I made crepes for the first time yesterday, and it was a success! Haha 💪🏼 I made them again this morning, coz the girls wanted to bring them to school. I don’t know why I waited this long to make my own crepes. It’s super easy, like making pancakes - only bigger and thinner. Best part is, you can just dump everything into a blender and whiz away. No whisking needed!

Basic French crepes:
1 1/4 cup milk
3 large eggs
2 tbsp melted butter (cooled)
1 tsp vanilla essence
2 tsp sugar
1 cup all-purpose flour

Add the ingredients into the blender (add flour last). Blend for a few seconds until smooth. Cover the batter and let rest for at least 20 minutes.

You can just use a regular non-stick pan to cook the crepes, if you don’t have a crepe pan. Preheat the pan over medium heat and brush a layer of butter on the pan. Pour about 1/4 cup of batter in the middle of the hot pan and swirl around so that the batter coat the bottom of the pan. Cook the crepes for about 30 seconds, then gently flip over the crepe and cook for a few more seconds. Remove crepe from pan and repeat until the batter is finished. Serve warm with your favourite fillings - sweet or savoury!
