Together with Senior Chef de Cuisine Alex Siah, we created a special Dry Laksa Pasta with Spicy Coconut Espuma Foam that will be available everyday during that period.
Served in a martini glass, the angel hair pasta is first tossed with laksa paste before topping quail egg, fresh prawns, bean sprouts, tau pok and fish cakes. Chef then creatively covered the noodles with some laksa espuma and sprinkled dried shrimp crumble and laksa leaves to finish.
I basically gave my laksa recipe to Chef Alex and he was able to think out of the box and made my laksa so "molecular" lah! We cooked the laksa gravy in the kitchen before sieving it into the siphon bottle. I felt a little nervous while preparing the dish at the buffet counter but it seemed like everyone who tried it gave a thumbs up! One of them even gave us 95/100!
