🌟 Kiwami Wagyu 9+ Sirloin, Dry Aged 45 Days in "Duck 🦆 Fat".
Similar to the above Fried Chicken Confit, which also had a duck fat treatment. This comparing with the Beef Dry Aged on its own Wagyu Fat at @silenciohk recently. Interesting comparisons! The veggies radish & roasted potatoes here were executed very well, this u have to give credit to.

一心找地方喝酒,來這裡才發現轉了廚師,大發現。
大廚Sato San原籍東京,因為曾在澳洲留學及在新加坡工作,操流利英語。只是三十出頭的他雖然年輕,曾任新加坡米芝蓮一星推介的JAAN副廚,來頭是不簡單。吃什麼也不需要多想,就交給大廚發辦好了。
這裡每晚有幾個任飲90分鐘的酒牌,當中「銅」的選擇就是任飲90分鐘清酒。據知清酒晚晚不盡相同,是晚的就是天の戶吟泉純米酒。口感圓滑而香味、甜味及酒度都很平衡,感覺上是跟不少菜式及味道也配搭得不錯的清酒。
年青的大廚Sato San在菜式的構思及實行做得很好,配搭也有心思。8道菜的Tasting Menu每位索價$978,加上每位$200的清酒任飲,划算也是吃得盡興的一夜。
