Transitioning to a vegan lifestyle isn't easy, but every small step matters when it comes to creating a kind, cruelty-free world tomorrow. One of the many ways is by switching to plant-based milk which is refreshing, light, smooth and even comes with subtle natural sweetness that will transform your food and gut health. One of my favorite brands in Malaysia is @austrliasown for its quality and variety, such as coconut, almond, rice and soy. 🌱 It can also easily be incorporated into recipes to keep things nutritious and clean!
Ingredients
4-5 ripe bananas, mashed
2 cups wholemeal flour
1 cup unrefined brown sugar
1 cup chopped walnuts
½ cup chopped dates
½ cup @australiasown organic unsweetened almond milk
½ cup vegetable oil
1 tsp cinnamon powder
1 tsp baking powder
1 tsp baking soda
1 tsp salt
Preheat the oven to 360°F (180°C). In a bowl, combine all the wet ingredients and mix evenly until creamy. Add the dry ingredients (and fold in half of the chopped walnuts and dates) and stir gently just to combine without overmixing the batter. Fill muffin tins with batter and sprinkle with remaining walnuts and dates as topping. Bake in the oven for 25-30 minutes or until a toothpick comes out clean.
These delicious muffins are best enjoyed warm with a glass of chilled @australiasown plant-based milk! 🧁

Tried this recipe out from @onceuponachef last night with my new oven from @brevilleaus.
Omg! You guys! Not joking! It is the best blue berry I have ever tasted! It is golden and crispy on the top but moist and soft inside!
It was my first attempt and I succeeded! Try this easy recipe out! You will be surprised!
【Ingredients】
2 cups all-purpose flour, spooned into measuring cup and leveled-off
2 teaspoons baking powder
3/4 teaspoon salt
1 stick (1/2 cup) unsalted butter, softened
1 cup granulated sugar
2 large eggs
1-1/2 teaspoons vanilla extract
1/4 teaspoon almond extract (I didnt us it)
1/2 cup milk
2-1/4 cups fresh blueberries
2 tablespoons turbinado sugar (also called raw sugar or demerara sugar)
(I dont havt it so I just used white sugar and it tastes so good too!)
Non-stick cooking spray
12 paper muffin liners
【Steps】
1. Preheat the oven to 190 degree or 375 Fand line up the liner on the muffin tin and spray some non-stick cooking spray (I dont have it and I used coconut oil insteasd.)
2. Add all the dry ingredients flour, baking soda and salt into one bowl and mix them well.
3. In another bowl, mix the sugar and room temprature butterfor 2 minutes. Add the eggs one at a time and later on add vanilla extract and almond extract (if you have this) and mix them well.
4. Gradually add the flour mixure to the wet ingrdients bowl from step 3 and alternating with the milk. Beating on the low speed to combines. When the batter become very thick, its ready to mix with the blueberry. Use the spatyla to combine blueberry and the batter. Dont over mix it as you dont wan to squash your little treasure!
5. Scoop the batter evenly to the muffine tin. Sprinkle some turbinado sugar or white sugar on the top. Send them to the preheated oven to bake for 30 mins in 190 degree or 375F.
6. Enjoy the yumm muffins!😋

1st Layer - EDIBLE SAND
Use either graham crackers, wholewheat or digestive biscuits. Simple place the biscuits into a ziplock bag and crush it using a rolling pin or pastel until you get a sand like texture.
2nd layer - MOIST SOIL
3-ingredient Chocolate Mousse (serves 2)
1) 1 packet (300g) Silken Tofu
2) ¼ cup unsweetened Cocoa Powder
3) 2 - 3 tbsps. Maple Syrup or Honey
Blend all the ingredients until smooth. Pour into a bowl and chill in the fridge for 1 – 2 hours or until slightly firm.
3rd layer - DIRT
Chia Chocolate Muffins (makes 6)
1) ¾ cup Oat Flour
2) ¼ cup unsweetened Cocoa Powder
3) 2 tbsps. Nut Butter
4) 1 part of Chia Mixture: 1 tbsp. Chia Seeds + 3 tbsps. Water
5) ½ cup any Milk
6) 2 tbsps. Maple Syrup or Honey
7) 1 tbsp. Coconut Oil
8) ¼ tsp. Baking Soda
Steps
1) Pre-heat oven to 180°C / 350°F
2) In a large bowl, mix in all the dry ingredients, oat flour, cacao powder and baking soda.
3) In another bowl, mix in all the wet ingredients, milk, chia mixture, coconut oil, maple syrup, and nut butter. Stir until well combined.
4) To make the batter, pour the wet mixture into the dry mixture. Stir until you have a thick and consistent batter.
5) Scoop the batter evenly into 6 muffin tins. Bake for about 15 minutes, until the muffins are cooked through.
6) Allow them to cool down to room temperature and just use your hands to break up the chocolate muffins in chunky crumbles.
4th layer - TOPPINGS
1) Crushed Pistachios
2) Chocolate Covered Nuts and Raisins
3) Edible Chocolate Stones
4) Edible Flowers
STEPS
1) Take about ¼ to 1/3 cup of the crushed biscuits to make the "sand" layer. Spread it out evenly.
2) Next it’s the moist soil. Scoop the chocolate mousse and gently layer it on top of the sand.
3) Let’s put some “dirt” on, which will be the chocolate muffin crumble. Use about 1 - 2 muffins.
4) Now that you have all three layers, let’s decorate it! Sprinkle some crushed pistachio to mimic the “grass”. Then arrange the edible rocks and also chocolate covered nuts and raisins. And for the final touch, place your flowers right in the middle.
And there you have it, a healthy edible chocolate terrarium you can make and gift your family and friends. It’s simple, it’s stunning, it’s healthier and hey, YOU made it!
