1st meal back to Hong Kong this week, starts with Chef Kiko Moya representing the 2018 Michelin 2* awarded “L'Escaleta” ⭐️⭐️ on the Alicante Coast of Spain, currently cooking at 【SKYE at Park Lane Hotel by Pullman, Hong Kong】. Only available in town for 3 days from 13~15th September, the Dinner Course is HKD $1,500, and the Lunch Course is HKD $650 only.
• We start off our meal with 20g of Sturgeon Kaviari Oscietra Caviar Prestige included, which is currently fetching a remarkable market price of €250 per 100g in Europe. At 20g a serving here per person, this is already €50 worth of pure indulgence alone! Served alongside Cured Egg yolk Shavings & Purée, Cauliflower & Potato purée Espuma.
• Cold Noodles with Rock Shrimps & Acid Contrasts of Tomato Sofrito, Sweet Potato, Saffron Flower vinegar.
• Mustard Hollandaise, Freshly Grown Herbs, Crystallized Sesame
• Fresh Scorpion Fish, Citrus Contrast, Pickled Wakame seaweed, Plankton Oil. The menu mentioned Sea Urchin but it’s actually Urchin oil extraction for pairing with the fish only!
• Smoked Iberian Ham, Black Sesame Praline, Onion Ash & Quince Cheese Membrillo
• Brioche with Yeast Ice Cream Liquid Nitrogen molecular style, Lemon Cream
• Spicy Roasted Pumpkin Juice with Bruleed Top, Iced Almond Cream, Licorice Syrup Gelee
