Spicy noodles with shrimp and kielbasa! 🍜🍤🍖
📝 Ingredients for 1 serving:
• 1 serving of ramen noodle ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀
• kielbasa or sausage of choice
• 4-5 raw shrimp
• 1 uncooked egg
• 2 1/2 cups chicken or vegetable stock
• ¼ cup kimchi juice
• 1 tbsp of each: butter, vegetable oil, sesame oil, chili oil
• 2 tbsp of Korean red pepper powder (gochugaru)
• 1 clove of garlic, diced
• 1 Thai chili pepper diced
• ginger, 1 inch piece, diced
• 3 pieces scallions, chopped
⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀
♨️ Cooking:
• Add butter and olive oil into a pan along with kielbasa slices and shrimp. Shrimp will cook quickly so remember to flip. Sear the kielbasa to your liking, don't forget to flip also. • Add the diced garlic and cook with medium heat until golden brown. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀
• Whisk the uncooked egg for 15 seconds.
• Add garlic and whisked egg to pot. Add stock, kimchi juice, ginger and scallions. Bring to a boil (10-15 mins).
• Cook noodles to your liking.
• Transfer the noodles and broth to the bowl. Top the noodles with shrimp and kielbasa. Drizzle sesame and chili oil and sprinkle some gochugaru and chopped scallions to your taste. Enjoy!

材料
高麗菜 1/2顆(700~800公克) \ cabbage 1/2
辣豆瓣醬 4大匙 \ chili bean sauce 4tbsp.
蒜末 30公克 \ garlic 30g
蔥段 30公克 \ scallion 30g
紹興酒 2大匙 \ Shaoxing wine 2tbsp.
作法
1. 熱鍋,倒入2大匙油。
2. 放入辣豆瓣醬、蒜末、蔥段爆香。
3. 再放入高麗菜炒勻。
4. 加入紹興酒翻炒幾下,蓋上鍋蓋以大火燜約2分鐘。
5. 開蓋加入鹽拌勻即可。
2.蝦醬炒高麗菜
材料
高麗菜 1/2顆(700~800公克) \ cabbage 1/2
辣椒末 30公克 \ chili 30g
蒜末 30公克 \ garlic 30g
蝦醬 2大匙 \ shrimp paste 2tbsp.
米酒 2大匙 \ cooking rice wine 2tbsp.

作法
1. 熱鍋,倒入2大匙油。
2. 放入辣椒末、蒜末爆香,放入蝦醬炒至變香。
3. 再放入高麗菜炒勻。
4. 加入米酒翻炒幾下,蓋上鍋蓋以大火燜約2分鐘。
5. 開蓋加入鹽拌勻即可。
3.高麗菜煎蛋
材料:
基礎蛋液 1份 liquid egg with salt
高麗菜絲 200g cabbage
蔥花 40g scallion
櫻花蝦 30g dried sergestid shrimp
作法:
1.將高麗菜洗淨之後切成絲,蔥切成蔥花。
2.把作法1的材料、櫻花蝦倒入基礎蛋液中,攪拌均勻。
3.電烤盤調成中火,於平盤上倒入少許油,再將蛋液舀入平盤上,用鏟子整平,蓋上蓋子,煎約3分鐘,可掀蓋看週邊的蛋液已變白並起泡,用鏟子切成四等分並翻面,煎至兩面金黃即可。

材料:
蛋 8顆 egg
鹽 1/2茶匙 salt 1/2tsp
作法:
1.將蛋打入容器,加入鹽攪拌均勻即是基礎蛋液。
4.高麗菜蛋餅
材料
中筋麵粉 60公克 plain flour 120g
水 60公克 water 120g
雞蛋 4顆 egg 8pcs
高麗菜絲 適量 cabbage q.s.
鹽 1/2茶匙 salt 1/2tsp.
作法
1. 中筋麵粉、雞蛋、水混合均勻。
2. 加入高麗菜絲拌勻成蛋糊。
3. 轉中弱火熱煎盤,倒入1大匙沙拉油,再倒入一層蛋糊。
4. 待麵糊煎至略成形,鋪上沾了麵糊的高麗菜絲。
5. 蓋上鍋蓋燜煎約6分鐘至高麗菜絲變軟。
6. 將蛋餅折三摺後起鍋,淋上醬油膏即可。
5.炸蛋高麗菜餅
還可以半煎炸! 蛋酥菜脆
多加點油口感大不同!
作法
1. 轉中弱火熱煎盤,倒入稍多的沙拉油,放入加了高麗菜絲的蛋糊。
2. 煎炸至兩面金黃微焦即可。
6.高麗菜大拌菜
材料
高麗菜絲 300公克/ cabbage 300g
蒜末 20公克/garlic 20g
辣椒 20公克/ chili pepper 20g
蔥絲 20公克/ scallion 20g
烏醋 30公克/ black rice vinegar 30g
帶皮花生 100公克/ peanuts 100g
調味料:
細砂糖 1大匙/sugar 1tbsp.
鹽 1/2茶匙/salt 1/2tsp.
香油 1大匙/ sesame oil 1tbsp.
作法:
1. 高麗菜用調理機切絲,放入冰水中,浸泡1分鐘,再瀝乾水份備用。
2. 將高麗菜絲放入保鮮盒中,再放入其餘材料、所有調味料。
3. 蓋上盒蓋搖勻即可。
7.胡麻醬高麗菜絲
材料
高麗菜絲 300公克/ cabbage 300g
紫洋蔥絲 適量/ red onion
調味料:
白芝麻醬 120公克/ sesame paste 120g
美奶滋 150公克/ mayonnaise 150g
醬油 60公克/ soy sauce 60g
芥末籽醬 30公克/ dijion mustard 30g
涼開水 150公克/water 150g
蒜仁 30公克/garlic 30g
細糖 2大匙/sugar 2tbsp.
作法:
1. 高麗菜用調理機切絲,放入冰水中,浸泡1分鐘,再瀝乾水份備用。
2. 所有調味料材料用調理機打勻成胡麻醬。
3. 高麗菜絲上擺上適量紫洋蔥絲,淋上胡麻醬即可。
8.高麗菜飯
材料:
高麗菜絲350公克 cabbage 350g
豬瘦肉絲200公克 shredded pork 200g
紅蔥頭末30公克 shallot 30g

泡發香菇絲5朵 soaking dried shiitake 5pcs
米4杯 raw rice 4cup
水4杯 water 4cup
油2大匙 oil 2tbsp.
調味料:
醬油1大匙 soy sauce 1tbsp.
米酒1大匙 cooking rice wine 1tbsp.
鹽1茶匙 salt 1tsp
糖1/2茶匙 sugar 1/2tsp
白胡椒粉1/4茶匙 ground white pepper 1/4tsp
香油1茶匙 sesame oil 1tsp
作法:
1.米洗淨瀝乾。
2.設定「爆炒煎烤」10分鐘,待鍋熱後,倒入油、紅蔥頭末,半煎炸至金黃。
3.放入蝦米、香菇絲炒香。放入肉絲炒至變色。
4.加入所有調味料炒勻,再放入高麗菜絲炒勻。
5.加入洗好的米,與炒料略拌勻,再倒入4杯水(稍微蓋過食材)。
6.蓋上鍋蓋,鎖上壓力鎖,設定「快煮米飯」,運轉至行程結束即可。
9.高麗菜五花捲
材料
高麗菜絲 適量 cabbage q.s.
五花肉片 適量 pork belly q.s.
鹽 適量 salt q.s.
黑胡椒粉 適量 black pepper powder q.s.
米酒 1大匙 cooking rice wine 1tbsp.
七味粉 適量 schichimi togarashi q.s.
作法
1. 取五花肉片攤開,放上高麗菜絲,再將五花肉片捲起。
2. 將高麗菜五花肉放在煎鍋中,以中火煎至兩面變色。
3. 加入鹽、黑胡椒粉與米酒調味。
4. 再煎至且肉片熟透且上色,再撒上七味粉提味即可。

Creamy Salted Egg Yolk Calamari (Squid/Sotong) Recipe 咸蛋奶油苏东
Ingredients:
Serves 4 pax

140g (4.93 oz) calamari - cut into rings
3 salted egg yolk - raw (use egg white of 1 salted egg to marinate the calamari. Steam all egg yolks)
Some cornflour (cornstarch)
30g butter
3 cloves garlic - chopped
2 sprigs of curry leaves (you can use 0.5 tsp of curry powder or dried curry leaves)
3 bird eye chilli - chopped (optional)
300ml (10.14 fl oz) evaporated milk (Carnation milk)
1 tsp salt
0.5 tsp sugar
