很多人因為工作忙碌,或者爭取時間休息,午餐都但求果腹求其吃,你最常吃的速食午餐是甚麼?如果常吃沙律等生冷食物,長久下來就會損傷脾胃, 出現無胃口、腹脹、經常容易疲倦等脾胃虛弱的問題也是由此而來。來看看從中醫角度點評常見的速食午餐,從中挑選比較健康的選擇吧。
茶餐廳常餐 — 熱食的常餐比生冷食物暖胃,但火腿、午餐肉等醃製食物不宜多吃。奶茶、咖啡如果有奶,都會比較滋膩,會加重濕熱症狀,改喝檸茶/檸水比較好。
沙律 — 未經煮熟的沙律菜屬生冷食物,經常進食生冷,會損傷脾胃,選擇暖沙律比較好。
三文治/漢堡包 — 放在雪櫃的三文治屬生冷食物,放到室溫才吃更好;漢堡包多肉多醬汁,算是重口味食物,多吃會加重脾胃負擔。
墨西哥卷 — 室溫享用不算是生冷食物,而且食材營養比較均衡。
飯糰 — 米飯可養脾氣是健康之選,宜用微波爐翻熱至微暖享用。
杯麵 — 雖然是熱食但脂肪、熱量和鈉質含量都偏高,屬肥甘厚味食物,不宜多吃,放在櫃內以備不時之需好了。

People with a hectic lifestyle prefer resting to spending time on lunch. Hence, they would opt for a quick lunch. What would be your choice? Constantly eating raw and cold food such as salad can hurt the spleen and stomach, which can lead to appetite loss, abdominal bloating, and fatigue. These problems are associated with weakness in the spleen and stomach.
From the perspective of Chinese Medicine, how healthy are these quick lunch options? The explanations below can help you choose healthier meals.
Set meals in cha chaan teng - Warm food generally can warm the stomach more than raw and cold food can, but it is best to avoid cured meat such as ham and luncheon meat. Milk tea or coffee that comes with milk are often thick and greasy, and they can worsen damp heat symptoms in the body. Consider drinking lemon tea / water instead.
Salad – Uncooked vegetables in salads are raw and cold food. Eating it regularly can hurt the spleen and stomach. Warm salad would be a better choice.
Sandwich/hamburger – Sandwiches stored in the refrigerator are a type of raw and cold foods. Do consume them at room temperature; hamburgers are rich in meat and sauce, hence they are heavily flavored food. Excessive consumption of hamburgers can increase burden to the spleen and stomach.
Taco – As long as we eat taco at room temperature, then it is not a raw and cold food. The nutrients in its ingredients make taco a more balanced diet.
Onigiri – Rice nourishes the spleen and qi, hence it is a healthy choice. Before eating, it is good to warm it up in the microwave oven.
Cup noodles – Though it is warm, cup noodles are high in fat, calories, and sodium. It is also a type of fat and sweet foods. We can store it for emergency but should not consume it regularly.

【材料】
●素麺:200g
●みりん:大さじ2
●醤油:大さじ2
●丸鶏がらスープ:小さじ2
●創味シャンタン:小さじ1(ウェイパーでもOK)
●砂糖:小さじ1(ラカントとかにすればより糖質が抑えられます)
●豆板醤:小さじ1(コチュジャンでもOK)
●かつお粉:小さじ1~小さじ2
●鶏油もしくはごま油:お好み量
●水:約350ml(お湯と水合わせた量)
●お好みでブラックペッパー、ホワイトペッパー、小葱、ラー油
※味の濃さは350ml足した後に味見してからお好みに調整して下さい。
※辛みが苦手な方は豆板醤を味噌に変えてもOK
※鶏油は温度が低いと固まってしまうのでスープを冷蔵保存する場合や氷で冷やす場合は食べる直前にかけて下さい。(冷蔵で約1か月保存可能です)

時間がある場合は鶏ハム(サラダチキン)や鶏油も是非作ってみてね!
[Ingredients]
● Somen noodles: 200g
● Mirin: 2 tablespoons
● Soy sauce: 2 tablespoons
● Chicken broth: 2 teaspoons
● SOMI shantung: 1 teaspoon (you can also use Weipa)
● Sugar: 1 teaspoon (you can use lakanto to reduce the sugar content)
● Dou ban jiang: 1 teaspoon (gochujang is also okay)
● Bonito powder: 1 to 2 teaspoons
● Chicken oil or sesame oil: as desired
● Water: About 350ml (hot and cold water combined)
● Black pepper, white pepper, small green onion, Ra-yu to taste
※Taste after adding 350ml and adjust the taste to your liking.
※If you don't like the spiciness, you can replace Dou ban jiang with miso.
※Chicken oil hardens at low temperatures, so if you refrigerate it, pour it over the soup just before eating. (It can be refrigerated for about a month)

It has a deep flavor and richness that you can't believe it was made in just 3 minutes, yet it's super light, healthy, and the most addictive soup that you can eat every day and never get tired of.
This is a recipe that I am proud to recommend to everyone who has tried it, and I have been told many times that they have never had such a delicious somen dish♪
It tastes great with just the soup and somen, and of course it tastes great with Chinese noodles too.
It's too easy to make, so please give it a try.
It's really as good as a ramen restaurant♪
It's so amazingly good that it's almost like a drink lol

เกี๊ยวหมูไส้แน่นเต็มคำ เสิร์ฟมาในน้ำซุปที่มีกลิ่นอายสไตล์ญี่ปุ่นด้วยรสชาติของน้ำซุปดาชิและรากบัว
เนื้อหมูบด 150 กรัม
เบกกิงโซดา ¼ ช้อนชา
แป้งข้าวโพด 2 ช้อนชา
โชยุ 2 ช้อนชา
น้ำตาลทราย 1 ช้อนชา
พริกไทยป่น ปรุงรส
แผ่นแป้งเกี๊ยว สำหรับห่อ
น้ำสะอาด 1 ลิตร
ชิโรดาชิ 160 มิลลิลิตร
รากบัว (ซอย) 150 กรัม
ต้นกระเทียม (ซอย) 1 ต้น
1. นำเนื้อหมูบดที่แช่เย็นจัด มาบดสับกับเบกกิงโซดา แป้งข้าวโพด โชยุ น้ำตาลทราย และพริกไทย ให้เนื้อเนียนดี ตักไส้ใส่ลงตรงกลางแผ่นแป้งเกี๊ยว ห่อให้แน่นดี
2. ต้มน้ำให้เดือดดี ลดไฟไม่ให้เดือดพล่าน นำเกี๊ยวลงไปต้มให้สุกดี พักไว้
3. นำน้ำสะอาด ชิโรดาชิ รากบัว ต้นกระเทียม ใส่ลงในหม้อ ต้มจนผักสุกดี
4. ตักเกี๊ยวใส่ชามเสิร์ฟ และราดเกี๊ยวด้วยน้ำซุป
Wonton Soup with Lotus Root
This wonton soup need not to be the appetizer, but worth dish unto itself with a plump wonton and
thick slices of lotus root.
Minced Pork 150 g
Baking Soda ¼ tsp
Corn Starch 2 tsp
Shoyu 2 tsp
Sugar 1 tsp
White Pepper
Wonton Sheet for wrapping
Water 1 l
Shiro Dashi 160 ml
Lotus Root 150 g
Leek (sliced) 1
1. Place cold minced pork into food processer. Add baking soda, corn starch, shoyu, sugar and sugar. Blend well. Place a tablespoon sized portion of filling onto the wonton and wrap.
2. Bring water to the simmer, poach wonton until cooked through and set aside.
3. In another pot, combine water, shiro dashi, lotus root and leek. Bring broth to a boil, cook until lotus roots are cooked with a slight crunch.
4. To serve, add wontons to the bowl and pour the broth in.

Cold Cucumber Soba
Difficulty: Easy
Time: 30min
Number of servings: 3 servings
Ingredients:
3 bundles of dried Soba noodles
2 Japanese cucumbers
210g (7.5oz.) thinly sliced pork (for Shabu-Shabu)
10 Shiso (Ooba) leaves
1 tbsp. sesame seeds
* 90ml Mentsuyu (Concentrated Soup Base) https://amzn.to/2ZeEzSu
* 1.5 tbsp. vinegar
* 1 tbsp. sesame oil
* you can add more of your favorite condiments to spice up to your taste
grape tomatoes to garnish
Directions:
1. Cut cucumbers and Shiso leaves into thin strips then cool in the fridge until you use.
2. In a boiling water, put the pork slices and cook until no longer pink. Then drain well with a strainer.
3. Mix Mentsuyu, vinegar, and sesame oil to make the sauce. You can add more of your favorite condiments to spice up to your taste.
4. Cook Soba noodles according to your package. Drain, rinse several times in cold running water, cool in ice water, and drain well.
5. Put Soba noodles in a large bowl. Add cucumber strips, Shiso leaf strips, Shabu-Shabu-pork, sesame seeds, and more of your favorite vegetables and condiments if you like.
6. Serve in a dish, garnish with grape tomatoes, and pour some sauce to eat.
