【特福創意小廚 ‧ 牛油果三文魚飯堡】

飯堡材料:
余仁生優質冬菇 3個
日本米 2杯
植物油 1茶匙
餡料:
三文魚刺身 200克
牛油果 1個
檸檬 1個 (榨汁作牛油果調味)
日本芥辣 適量
三文魚調味:
豉油 半湯匙
味醂 1湯匙
橙 半個 (榨汁)
麻油 1茶匙
芝麻 1茶匙
做法:
1. 用三杯暖水浸冬菇一小時或直至軟身為止。
2. 將冬菇揸乾水份,留起所有冬菇水,之後將冬菇切粒。
3. 選擇煲仔飯功能,落一茶匙油於內鍋。
4. 油熱後,將冬菇炒五至六分鐘直至炒香。
5. 加入冬菇水及日本米。關蓋後按開始,電飯煲會自動煮飯。
6. 煮飯期間,將三文魚切粒,加數滴醬汁撈勻調味,不要下太多以免餡料過濕,牛油果切片。
7. 飯熟後,飯底會有鍋巴效果。取出放於砧板上,以曲奇餅圓模切出兩塊成飯堡。
8. 取出三文魚,置於一塊飯堡上,並伴以牛油果,再放另一塊飯堡,鍋巴向外賣相更佳,即成。

For the rice burger:
3 large Eu Yan Sang shiitake mushrooms
2 cups Japanese rice
1 tsp vegetable oil
For the filling:
200g fresh salmon (sushi grade)
1 avocado
1 lemon (squeeze juice for avocado)
Wasabi
For the salmon seasoning:
1/2 tbsp soy sauce
1 tbsp mirin
juice of 1/2 orange
1 tsp sesame oil
1 tsp sesame seeds
Instructions:
1. Soak the mushrooms in 3 cups of warm water, cover and allow to hydrate for 1 hour.
2. After 1 hour of hydrating, squeeze the excess water out of the mushrooms, keep the mushroom water then chop the mushrooms into small cubes.
3. Select Clay Pot function and place 1 tsp of vegetable oil in the inner pot and allow the rice cooker to to heat up the inner pot.
4. Once hot, then sauté the mushrooms for 5-6 minutes so that they will caramelise.
5. Then add the mushroom water and the dried Japanese rice. Close the lid and press start to allow the rice cooker to automatically cook the rice.
6. While the rice is cooking, chop the salmon into fine cubes, slice the avocado and mix the seasoning for the salmon. Season the salmon with a few drops of seasoning at to make sure you do not make the mixture too wet.
7. When the rice is ready, it should be crispy on the bottom. Place the rice onto a cutting board and cut out circles using a cookie cutter to form the rice burger “buns”.
8. Scoop some salmon mixture onto one circle with the crispy side out and garnish with avocado then use another “bun” to make a burger.

【Ingredients】8 servings
● Cocoa biscuit dough
35g Unsalted butter
40g Granulated sugar
30g Whole egg
100g Cake flour
10g Cocoa powder
●Bread dough
★150g Bread flour
★15g Sugar
★2g Salt
3g Dry yeast
80g Water
20g Whole egg
15g Unsalted butter(room temperature)
Granulated sugar
The best water temperature for the dough: About 15℃-20℃ for spring and autumn. About 10℃ for summer, and about 25℃-30℃ for winter.
【Directions】
Make Biscuit
①Put butter and powdered sugar in a bowl, and stir with a rubber spatula.
②Add egg little by little and mix well.
③Combine the flour, cocoa powder and sift into the mixture.
④ Wrap the dough with cling film, leave it in the fridge for 1 hour.
⑤Biscuit dough divide it into 8pieces.
⑥Roll each out in a circle.
Make Bread dough
①Combine the dry ingredients (★)and mix.
②Add dry yeast, ,water, and Whole egg and Mix.
③Put it on the table and knead. (10mins)
④Add butter and knead more. (5mins)
⑤Make it round, then leave it at a warm place until it gets twice as bigger. (primary fermentation)
⑥Degas the dough from ⑤, divide it into 8 pieces and make them round.
⑦Cover them with a wet cloth and leave them for 10 mins. (bench time)
⑧Again, make them round.
shaping & Baking
①Place one ball of bread dough in centre and cover the bread dough with the cookie dough. Repeat to make 8 buns.
②Coat the Biscuit Dough with granulated sugar and gently score the Biscuit Dough into crisscross pattern
③Place the dough on the baking sheet, seam side on the bottom.
④Let doughrise in warm place until 1.5 times in size.
⑤Bake 374 °F/190℃ 12min.

★強力粉 150g

【作り方】
ビスケットを作る
①ボウルにバターと粉糖を入れてゴムベラで擦り混ぜる。
泡立て器に持ち替えて混ぜる。
②溶き卵を少しずつ加えてよく混ぜる。
③薄力粉とココアをふるい入れて切るように混ぜる。
④生地を棒状にまとめラップにくるんで冷蔵庫で1時間冷やす。
⑤ビスケット生地を8等分する。
⑥ラップで挟んで丸く伸ばしておく。
パン生地を仕込む
①★の材料をボウルに入れて泡立て器で混ぜる。
②中央にイーストを加えて、そこに水、溶き卵を加えて混ぜる。
③テーブルの上などで10分ほどこねる。
④バターを加えてさらにこねる。
⑤丸くしたらボウルに入れて濡れ布巾を被せて2倍の大きさになるまで暖かい場所に置き、発酵させる。
⑥生地を取りだして手で押してガスを抜き、8つに分割して丸める。
⑦濡れ布巾を被せて10分生地を休ませる。
⑧もう一度生地を手で押さえてガスを抜き丸めなおす。
メロンパン成形
①ビスケット生地をラップに乗せたまま、そこの中央にパン生地を
乗せ、ひだを均等に寄せながら包む。
包むときはパンのとじ目は上にしてつるんとした方が生地に隠れるように置いて包む。
②グラニュー糖をまぶしつけたら、カードなどで格子状に切り込みをつける。
③天板の上にオーブンシートを敷き、その上に並べる。
④1.5倍の大きさになるまで暖かいところで発酵させる。
⑤190℃に温めたオーブンで12分焼く。
*メロンパンはビスケット生地が手間がかかるので、前もって生地を作って円に伸ばして、すぐに使える状態にしておきます。

お月見チーズバーガー
2人分
材料:
■パティ
牛ひき肉 200g
塩 小さじ1/3
粗挽きコショウ 小さじ1/3
ナツメグ 少々
サラダ油 大さじ1
■ソース
マヨネーズ 大さじ3
ケチャップ 大さじ1
牛乳 小さじ1
レモン汁 小さじ1/2
にんにく(すりおろし) 小さじ1/2
バンズ 2個
スライスベーコン(ハーフ) 2枚
卵 2個
スライスチーズ(チェダー) 2枚
バター 適量
セルクル(直径8cm) 2個
作り方:
1. ボウルに牛ひき肉、塩、粗挽きコショウ、ナツメグを加え、粘りが出るまでよく捏ねる。
2. 手にサラダ油(分量外)を付けて(1)を2等分し、バンズの大きさよりひと回り大きい円形に成形し、空気を抜いて平らにする。
3. フライパンにサラダ油を引いて中火に熱し、(2)を入れる。フライ返しで表面を軽く押さえながら3分程焼き、焼き目が付いたら裏返し、弱火でさらに4-5分焼く。焼けたら皿に取り出す。
4. (3)のフライパンを再び火にかけ、ベーコンを並べて両面カリッとなるまで焼く。焼けたら皿に取り出す。
5. (4)のフライパンをキッチンペーパーで拭き取り、サラダ油を薄く引く。セルクルの内側にもサラダ油を塗ってフライパンにのせ、卵を割り落として火にかける。
6.白身が固まってきたらフライパンに水(50ml程度)を入れて蓋をしめ、2-3分蒸し焼きにする。
7.ボウルにソースの材料を加えて、よく混ぜ合わせる。
8.バンズの断面にバターを塗り、トースターでカリッとなるまで3分程焼く。
9.皿にバンズをのせ、パティ、スライスチーズ、目玉焼き、ベーコンをのせ、ソースをかけてバンズで挟んだら、完成!

200g ground beef
1/3 teaspoon salt
1/3 teaspoon black pepper
A pinch nutmeg
1 tablespoon vegetable oil
2 eggs
50ml water
2 bacon strips
■Sauce
3 tablespoons mayonaise
1 tablespoon ketchup
1 teaspoon milk
1/2 teaspoon lemon juice
1/2 teaspoon minced garlic
2 hamburger buns
Some butter
2 slices cheddar cheese
2 bottomless cake molds (8cm)
PREPARATION
1. Knead well ground beef, salt, pepper, and nutmeg in a bowl.
2. Apply some vegetable oil on hands. Divide the beef into 2 portions with hands. Shape the meat to form into slightly bigger patties than buns. Make sure to release air.
3. Heat oil coated pan over medium heat, place patties (2). Press down the patties with a spatula and cook until browned on the bottom, about 3 minutes, then flip. Cook the other side for about 5 minutes over low heat. Transfer the patties to a plate.
4. Cook bacon strips on the same pan until crispy. Transfer the bacon to the plate.
5. Remove excess oil from the pan with paper towels, then coat the pan again with some vegetable oil. Coat the cake molds with oil as well. Place the molds on the pan and put eggs in. Turn on the heat.
6. When egg whites are getting set, add water, and simmer for a few minutes with a lid on.
7. Mix all ingredients for sauce in a bowl.
8. Spread butter and toast buns until golden, about 3 minutes.
9. Place buns on a plate and add patties, cheese, eggs and bacon. Put some sauce to complete the burgers.

Shengjian mantou (Wu Chinese: ssanji mhoedhou, also known as the shengjianbao outside the Wu-speaking region) is a type of small, pan-fried baozi (steamed buns) which is a specialty of Shanghai. It is usually filled with pork and gelatin that melts into soup/liquid when cooked. Shengjian mantou has been one of the most common breakfast items in Shanghai since the early 1900s. As a ubiquitous breakfast item, it has a significant place in Shanghainese culture.
In Modern Chinese, a filled bun is usually called baozi or bao, while an unfilled (plain) bun is usually called a mantou. However, in the Jiangnan region where Wu Chinese is spoken, the word mantou" refers to both filled and unfilled buns, as in Middle Chinese. Hence, the shengjian mantou is called a mantou despite being a filled bun. The same is true of the xiaolong mantou, which is often called xiaolongbao in the other varieties of Chinese.
The name shengjian mantou is often abbreviated to shengjian (生煎, shēngjiān).
Shengjian is made from semi-leavened dough, wrapped around pork and gelatin fillings. Chopped green onions and sesame are sprinkled on the buns during the cooking process.The name of the bun comes from its method of cooking. The buns are lined up in an oiled, shallow, flat pan. Typical commercial pans are more than a metre in diameter. The buns are lined up in the pan with the "knot", where the dough is folded together, facing downwards and thus in direct contact with the oiled pan and fried into a crispy bottom during the cooking process. Water is sprayed on the buns during cooking to ensure the top (which is not in contact with the pan or the oil) is properly cooked. After frying, the bottom of the bun becomes crunchy, and the gelatin melts into soup. This combination gives the shengjian its unique flavour. Because the buns are tightly lined up in the pan, they become somewhat cube-shaped after cooking. While waiting to be served, the chef may flip the buns so that the fried base faces upwards to prevent the crispy bottom from getting soggy in the process of cooling.
The traditional shengjian has pork fillings. Common variations include chicken, pork mixed with prawns, and pork mixed with crab meat.
Shengjian is traditionally sold in lots of four (one "tael"). It is usually eaten at breakfast, and can be accompanied by a small bowl of clear soup. The buns themselves can be dipped in Chinkiang vinegar. Because of the method of cooking, especially the relatively hard bottom, the buns are quite durable, and are therefore easily portable. They are often packed in paper bags for take-away consumption.
Some shops or restaurants sell the item throughout the day as a dianxin or snack. It is rarely found as a dish in a main meal.
Yang’s Dumpling: 小杨生煎馆 or xiao yang sheng jian guan – is a popular fried dumpling chain serving pan fried pork buns. Yang’s Sheng jian bao (6¥ for 4) are crunchy on top and filled with pipping hot and delicious soup.
