在這道「意大利拉麵」中，Chef Antimo 自制Tagliolini 細寬麵，al dente之餘掛湯力也強，再配上松露潰糖心蛋、慢烤雞和厚切黑松露片。松露香氣淡麗為拉麵增添不少個性。此外還要特別讚賞清雞湯底，為拉麵設好舒服溫柔的基調。

In this “Italian Ramen” creation by chef Antimo, he homemade the al dente tagliolini, pair with truffle cured egg, slow roasted chicken and thick cuts of truffle. I am amazed by how the truffle and crystal clear chicken consommé set the tone of the dish in an elegant fashion.
