1) #鮎のコンフィ やわらか蒸し Seasonal Ayu Sweetfish, which is confit treated in an Italian way first 🇮🇹🇯🇵 , then here steam-grilled until even the bones are softened & all edible ¥800. Super sweet flesh and wanted to drink the fish jus too, and Chef made an Italian grinded pesto to go with it. Usually Ayu 鮎 is more Salt Grilled 塩焼き or the tiny ones 稚鮎 Tempura fried. I have also had them in rarer occasions as a Sushi as a #姿寿司 nearer 京都 Kyoto/滋賀 Shiga and it’s also popular in 宮崎 Miyazaki, but they have to be quite fresh for this preparation... One interesting fact about this fish is that it is known to have a Watermelon or Melon-esque taste to it in Summer for the wild ones. That’s mostly because it’s diet feeds on Tade #蓼 plants along the river or lake. But hardly advertised is that the Tade “Persicaria” leaves they eat and give them that unique aroma, is in the same family as a Laksa Mint leaf #叻沙葉 #DaunKesum.. 🌿🌿🍃
2) Summer Truffles Pasta イタリア産サマートリュフのスパゲティ ¥1,850 . I should commend that the Truffles actually had a great aroma, and the Chef here used to work in Italy for culinary training. So lucky to get a spot as this Italian place is always full when strolling past. The menu says spaghetti but I ended up getting linguine pasta. The Wine selections here are also quite local Italian but not always typical, I finally decided to order an Italian Syrah ..
