-Ketam🦀
-1 Batang Serai (saya blend sekali dgn bwg)
-10 keping Daun limau purut
-Daun Ketumbar
-Cili api (saya tak guna pun)
-Bawang Merah blend
-Bawang Putih blend
-Halia blend
-Asam Keping
-2 Sudu Serbuk Kari
-3 Sudu Cili Giling
-2 Sudu Cili Thai (saya guna kiub tomyam maggi)
-Gula & Garam sedikit
Cara Memasak :-
-Rebus ketam
-Air rebusan ketam jangan buang, sebab nak diguna sebagai kuah nanti
-Panaskan minyak
-Masukkan bahan blend dan serai hingga naik bau
-Masukkan cili giling dan kari hingga pecah minyak, kemudian Paste cili thai.
-Dah pecah minyak masukkan Air rebusan ketam tadi ikut suka byk mana
-Masukkan asam keping, gula dan garam.
-Masukkan ketam, daun ketumbar dan daun limau purut.
-Dah mendidih, tutup api dan tutup periuk, biar bau dan rasa masakan tadi sebati

Lai Yee's Kitchen - Lala cooks Lala again. Asam Pedas Lala this time!
I had my second dose of the vaccine 3 days ago. Since then I have been feeling tired and slightly feverish. I still love my cooking eventhough I felt lousy today. I just want something quick and easy for today. So I looked into my spice storage, found some packs of paste from @kantanfood . When I saw the Asam Pedas Paste, I knew I could try with the lala/clams I bought recently.
It turns out to be so fast, easy and yummy. I didn't have any appetite so this was helping me quite a lot.
Asam pedas is a Maritime Southeast Asian sour and spicy fish stew dish. Asam pedas comes from West Sumatra, Indonesia. The main ingredients in asam pedas are usually freshwater fish or prawn. They are cooked in asam (tamarind) fruit juice with chilli and spices.
I have added basil leaves, spring onions, cut garlic, onions and ginger. I did not need to add any other spices or seasoning. So senang! So far, I have tried most of their pastes, I must say they are pretty good.

Rendang Ayam Cili Api Minang, Hantu Makanan Pedas Wajib Cuba Resepi Ni!

Resepi Rendang Ayam Cili Api Minang
Bahan-bahan
1 ekor ayam
2 biji bawang merah
4 ulas bawang kecil
7-8 ulas bawang putih
2 inci kunyit hidup
2 inci lengkuas
3 inci halia
4 batang serai
10 tangkai cili padi hijau
5 sb pes cili
5 helai daun limau purut
2 helai daun kunyit (dihiris)
1 cwn minyak masak
50 gm kerisik
250 ml santan
50 ml air
garam (secukup rasa)
1 keping asam keping
Cara memasak
1. Kisar halus bawang putih, bawang besar, bawang kecil, cili padi hijau, lengkuas, serai, halia, kunyit bersama minyak dan sedikit air.
2. Tuangkan bahan kisar ke dalam kuali dan tumis sehingga naik bau.
3. Kemudian, tambahkan pes cili dan masak sehingga pecah minyak.
4. Masukkan daun limau purut dan hirisan daun kunyit. Kacau seketika.
5. Masukkan sekeping asam keping.
6. Seterusnya, masukkan ayam. Biarkan mereneh dan ayam masak sepenuhnya.
7. Akhir sekali, masukkan kerisik dan santan. Kacau sebati dan masak sehingga kuah kelihatan sedikit kering.
8. Angkat dan hidangkan Rendang Ayam Cili Api Minang bersama nasi impit atau lemang.

Rendang Ayam Minang Recipe
Ingredients
1 whole chicken
2 whole shallots
4 whole onion
7-8 cloves garlic
2 inch turmeric
2 inch galangal
2 inch ginger
4 stalk of lemongrass
10 stalk green bird's eye chili
5 tbsp of chili paste
5 kaffir lime leaves
2 turmeric leaves (thinly sliced)
250 ml coconut milk
1 cup of cooking oil
50 gm toasted coconut paste aka kerisik
50 ml water
salt (to taste)
1 dried tamarind slice
Cooking methods
1. Finely blend garlic, onions, shallots, green bird's eye chili, galangal, lemongrass, ginger, with oil and a little bit of water.
2. Pour the blended ingredients into a pan and stir-fry until fragrant.
3. Then, add chili paste and cook until the oil begins to separate.
4. Add in kaffir lime leaves and sliced turmeric leaves. Stir well.
5. Add in dried tamarind slice.
6. Next, add the chicken. Bring to simmer until the chicken is fully cooked.
7. Finally, add in toasted coconut paste and coconut milk. Stir well until everything is combined and the gravy becomes a bit dry.
8. Remove from heat and serve Rendang Ayam Minang with Nasi Impit or Lemang.

Bahan-bahan (Sup Pedas)
1 biji bawang merah
3 ulas bawang putih
1 pkt pes asam pedas
3 sb pes tomyam
3 sb gula
2 sb serbuk stok ayam
1.5 ml air
1/2 batang lobak merah
1 batang saderi
2 cwn air
Bahan-bahan (Oden)
mee udon
brokoli
cendawan enoki
sosej
bebola ikan
bebola ketam
kek ikan
Cara memasak
1. Dengan menggunakan lidi sate, cucukkan kesemua bebola dan brokoli pada lidi.
2. Kisar halus bawang merah, bawang putih, lobak merah dan batang saderi bersama dua cawan air.
3. Tuangkan bahan kisar tadi ke dalam periuk dan masak sehingga mendidih.
4. Masukkan pes tomyam dan pes asam pedas.
5. Kacau seketika. Perisakan dengan gula serta serbuk stok ayam.
6. Tuangkan air dan masak lagi sehingga air menggelegak. Kemudian, masukkan bahan-bahan oden.
7. Masak seketika dan Oden Viral dan Sup Pedas Ala-Ala Jepun siap untuk dihidangkan.

Japanese-Style Oden & Spicy Soup Recipe
Ingredients (Spicy Soup)
1 whole red onion
3 cloves garlic
1 packet asam pedas paste
3 tbsp of tom yam paste
3 tbsp of sugar
2 tbsp of chicken stock powder
1.5 ml water
1/2 carrot
1 stick celery
2 cups of water
Ingredients (Oden)
udon noodles
broccoli
enoki mushroom
sausage
fish ball
crab ball
fish cake
Cooking methods
1. Using skewers, slide all the balls and broccoli onto stick.
2. Finely blend the red onion, garlic, carrots, and celery with two cups of water.
3. Pour ground ingredients into a pot and cook until simmering.
4. Add in tom yam paste and asam pedas paste.
5. Stir well and season with sugar and chicken stock powder.
6. Pour in water and cook until bubbling. Then, add in oden main ingredients.
7. Cook for awhile and Japanese-Style Oden & Spicy Soup is ready to be served.

Sambal Ikan Bilis | Sambal Anchovies

Bahan-Bahan Kisar
1/4 cwn ikan bilis (dikisar)
4 biji bawang merah (dikisar)
3 ulas bawang putih (dikisar)
1/2 cawan air
200gm ikan bilis
2 helai daun pandan (diikat)
2 keping asam keping
160gm cili kisar
2 ketul gula melaka (saiz kecil)
1 ketul kiub ikan bilis
1 1/2 sk garam
1 biji bawang Holland (hiris)
Minyak masak
Nota:
Asam keping juga boleh digantikan dengan air asam jawa.
Boleh tambahkan jumlah cili kisar sekiranya anda menggemari sambal yang lebih pedas.
Cara memasak
1. Kisarkan bawang merah, bawang putih dan sedikit ikan bilis sehingga semuanya lumat sebati.
2. Panaskan minyak dan gorengkan ikan bilis sehingga bertukar rangup dan warna menjadi keperangan.
3. Setelah itu, panaskan sedikit minyak di dalam kuali dan tumiskan bahan kisar sehingga warna bertukar sedikit perang.
4. Masukkan pula daun pandan dan tumiskan sehingga naik bau.
5. Tambahkan asam keping ke dalam kuali.
6. Kemudian, masukkan pula cili kisar dan tumiskan ia sehingga pecah minyak.
7. Masukkan gula melaka dan gaulkannya sehingga semuanya larut.
8. Setelah sambal pecah minyak, masukkan ikan bilis yang telah digoreng tadi dan gaulkannya sehingga sebati.
9. Masukkan pula hirisan bawang holland ke dalam sambal dan gaulkan.
10. Sambal ikan bilis sedia untuk dihidang.

1/4 cup anchovies (blended)
4 red onion (blended)
3 cloves of garlic (blended)
1/2 cup of water
200gm anchovies
2 pieces of pandan leaves (knotted)
2 pcs of tamarind slices
160gm of blended chili
2 pcs of palm sugar (small size)
1 pcs of anchovies stock cube
1 1/2 tsp of salt
1 Holland onion (sliced)
Cooking oil
Note:
Tamarind slice can be replaced with tamarind paste.
If you like it more spicy, you can add more blended chili.
Cooking methods
1. Blend onion, garlic and anchovies until it mix well.
2. Heat oil in pan and fry the anchovies until it become crunchy and the color turns into golden brown.
3. Then, heat oil in pan and saute' the blended ingredients until the color turns golden brown.
4. Add pandan leaves and saute' until fragrant.
5. Add tamarind slices into pan.
6. Next, add blended chili and stir fry it until the oil separates.
7. Add palm sugar and mix it until all dissolved.
8. Once it is done, add fried anchovies and mix it thoroughly.
9. Add sliced Holland onion into sambal and mix it well.
10. Sambal anchovies is ready to be served.
