Vietnamese Cold Vermicelli🍜Homemade Vietnamese Dipping Sauce😋Goes Well with Roast Pork Knuckle!
Vietnamese cold vermicelli with roasted pork knuckle
Ingredients: (servings for 2)
Vietnamese cold vermicelli 1 catty
Carrot 1 No.
Cucumber 1 log
Cabbage 1 No.
Chili 2 Nos.
Garlic 4 Nos.
Shallots 1 No.
Seasoning:
Fish sauce
Rock sugar
White vinegar
Steps:
1. Vietnamese cold vermicelli, put in a big bowl. Boil up a pot of water. Pour into the bowl. Stir the vermicelli with a pair of chopsticks. Rinse with tap water. Hang dry. Put it into the bowl again. Pour cold boiled~up water into the bowl. Hang dry.
2. Prepare the sauce for vermicelli:
a. Chili, get it diced.
b. Garlics, squash and diced.
c. Shallots, chop well.
To be put in the same bowl.
3. Add seasoning into the bowl:
a. Fish sauce 1 tbsp
b. White vinegar 2~3 tbsp
c. Water 3 tbsp
d. Rock sugar syrup 3~4 tbsp
Mix well. Taste it. Put in refrigerator.
4. The vermicelli, has been hung dry already. Put in the bowl.
5. Carrot, get it peeled, then shred, put on top of vermicelli.
6. Cucumber, get it peeled, then shred, put on top of vermicelli.
7. Cabbage, get it shredded, put on top of vermicelli.
Lemon lime is to be added into the sauce. If you have no lemon lime, just use lemon juice instead.
Serve with roasted pork knuckle.

小心減磅不成易傷身
網上瘋傳GM Diet減肥方法(美國通用汽車公司General Motors為員工研發的減肥餐單),號稱不用做運動,單靠調節飲食,一星期已可達到減磅效果,所以稱為「奇蹟食譜」,究竟神奇之處在哪裡?又是否人人適合?讓我們從中醫角度來拆解!
GM Diet食譜
第1日:只吃水果,例如蘋果、橙、西瓜、奇異果,但不包括香蕉,配合8至12杯清水。
第2日:只吃蔬菜,例如沙律、青瓜、椰菜花、薯仔、番薯等,配合8至12杯清水。
第3日:只吃水果及蔬菜,但不能吃薯仔,配合8至12杯清水。
第4日:只吃香蕉和牛奶,一天可吃8至10條香蕉和4杯牛奶,配合8至12杯清水。
第5日:食用指定份量的雞/牛/魚肉及6個番茄,配合12至15杯清水。
第6日:食用指定份量的雞/牛/魚肉及蔬菜,配合8至12杯清水。
第7日:只吃糙米及蔬菜,飲用果汁幫助身體排毒。
每天飲用奇蹟湯:由椰菜、紅蘿蔔、洋蔥、番茄、青椒、檸檬、橄欖油及水等煲成。
可以看到GM Diet以蔬菜及水果作為主要食物,短期內攝取大量纖維及水份,有助促進腸胃蠕動,增加排便,而所謂「奇蹟湯」近似手術前清腸胃湯,在手術一星期前開始飲用,以作清腸胃之用。由於湯只用蔬菜煲成,如果屬於濕熱體質,適量飲用有助紓緩濕熱情況;但如果氣血虛弱或陽虛體質人士,多喝此湯會進一步耗傷氣血,出現頭暈、疲倦乏力、心悸、怕冷等症狀。此減肥食譜並不適合每天使用,並要按體質應用, 適可而止。如有疑問,記得諮詢醫生、營養師或註冊中醫師意見。

The GM Diet, which General Motors designed to help its employees lose weight, has been widely circulated on the Internet. The diet claims to be able to help individuals shed some pounds in just a week without the need to exercise. This is why certain people would regard the GM Diet as a ‘wonder diet’. Is it truly that miraculous? Is it suitable for everyone? Let us examine the diet from the Chinese Medicine perspective and crack the code!
The GM Diet
Day 1: Have any fruits you like (except bananas), such as apples, oranges, watermelon, kiwi. Drink 8 to 12 glasses of water.
Day 2: Eat until you are stuffed with all fresh, raw or cooked vegetables of your choice, such as salads, cucumber, cauliflower, and sweet potato. Drink 8 to 12 cups of water.
Day 3: Eat any fruits and vegetables (except potatoes). Drink 8 to 12 glasses of water.
Day 4: Bananas and skim milk only. Maximum 8 bananas and 4 glasses of skim milk, along with 8 to 12 cups of water.
Day 5: Specified amounts of chicken/beef/fish and up to 6 tomatoes. Drink 12 to 15 glasses of water.
Day 6: Specified amounts of chicken/beef/fish and vegetables. Drink 8 to 12 glasses of water.
Day 7: Brown rice, unsweetened fruit juices and vegetables. The fruit juice helps with detoxification.
Accompanied with daily miracle soup: Made with cabbage, carrot, onion, tomato, green bell pepper, lemon and olive oil.
The GM Diet relies on vegetables and fruits, which are high in fibers. Consuming a large amount of fibers and water within a short period can help promote the bowel movement. This so-called miracle soup is similar to the soup patients would drink a week before their surgery to clear their intestines and stomach.
Individuals with the heat-dampness body condition can benefit from the soup, as it is made from vegetables. However, it is not suitable for individuals with qi and blood or with the yang deficiency, as it would hurt qi and blood, and can cause dizziness, fatigue, palpitation, as well as aversion to cold.
This weight-loss plan is not suitable for daily consumption, should only be used when you have fully understood your body condition. Remember to consult doctors, nutritionists or licensed Chinese medicine practitioners if you have any doubts.

Bahan-bahan:
v 1/4 ekor ayam..(dipotong kecil)
v 3 ekor sotong..(dipotong bulat)
v 6 ekor udang besar...
v 3 batang serai..(dititik)
v 2 ulas bawang putih (ketuk)
v ½ bawang besar (potong)
v 6 helai daun limau purut...(dikoyakkan sedikit)
v 1cm lengkuas...(dihiris)
v 3 bawang kuning/ bawang kuning...(dibelah 4)
v 5 biji cili api..(dititik sedikit)
v 1 biji tomato (belah 4)
v Carrot sedikit
v Cendawan tiram sedikit
v Bunga kobis sedikit
v beberapa sudu perahan jus dari 4 biji limau nipis(mengikut selera masing2)
v Garam,gula,serbuk perasa.
Cara membuat:
v Masukkan air 8 cawan, ayam, bawang putih, bawang besar, bawang holland, serai, lengkuas dan cili api ke dalam periuk. - Rebus semuanya hingga mendidih.
v Setelah agak2 ayam masak..(lebih kurang 5-7minit)
v Masukkan sotong, udang dan daun limau purut...
v Selepas itu masukkan semua sayuran.
v Setelah mendidih...masukkan garam dan serbuk perasa...
v Tutup api & masukkan perahan limau...sedia dihidangkan...

วิธีทำแกงส้มแป๊ะซะปลากะพง Hot and Sour Curry with Fish
1. โขลกพริกแกงส้มกับเนื้อปลาที่ต้มสุกแล้ว เข้าด้วยกัน เติมกะปิและเกลือ โขลกให้เข้ากัน พักไว้
2. หลังจากทำความสะอาดปลาแล้ว หั่นเป็นแว่น หรือทอดทั้งตัวตามชอบ แล้วนำไปชุบแป้งทอดกรอบให้ทั่วทั้งชิ้น
3. ตั้งกระทะใส่น้ำมัน พอน้ำมันเดือดแล้วจึงนำปลาลงไปทอดให้เหลืองกรอบ แล้วพักไว้
4. ตั้งหม้อใส่น้ำสะอาด ต้มให้เดือด จากนั้นนำเครื่องแกงที่โขลกแล้วใส่ลงไป คนให้เครื่องแกงแตกตัวดีแล้วปรุงรส ด้วยน้ำปลา น้ำมะขามเปียก น้ำตาลปี๊บ ต้มจนส่วนผสมทุกอย่างงวดเข้ากันดีแล้วจึงเติมผักลงไป
5. ใส่ผักที่สุกยากลงไปก่อน เช่นยอดมะพร้าวอ่อน แครอท เมื่อผักเริ่มสลดแล้ว จึงใส่ผักที่สุกง่ายตามลงไป เช่นยอดกระเฉด ผักกาดขาว และดอกแค ตักราดลงบนปลา พร้อมเสิร์ฟ
