現自己還是深深地愛著這個城市。謝謝馬德里,給了我們一家三口一個完美的星期天、完美的結尾💛
