同Champagne Sanger 嘅總釀酒師Nicholas Robert 會面，試咗6款Sanger香檳， 由無年份一路試到Blanc de Blancs Grand Cru 到 Blanc de Noir 及有年份香檳，重點係飲到多一份薪火相傳，因為呢個香檳莊係由香檳學校教出黎嘅學生釀造嘅，據Nicholas話今天係香檳區有85%釀酒師都係師承由1927年開辦嘅香檳學校Avize Viti Campus ！香檳其實配中菜好夾，尤其係海鮮，我最鍾意係grand Cru 2008年配龍蝦！多謝好友邀請！
Very happy to meet with Nicholas Robert, the Cellar Master of Champagne Sanger. I tried 6 different champagnes from Sanger, starting from Non-vintage Brut to Blanc de Blancs Grand Cru, Blanc de Noir and so on to Vintage ones. The highlight is that apart from elegant champagnes, u can also sip a goodwill of preserving champagne making, as this champagne house is actually a champagne school and the champagne is made by the students under the supervision of cellar master. According to Nicholas, 85% of champagne makers today are graduated from Avize Viti Campus, the champagne school established in 1927! Champagne is a great match with Chinese cuisine, esp seafood, my favorite on the champagne pairing dinner goes to lobster & 2008 grand cru! Thanks my dear friend for her invitation!

Santa Claus Bento
Difficulty: Super Easy
Time: 5 min (to make the rice ball)
Number of servings: 1
Ingredients:
((Santa Claus Onigiri Rice Ball))
cooked white Japanese rice
a pinch of salt
Kanikama (imitation crab stick)
sliced ham
Nori sheet
mayonnaise *if you like
((NO EGG Marmalade Meatballs))
sliced cheese
parsley flakes

Directions:
((Santa Claus Onigiri Rice Ball))
1. Put steamed rice in a bowl. Add a pinch of salt to season it.
2. Use plastic wrap and form the rice into a teardrop shape.
3. Open Kanikama (imitation crab stick) to make a hat. Cut out sliced ham to make his face and nose. Cut out Nori sheet to make his eyes and mouth. Attach them with tweezers. *If you like, you can put some mayonnaise under the Kanikama. It tastes good with rice!
((NO EGG Marmalade Meatballs))
1. Cut out stars from sliced cheese, put on top of the meatballs, and sprinkle with parsley flakes.
