星期一9/3/20將在Lintas隆重开张的”鍋味”食家,憑着3位年轻人把日本料理並渗入中式风味的美食,用料相当讲究,他们都一律採用日本珍珠米,上等拉面和乌冬面等炒出一盤盤的招牌如海鲜拉面,烤鸡乌冬面,鲜虾蛋炒饭和鹵牛肉蛋炒饭。其它的招牌还有日式咖喱鸡饭,煎饼和饺子。所有的酱汁都是自家调配的。餐后别忘了来一杯他们特调的清新水果饮料。📣 开张当天还有30%优惠。
Monday 9/3/20 is the official opening of “WokTaste” at Lintas...they specialize in Japanese cuisine combine with Chinese style, and insist to use Japan premium rice, ramen and udon to serve with their signatures like fried ramen with prawn, fried udon with grilled chicken, egg fried rice with prawn and black fried rice with braised beef. Others chef recommendation including chicken curry rice bowl, okonomiyaki and gyoza chicken. All their sauces are in house recipe. Don’t forget to have a glass of their refreshing fruity soda drink after meal. 📣There is 30% discount for all food and drink during the official opening day.

•Wagyu Gyoza was ok decent, but I heard the WagyuMafia Omakase meal version is much juicier, also Mashi no Mashi side doesn’t give you their Chilli 🌶 Wagyusco to pair with gyozas..

•Wagyu Tsukemen 和牛のつけ麺, the dipping sauce carries some more beef & 背脂 fat, but interesting I thought it didn’t have enough Beefiness taste, but more Fish powder taste. When compared to "Tokyo’s Mensho SF Wagyu ramen" , which in the past also did Collaborations with WagyuMafia Tokyo, the latter is just mesmerizingly balanced & intriguing in every component. 2ndly I think this was part of reason why WagyuMafia group didn’t open Ramen shop in Tokyo but only Hong Kong side, and a Tsukemen not Soup Ramen too... since there will be conflicts of interest with your collab partner. But end of the day, I honestly think a Rare Wagyu meat works better in a warm soupy Ramen, or on Warm rice than as a Tsukemen, due to the serving temperature of the meat alone, which should be served below Melting temperature by the time it reaches your mouth... 😊 *In other words, the Beef is served too raw for this particular recipe for me.

Hakata Oden(for 4 ~ 6 servings)
1800 ml dashi
90 ml soy sauce
90 ml mirin
Gyoza maki,Beef tendon
your favorite Oden ingredients
Dashi(1800ml)
20 g kombu
50 g thick cut mixed fish flakes
10 g thin cut bonito flakes
2000 ml water
Niku Gyoza(16 pieces)
150 g ground pork
80 g cabbage
1 clove garlic
small piece ginger
1/2 tsp soy sauce
1/2 tsp oyster sauce
1/4 tsp salt
some Ichimi Togarashi
Fish paste
450 g cod fish
8.4 g salt
1 egg white
1 tbsp sake
2 tbsp potato starch

Tasty yet delicious! Salty sweet flavor of the filling is very addictive. You eat with special sesame sauce. I asked my mom to make this very often when I was small. This gyoza is pretty unique and might be new to you but truly delicious 😉

Chive Dumplings
Difficulty: Easy
Time: 30min
Number of servings: 25 pieces using 3inch Gyoza wrappers
Ingredients:
25 (3inch) Gyoza wrappers
2 bundles (200g/7oz.) Chinese chive
200g (7oz.) onion
150g (5.3oz.) ground beef and pork mixture
1 tbsp. sesame oil
1 tbsp. sugar
salt and pepper
cooking oil
Special sesame sauce:
* 2 tbsp. soy sauce
* 3 tbsp. rice vinegar
* 2 tbsp. ground white sesame seeds
* 1 tbsp. sesame oil
* Karashi (Japanese mustard) if you like
Directions:
1. Chop Chinese chive and onion.
2. Heat cooking oil in a frying pan and saute the onion until soft. Add the ground meat then cook until no longer pink.
3. Mix in sugar to make it tasty. Add the chopped Chinese chive and cook until soft, then season with salt and pepper. Mix in sesame oil and leave to cool.
4. Meanwhile make the sesame sauce.
5. Place the filling in the center of Gyoza wrapper. Put water along the edge of the wrapper by fingers, fold into semi circle, gather the front side of the wrapper and seal.
6. Heat cooking oil if you are NOT using a non-stick pan. Place Gyoza and cook on high heat until the bottoms become brown. Turn the heat down to medium, add 50ml water (or about 1/3 of their hight), cover and steam the gyoza on med-high heat until the water is almost gone. Uncover and cook on high heat until the water is gone and crisp.
7. Dip in the special sesame sauce to eat.
