【材料】(保存期間:冷蔵で約3日)
●長ねぎ:3本
●九条ネギ:1本
●胡麻油
[悪魔のタレ]
●醤油:150~180ml(お好みの濃さに調整してみてね)
●みりん:150ml
●酒:150ml
●あごだし(4倍濃縮):大さじ1(めんつゆ。白だしでもOK)
●鶏ガラスープの素:大さじ1
●豆板醤:小さじ2(コチュジャンでもOK)
●酢:大さじ1
●砂糖:大さじ1(ラカントとかにするとより糖質を抑えられます)
●ニンニク:2片
●生姜:ニンニクと同量
●唐辛子:2本
●干し椎茸:2個
●胡麻油:大さじ2
●炒り胡麻:お好み量
お好みでラー油、一味唐辛子、花椒
※もっと辛いのがお好みの方は唐辛子やコチュジャンを足してもOK
※辛いのが苦手な方はコチュジャンを普通の味噌にしても美味しいですよ♪
※野菜の種類や入れる量によっても味の濃さは微妙に変わるので味見をしながら決めて下さい。
※お酢の酸味を残したい場合は粗熱をとってる時に入れてあげるといいですよ♪
※今回は一度漬け用なので二度漬けはしないで下さい。

今回は前回ビックリするほど大好評だった悪魔のタレシリーズの第2弾
悪魔のシャキシャキ葱を作りました。
これがあるとどんな食べ物でもワンランクアップしたやみつきな味わいになります♪
色んな旨味が複雑に合わさったピリ辛で後引く味は
まさに悪魔的旨さ!!食べれば食べるほどハマる…抜群のやみつき度合いです♪
ラーメンはもちろん、今回食べていたメンマや豆腐なんかにも合いますし
炒飯の付け合わせ、餃子のタレ、茹でた鶏肉や豚肉、サラダに合わせても最高に美味しい
超万能なネギになってます。
動画でもお伝えしてますが生のネギにはアリシンなどの免疫力をアップさせてくれたり
アンチエイジングの効果や疲労回復の効果があると言われている栄養が
豊富に含まれているので栄養を逃さないよう美味しく食べて欲しいです。
糖質制限されている方にも勿論オススメになってますよ♪
今回は漬ける必要もなくただ和えるだけ!!!
しかも今回は葱専用にタレの種類や配合も少し変更してます。
本当に簡単過ぎるくらい簡単なので是非作ってみて下さい。
【Ingredients】(Preservation period: about 3 days refrigerated)
● Leek: 3
● Scallion: 1
● Sesame oil
[Devil's sauce]
● Soy sauce: 150~180ml (Adjust the thickness to your liking)
● Mirin: 150ml
● Sake: 150ml
● Fish stock(4 times concentrated): 1 tablespoon (Men-tsuyu, or white soup stock is OK)
● Chicken soup stock: 1 tablespoon
● Dou ban jiang (or gochujang): 2 teaspoons
● Vinegar: 1 tablespoon
● Sugar: 1 tablespoon (If you use LACANTS or something, you can reduce the sugar content)
● Garlic: 2 cloves
● Ginger: same amount as garlic
● Chili peppers: 2
● Dried shiitake mushrooms: 2
● Sesame oil: 2 tablespoons
● Roasted sesame seeds: as desired
Cayenne pepper, Chili pepper, Ra-yu to taste
※ If you like it hotter, you can add more chili pepper or gochujang.
※ If you don't like spicy food, you can use regular miso instead of gochujang ♪
※ The intensity of the flavor will vary slightly depending on the type and amount of vegetables you add, so taste and decide.
※ If you want to keep the sourness of the vinegar, you can add it when you are removing it from the heat.
※ This is for one-time pickling, so don't do it twice.

材料:
紫椰菜半個
蒜頭4粒
調味料:
鮑魚汁1湯匙
生抽半湯匙
糖1茶匙
處理:
1. 椰菜,切幼絲或幼條。
2. 浸水2分鐘。
3. 撕開一條條,擎乾水。
4. 切碎蒜頭。
烹調:
1. 開大火,放1湯匙油落鑊。
2. 爆香蒜蓉。
3. 放椰菜落鑊。
4. 收中慢火,冚蓋焗軟椰菜2分鐘。
5. 轉大火,放所有調味料落鑊,再加入1茶匙豉油,炒勻,上碟。
Fry cabbage with garlic sauce:
Ingredients:
Purple cabbage 1/2 No.
Garlics 4 Nos.
Seasoning:
Abalone sauce 1 tbsp
Light soya 1/2 tbsp
sauce
Sugar 1 tsp
Preparation:
1. Slice the cabbage.
2. Soak in water for 2 minutes.
3. Separate the cabbage slice by slice, hang dry.
4. Mince the garlics.
Steps:
1. Heat up 1 tbsp oil at high flame in wok.
2. Fry garlic sauce.
3. Put cabbage into wok.
4. Turn to medium~low flame, put the lid on wok for 2 minutes.
5. Turn to high flame, fry well with all seasonings, and 1 tsp light soya sauce. Serve.

蟲草花蒸雞脾:
材料:
急凍雞脾(大)2隻
雪耳2個
蟲草花1兩
薑1舊
乾蔥頭4粒
處理:
1. 雞脾,清水解凍。
2. 雪耳,清水浸軟。
3. 雞脾解凍後,倒乾淨水分,用粗鹽乸10分鐘,去除雪味、腥味及加入鹹味。
4. 雞脾揸出血水,洗乾淨,擎乾水。
5. 薑刮去皮,洗乾淨。
6. 乾蔥頭,切去兩端,去皮洗乾淨。
7. 乾蔥頭,1開2,拍一拍。
8. 薑,切薄片。
9. 可以加2條臘腸。
10. 臘腸用大滾水浸1分鐘,斜刀切一片片。
11. 雪耳切細舊。
12. 雞脾,廚紙索乾,除去雞皮,切一舊舊。
13. 雞脾調味:
a. 胡椒粉少許,攪勻。
b. 玫瑰露酒1湯匙,攪勻。
c. 放臘腸、薑、乾蔥頭及雪耳。
d. 加入調味料:
●生粉3湯匙
●糖2茶匙
●生抽2湯匙
●鮑魚汁2湯匙
攪勻,醃15分鐘以上。
14. 洗淨蟲草花,揸乾水。
15. 放雞件上碟,蟲草花鋪上面。
烹調:
1. 煲滾1鑊大滾水。
2. 放雞落鑊。
3. 大火蒸25分鐘。
4. 蒸了12分鐘,撥鬆雞件,會更容易蒸熟。
5. 加入滾水。
6. 已蒸了30分鐘,熄火,完成。

Ingredients:
Frozen chicken legs (large) 2 Nos.
Snow fungus 2 Nos.
Cordyceps flower 1 tael
Ginger 1 No.
Shallots 4 Nos.
Preparation:
1. Chicken legs, defrost with tap water.
2. Soften snow fungus with tap water.
3. Chicken legs have been defrosted. Pour away water. Season with cooking salt for 10 minutes to remove the unpleasant smells and tastes and add some salty taste.
4. Squeeze the blood from chicken legs. Rinse thoroughly and hang dry.
5. Peel the ginger. Then rinse.
6. Shallots, cut both ends, peel and rinse.
7. Shallots, cut one into 2 shares.
8. Ginger, thinly slice.
9. Chinese sausages can be put.
10. Soak Chinese sausages into boiled up water for 1 minute, and get them sliced.
11. Snow fungus. Cut into small pieces.
12. Chicken legs. Dry with kitchen towel. Remove its skin and fat, cut into pieces.
13. Season chicken legs:

●light soya sauce 2 tbsp
●abalone sauce 2 tbsp
Mix well, season for 15 minutes or more.
14. Rinse cordyceps flowers, then squeeze.
15. Put chicken on plate. Put cordyceps flowers on top.
Steps:
1. Boil up a pot of water.
2. Put chicken in wok.
3. Steam at high flame for 25 minutes.
4. Have already steamed for 12 minutes. Stir the chicken in order to make it easy to cook well.
5. Add boiled up water.
6. Have already steamed for 30 minutes. Turn off fire. Serve.
