前幾天在疫情之後第一次拜訪了這家舊金山知名的早午餐 Mama's On Washington Square
Mama's 真的是舊金山最受歡迎的排隊早午餐餐廳
剛搬來舊金山的時候也來吃過好幾次
最開始的幾年印象每道都很好吃
不過近幾年感覺食物有點縮水
口味好像也有點變化
不過整體份量還是很多。
之前想要吃到 Mama's 都要選大約下午一點多抵達
隊伍會短很多
而且不收信用卡
刷 Debit Card 要收手續費
所以每次都會準備現金。
前幾天來拜訪的時候
在店門口點餐
點完之後發現可以刷信用卡了。
結帳之後拿號碼牌找座位
有兩個戶外區域可以坐
室內後方也有一區座位區。
Latte $4.75
點了一杯拿鐵。
Fresh Squeezed Orange Juice large $5.5
還滿喜歡現榨的柳橙汁。
Washington Square Omelette $17.8
點了一份我最喜歡的口味的歐姆蛋捲
裡面有辣義大利香腸、炒青椒、番茄以及起司
旁邊附上酸麵包以及自製的莓果醬
還有許多香煎馬鈴薯
其實如果沒有很餓兩個人分一份就已經非常滿足了。

Its important to drink 3 liters of water a day. Let’s try this combo
1. Lemon 🍋
- Cut 2 lemons into thin slices and add to a jug of water.
- Add some fresh mint leaves or thin ginger slices (optional)
2. Cucumber 🥒
- Peel and cut it into ½-inch slices and add to a jug of water.
- Immediately add ice cubes to prevent the cucumber slices from floating.
- Allow infusion process to take place overnight in the fridge.
- After drinking the infused water, you can even eat the cucumber slices if you like.
Note: Make sure to consume within a day.
3. Orange 🍊
- Peel and separate the segments and add to a jug of water.
- Add the juice of a lemon and a few mint leaves for added flavor.
- Chill in the fridge for at least 2 hours.
4. Watermelon 🍉 🎶
- Fill a jar with cool water.
- Cut watermelon into thick pieces and remove the seeds.
- Put the watermelon pieces in the jar.
- Add some basil leaves to add an amazing freshness.
- Keep the jar in the refrigerator for 2 to 3 hours.
- After drinking the infused water, you can also snack on the watermelon.
5. Pineapple 🍍
- Add 2 cups of pineapple cut into small pieces into a jug of water.
- Add some fresh, crushed mint leaves.
- Infuse in the fridge for 8 hours or overnight.
6. Green Tea 🍵
- Brew 1 to 2 cups of green tea and allow it to cool.
- Put the green tea in an ice 🧊 cube tray and freeze.
- Pour cool water into a jar and add some mint leaves or thin ginger slices.
- Allow to refrigerator for a couple of hours.
- When you need to drink water, fill ¾ of a glass with water from the jar, 2 cubes of green tea and a little lemon juice to a glass.
7. Blueberries 🫐
- Add 2 cups of slightly crushed blueberries to a jug of water.
- Place in fridge for 30 minutes.
- Strain, add crushed ice and pour this infused water into a tall glass and drink it.
8. Kiwi 🥝
- Peel a fresh kiwi and cut into thin slices.
- Put the slices and a few fresh mint leaves in a jug.
- Fill the jug to one-third of its volume with ice cubes.
- Pour in water to fill the rest of the jug and refrigerate.

■大人のカルーアミルク
1杯分
材料:
テイスティジャパンコーヒーバッグ 1袋
芋焼酎(赤霧島推奨) 30~80ml
塩
黒蜜 9g
牛乳 100ml
作り方
1.コーヒーバッグに、焼酎を注ぎ30分〜1時間常温で抽出する。
2.コーヒーバッグを取り出しておく。(コーヒーバッグは取っておく)
3.グラスの縁を水または牛乳で濡らし、塩でスノースタイルにする。
4.(3)に黒蜜、(2)を加えよく混ぜる。
5.フレンチプレスなどの器具で、冷たい牛乳でフォームミルクを作り、しっかりと泡立てる。
6.(5)のミルクを全量注ぐ。(できるだけ表明が層になるよう)
7.(2)で取っておいたコーヒーバッグを破り、粉を取り出し、表面に振りかけたら、完成!
■シトラス・コーヒー・ソーダ
1杯分
材料:
テイスティジャパンコーヒーバッグ 1袋
水 100ml
みかんのドライフルーツ 30g
砂糖 30g
レモン果汁 半分
ソーダ 40ml
レモンスライス 1枚
氷
作り方:
1.みかん・砂糖・レモン果汁を鍋に入れ、火にかけ、2〜3分煮詰めて冷まし、みかんシロップを作る。粗熱が取れたら冷蔵庫で冷ましておく。
2.コーヒーバッグに水を注ぎ、全体が湿るように馴染ませ、冷蔵で1晩置き、コールドブリューコーヒーを作る。
3. グラスに(1)のみかん果肉3つ、みかんシロップ7g、氷、ソーダの順番で注ぐ。
4. 層になるように静かに(2)のコールドブリュー40mlを注ぐ。
5. スライスレモンをグラスに飾り付けたら、完成!

Coffee arrange recipes
◆Kahlua with milk
Servings: 1 cup
INGREDIENTS
1 Tasty Japan coffee bag
30-80ml sweet potato Shochu
Some salt
9g brown sugar syrup
100ml milk
PREPARATION
1. Pour Shochu over the coffee bag in a bowl. Leave for 30 minutes to 1 hour at room temperature.
2. Remove the coffee bag. Keep the bag for later.
3. Salt the rim of a glass with water or milk.
4. Pour brown sugar syrup and coffee Shochu (2) into the glass. Mix well.
5. Using a French press, froth the milk (cold).
6. Pour the milk (5) into the glass.
7. Break the coffee bag (2) and sprinkle with some coffee on top.
8. Enjoy!
◆Citrus Coffee Soda
Servings: 1 cup
INGREDIENTS
1 Tasty Japan coffee bag
100ml water
30g dried oranges
30g sugar
1/2 lemon juice
40ml soda
1 lemon slice
Some ice
PREPARATION
1. To make orange syrup, heat dried oranges, sugar, and lemon juice in a pot. Simmer for a few minutes. Let cool. Keep it in the refrigerator.
2. To make cold brew coffee, pour water over the coffee bag in a bottle. Leave in the refrigerator overnight.
3. Put 3 pieces of orange (1), orange syrup (7g), ice, and soda in a glass.
4. Pour the cold brew coffee (40ml) into the glass. Try to make a coffee layer.
5. Put a lemon slice.
6. Enjoy!

材料:
エビ 6尾
Aライムジュース 50ml
Aレモンジュース 20m
Aオレンジジュース 20ml(果汁100%のもの)
B玉ねぎ 1/4個
Bトマト 1個
Bきゅうり 1/2個
Bハラペーニョ 1/2個
Bパクチー 適量
塩 小さじ1
コショウ 適量
作り方:
1.エビは頭と殻を取り、背ワタを取り除いて身を6等分に切る。
2. Aを混ぜて(1)のエビを漬け込む。(2時間以上)
3. Bは全てみじん切りにする。トマトは中の種を取り除いてみじん切りに、ハラペーニョはワタとタネを取り除き、特に細かいみじん切りにする。
4.ボウルで(2)と(3)を和え、塩、コショウで味を調え冷蔵庫で1時間程冷やし、味が馴染んだら完成!
■タイ風エビのスイートチリマヨソース
2人分
材料:
エビ 180g
A塩 小さじ1
A片栗粉 大さじ1
Bマヨネーズ 大さじ3
Bスイートチリ 大さじ2
B牛乳 大さじ1
片栗粉 大さじ2
揚げ油 適量
フリルレタス 適量
作り方:
1.エビの下処理をする。エビのしっぽや殻をむき、Aの塩をふって揉み込み3分ほど置き、Aの片栗粉を揉み込んだら水でよく洗い水気を拭き取って、背に包丁で浅く切り込みを入れ背わたを取る。
2.Bをボウルに入れよく混ぜてソースを作る。
3.ビニール袋に片栗粉を入れ、(1)の海老を入れて均等に片栗粉をまぶす。
4.フライパンに揚げ油を熱し(3)をこんがりカリッと揚げ焼き、(2)と和える。
5.洗って水気をきり、ちぎったレタスを器にのせ、(4)を盛り付けて完成!

20ml lemon juice
20ml orange juice

1 tomato
1/2 cucumber

1 to 2 teaspoons salt

PREPARATION
1. Peel and devein the shrimp. Cut into small pieces.
2. Mix all A ingredients in a bowl. Marinate the shrimp in it (for more than 2 hours).
3. Chop all B vegetables.
4. Mix chopped vegetables and the marinated shrimp in a bowl. Season with salt and pepper. Refrigerate for 1 hour.
5. Enjoy!
◆Sweet Chili Mayo Shrimp
Servings: 2
INGREDIENTS
180g shrimp
A
1 teaspoon salt
1 tablespoon potato starch
2 tablespoons potato starch
Some frying oil
B
3 tablespoons mayonnaise
2 tablespoons sweet chili sauce
1 tablespoon milk
Some frillice lettuce
PREPARATION
1. Peel the shrimp and season with salt (A). Leave for a few minutes. Add potato starch (A) to the shrimp. Rinse the shrimp with water and pat-dry with paper towels. Devein the shrimp.
2. Mix well all B ingredients in a bowl.
3. Put the shrimp in a plastic bag. Toss with potato starch to coat the shrimp.
4. Heat frying oil in a pan. Cook the shrimp (3) in the oil until crispy and golden. Mix the fried shrimp with the sauce (2).
5. Place rinsed lettuce leaves on a plate. Put some shrimp.
6. Enjoy!

Hello friends! Today we're going to share with you how to make juicy oven-baked smoked BBQ ribs at home.
Copying and practicing a recipe from a famous restaurant is the most challenging thing, but it is very interesting and we learn new things from it. In this video, we copied the taste of the famous pepper ribs, but made some modifications, because some ingredients are not found in this city. Chili’s slow-cooked pork ribs has been a top seller on the menu since 1986 and is still the best seller today. So this is a must try.
To make smoked flavor BBQ ribs without a smoker, we slow cook in the oven, and make the Chili's BBQ sauce with smokey chipotle in adobo, or it can be made by liquid smoke instead. The flavor is found in the sauce, and the cooking secret is slow-braising which can keep the meat juicy and tender like the original. How to make Oven-Baked Smoked BBQ Ribs
✎ Ingredients
pork ribs 950g
☞ for dry marinades
coarse salt 70g
black pepper 15g
ground white pepper 4g
cayenne pepper 2g
granulated sugar 3.5g
garlic powder 1.5g
onion powder 1.5g
☞ for BBQ sauce
chipotle peppers in adobo 7g
regular soy sauce 32g
tomato paste 70g
ketchup 20g
chicken broth 30g
apple cider vinegar 35g
dark beer 45g
fresh orange juice 87g
minced garlic 10g
chili powder 1.5g
onion powder 5g
salt 3g
black pepper 2.5g
light brown sugar 130g
1. Combine together coarse salt, black pepper, ground white pepper, cayenne pepper, granulated sugar, garlic powder and onion powder, mix well.
2. Line a baking tray with foil or parchment paper.
3. Place the ribs on the baking tray, pat dry the ribs with paper towels on both sides.
4. Using a sharp knife to take off excess fat. Just keep a little fat.
5. Remove the silver skins or whitish dense skin on the bone side of the ribs.
6. Then turn the meatier side facing up, generously season with 1 tablespoon of dry marinades.
7. Cover with another foil, shiny side out.
8. Preheat the oven to 135C, bake for 2.5~3 hours.
9. While the ribs bake, make the barbecue sauce. Add all the sauce ingredients together, using an immersion blender to blend the ingredients until smooth. Pour into a saucepan and cook over medium-low heat for 15-20 minutes, stirring often until thicker.
10. Once baked, remove foil and transfer to a new baking tray and brush ribs with the barbecue sauce on both sides. Let the bone side facing up.
11. Preheat the oven to 220C, bake for 5 minutes, then turn the meatier side facing up and brush a little bit of sauce and bake for 10 minutes or until ribs have been caramelized.
12. Transfer the ribs to a plate or a cutting board, brush with sauce again if needed and serve.
