Pic 1-while soaking. Pic 2 - noodles are ready. Pic 3 - my noodles recommendations if you’re in Holland. How to prepare noodles! Here in Europe we don’t have that advantage of getting fresh noodles easily so the dried ones are the best form of noodles to use as I would recommend for my recipes.
Apart from it’s good as you can keep it long in your kitchen cupboard I also like it as I prefer my noodles to be a bit #aldante but many people still got it wrong how to prepare the dried noodles. All you need to do is bring enough water to the boil then turn the heat off and put in your noodles and leave them fully soaked for 8 minutes only.
Most people still let the heat running and boil them like spaghetti which is wrong. As soon as 8 minutes is up, run the noodles with the cold water right away to kill of the heat from still cooking the noodles. If you want to cook the noodles later then you can pour a splash of vegetable oil to keep them from sticking otherwise you can cook the noodles right away. While soaking the flat rice noodles I will advise to stir with fork or tong as the noodles can easily stick to each other.

Seven Plant Based Summer Somen Noodles (Rainbow Noodles "Miwa no Niji") Recipe
Difficulty: Very Easy

Ingredients:
((Toppings))
grape tomato wedges
cucumber strips
Shiso leaf strips
Naganegi (long onion slices)
Aonegi (chopped green onions)
ginger strips
Arare (rice crackers)
Yukari (red Shiso leaves rice seasoning)
((Somen Dipping Sauce))
* 300ml Dashi broth (using packaged dashi powder saves time)
* 4 tbsp. Mirin (sweet Sake)
* 4 tbsp. soy sauce
((Somen Noodles))
Miwa no Niji (rainbow Somen noodles)
Directions:
((Somen Dipping Sauce))
In a pot, bring Dashi broth, Mirin, and soy sauce to a boil. You can also microwave until it comes to a boil. Cool in the fridge until ready to serve.
((Somen Noodles))
Boil water in a large pot. Add dried Somen noodles in boiling water and gently stir noodles with chopsticks. Cook Somen noodles according to your package (mine was 2 min). Drain the noodles in a strainer and rinse the noodles with hands under running water. Take bite-size portion of the noodles and roll them on your fingers (like you roll pasta on a fork), and place them on a dish. Decorate the noodles with toppings of your choice and keep in the fridge until you serve.
I love using Kayanoya Dashi. Vegan/Vegetarian people can use Kombu or Vegetable Dashi broth for the dipping sauce 👍

You can also dilute Mentsuyu to make Somen dipping sauce but make sure you dilute as instructed because the level of concentration vary from product to product.

Kakiage is Japanese vegetable fritters, sometimes with seafood. Vegetable strips are the main ingredients. Leftover vegetables are okay! Vegan/Vegetarian people can use Kombu Dashi broth for the dipping sauce 👍
Using round aluminum foil molds, you can deep fry the vegetable strips with less batter coated. In this way Kakiage becomes very light and crispy 😋
You can serve it with rice or Udon noodles for example, as a side dish. Or, you can put on top of rice or Udon noodles to make a bowl dish. It is up to you 😉

Light and Crispy Kakiage Tempura (Japanese Vegetable Fritters Recipe)
Difficulty: Easy
Time: 15min
Number of servings: 4 pieces of 8cm (3inch) Kakiage
Ingredients
100g (3.5oz) onion slices
30g (1oz) carrot strips
30g (1oz) whole kernel corn
--Tempura Batter
* 1/2 cup ice-cold water
* 1/2 cup all purpose flour
--Tentsuyu (Tempura dipping sauce)
* 100ml Dashi broth (using packaged dashi powder saves time)
* 2 tbsp. Mirin (sweet Sake)
* 2 tbsp. soy sauce
vegetable oil for deep frying
Directions:
1. Cut aluminum foil about 30cm (12inch) long, fold it into quarters lengthwise. Make a ring then fold the ends together to make 8cm (3inch) circle. (please see the video)
2. Place the cut vegetables in a bowl. Add 1 tbsp. of all purpose flour from Tempura Batter, then coat evenly with your hands.
3. Tempura Batter: Mix ice-cold water and all purpose flour. Make sure to use ice-cold water not to activate the gluten. The batter should be lumpy, do not over-mix.
4. Add the vegetables then toss lightly.
5. Heat 5cm (2inches) of oil in a pan to 170C (340F). Place one or two aluminum foil rings (depending on the size of the pan), then put 1/4 of the vegetables in each ring little by little to form into circles. When the bottoms are cooked, remove the rings, flip them over and cook thoroughly until crisp golden. Then drain well. (Do not deep fry too many at once.)
6. Tentsuyu: In a pan, bring Dashi broth, Mirin, and soy sauce to a boil. You can also microwave until it comes to a boil. **
7. You can eat with salt, with Tentsuyu, or serve on top of rice with Tentsuyu to make Tendon (Tempura rice bowl), etc... it is up to you.
**For tentsuyu, you can use Yamasa's Konbu Tsuyu (3 times concentrated Konbu kelp seaweed soup stock). You just need to dilute it with hot water as directed on the package. This product is very convenient and it is available overseas!

Sukiyaki is traditional and popular Japanese hot pot (nabemono) cooked with thinly sliced beef and some vegetables in soy based broth. It is usually cooked at the table and dipped into beaten fresh raw eggs to eat.

How to Make Beef Sukiyaki Rice Bowl
Difficulty: Easy
Time: 20min
Number of servings: 2 servings
Ingredients:
250g (8.8oz.) thinly sliced beef
150g (5.2oz.) Yaki-Dofu (grilled tofu)
100g (3.5oz.) onion
4 Shiitake mushrooms
150g (5.2oz.) Shirataki (translucent Konnyaku noodles)
a bundle of watercress
1.5 tbsp. cooking oil
Warishita (Sukiyaki sauce) seasonings
* 3 tbsp. Kombu Dashi broth (or water)
* 3 tbsp. Sake
* 3 tbsp. Mirin (sweet Sake)
* 3 tbsp. soy sauce
* 2 tbsp. sugar
2 bowls of rice
Onsentamago (Soft-Boiled Eggs) or hard boiled eggs

Directions:
1. Cut Yaki-Dofu into bite sized pieces. Cut onion into wedges. Remove stems of Shiitake mushrooms and cut into half. Cut watercress into 4cm (1.5inch) long pieces.
2. Boil Shirataki 2-3 minutes in order to remove bad smell if necessary.
3. Mix Warishita (Sukiyaki sauce).
4. Heat cooking oil in a frying pan, cook the onions until tender. Add beef and cook until no longer pink.
5. Pour in Warishita (Sukiyaki sauce), add Yaki-Dofu, Shiitake mushrooms, hard part of watercress, and Shirataki. Cover and cook on medium for 5 minutes until everything is cooked. Add watercress leaves and cook until wilted for 3 minutes.
6. Serve on top of hot bed of rice with Onsentamago (Soft-Boiled Eggs) or hard boiled eggs.
