過年知道大家都好想我較蒸糕,今次教大家椰汁年糕,我依個版本同傳統有小小唔同, 想知點整就記得睇了,記得交功課呀😁

椰汁年糕
材料:
📌糯米粉225克
📌沾米粉37克
📌澄麵30克
📌片糖200克大约2片多小小(要弄碎些比较容易煮得溶)
📌水210克
📌椰奶120毫升
📌oil 30克
📌錫纸盆掃上油
📌鍚紙一張
📌紅棗一粒
做法:
1. 先用小火在210g 水中煮溶所有
片糖後, 待涼
2. 將三種麵粉全部一起過篩, 並可
混合在一起備用
3. 將(1)的糖水過篩, 如未涼攪幾下
来降温後才加入椰奶
4. 將(2)的麵粉中間整個洞, 將糖水
分多次慢慢加入及每次攪匀了再
加入另一次
5. 加油入粉漿内可用手動打蛋器或
攪拌機攪至粉漿平滑直至没有粉
粒
6. 讓攪匀的粉漿静止20分鐘(可以
幫助麵粉吸入水份)
7. 將粉漿再次撹匀,然後再過篩倒
入蒸盆, 蓋上錫紙
8. 用蒸爐100度蒸1至1.5小時視乎
粉漿厚度. 如用明火蒸, 大火滾
起後, 用中大火蒸. 注意⚠️不要
太猛火否則容易會有洞在年糕面
蒸完加一粒紅棗在中間, 完成!

Simplified Coconut Chinese New Year Cake (“Nian Gao”)
Flour Ingredients:
Glutinous rice flour - 225g
Wheat starch (“Teng Mein”) - 30g (or replace with cornflour)
Rice flour - 37g
These flours combination will not give you a sticky and hard texture. It will be soft, bouncy, and chewy the next day instead of hard and sticky.
If you wish the make the traditional version, just omit the wheat starch (“Teng Mein”) and rice flour from the recipe and the rest remain the same.
Sweetener ingredient:
Chinese dark brown sugar - 200g or about 2 slabs (break into small pieces so they melt faster)
Liquid ingredients:
Water - 210g
Coconut milk - 120g (for more intense coconut flavor you can use coconut cream)
Oil - 30g or about 2 ½ tbsp
Garnish ingredient:
Chinese red date
Other utensils:
Sifter
Spatula
Whisk
Stand mixer – optional
Balloon whisk - optional
Oiled steam proof pan for steaming
Toothpick
Foil paper or plate to cover the pan
Methods:
1. In a large mixing bowl, you MUST SIFT the glutinous flour, rice flour, wheat starch (“Teng Mein”) into the bowl and mix well. Make a hole in the center. Set aside. This is your flour mixture.
2. In a cooking pot, add in Chinese dark brown sugar pieces, water, and turn on LOW heat to melt the sugar. DO NOT use high heat because it will evaporate the water.
3. Once it starts to boil, TURN OFF the heat and keep stirring to speed up the melting process.
4. Pour the melted sugar through a sifter into a large bowl to make sure there are no hard lumps of sugar left and MUST let it stand to cool to room temperature before mixing with other ingredients. Keep stirring to speed up the cooling process.
5. Once it is almost cool, add in the coconut milk. Mix well. This is your liquid mixture.
6. Add ONLY about ¼ of a cup of the liquid mixture into the well of the flour mixture prepared in Step 1.
7. Mix well with a spatula until all the liquid is absorbed into the flour. Continue with the rest of the liquid mixture by adding about ¼ cup at a time into the flour mixture and mix well before adding the next ¼ cup of liquid mixture. Be patience. **DO NOT add all the liquid into the flour at once.**
8. Once all liquid mixture has been mixed in with the flour, give a final good mix with a whisk and making sure there is no dry flour left.
9. Add the oil and continue mixing with a whisk until the oil is well incorporated into the batter or you can use an electric stand mixer, attached with a balloon whisk, and mix until you get a smooth batter about 1 minute or so on low speed.
10. Leave the batter in the mixing bowl and let it sit and rest for about 20 minutes. This step is VERY IMPORTANT to let the flour absorbs all the liquid and moisture for even flavor and a better tasting cake. This step also replaces the traditional way of laborious kneading of the batter.
11. Preheat the steam oven to 100C (212F).
12. After 20 minutes, mix the batter again with a spatula because flour will fall to the bottom of the bowl again after a waiting period.
13. You MUST SIFT the batter again into a bowl. This will make sure you get a smooth cake after.
14. Pour the batter into an oiled steam proof pan. Flatten any bubbles on the top surface with a toothpick. Cover the pan with a foil paper or plate to prevent condensation drippings.
15. Steam for 1 hour to 1 ½ hour depending on the thickness of your batter in the pan. Prefer to over steam instead of under steam.
DO NOT steam on high heat to prevent bubbles formed on the top surface of your cake when done.
16. The cake is done when you stick a bamboo stick into the center of the cake and comes out clean.
17. Garnish with a red date by placing it in the center of the cake.

𝑴𝒆𝒓𝒓𝒚 𝑪𝒉𝒓𝒊𝒔𝒕𝒎𝒂𝒔🎄✨
🔸材料(2-3人份)🔸
1. 西班牙米 3杯(約240毫升)
2. 大蝦 6條
3. 大青口 6隻
4. 魷魚 1條
5. 蕃茄 2個
6. 迷你小紅黃椒 3粒
7. 洋蔥 1/4個
8. 西班牙臘腸Chorizo 50克
🔸調味料🔸
1. 水 30毫升
2. 牛油 8-10克
3. 大蒜 2-3瓣
4. 雞汁 10毫升
5. 魚露 10毫升
6. 鹽 1茶匙
7. 甜椒粉 Paprika 1-2茶匙
8. 白酒 50毫升
9. 番紅花 1撮(可用3-4茶匙薑黃粉代替)
10. 香葉 3片
🔸伴碟🔸
1. 檸檬
2. 蕃茜
🔸做法🔸
1. 把一撮番紅花和香葉泡水。
2. 海鮮洗淨,蝦眼蝦刺蝦腳蝦尾剪掉,挑走蝦腸。需要吐沙的貝類海鮮請提前準備。
3. 魷魚處理乾淨後切圈。
4. 海鮮瀝乾水後用鹽和胡椒醃好備用。
5. 蔬菜及米洗淨,蔬菜切粒並瀝水待用。蕃茄上下𠝹十字,用熱水焗幾分鐘然後去皮。
6. 把番紅花和香葉水用小火加熱。出現水泡後關火。稍稍待涼後加入甜椒粉、雞汁、魚露、牛油拌勻成為已調味的番紅花水。
7. 下油開鍋。
8. 加入蝦頭煎香,同時用工具按壓蝦頭擠壓蝦膏和蝦汁,大約煎5分鐘。
9. 加入洋葱和蒜蓉煎香及煎至金黃色帶點焦糖化。
10. 加入白酒煎香。
11. 把蝦頭放入篩內,用力把蝦汁和白酒按壓出來。
12. 加入西班牙臘腸碎煎香。
13. 再把蝦頭按壓多一次出蝦汁。
14. 加入蕃茄和紅黃椒粒炒香,這時候蔬菜會出水,成為高湯。
15. 加入已調味的番紅花水拌勻。
16. 加入米,輕輕拌勻。這時米和水應該剛好拌成濕米,用工具撥開米的時候不見有任何水跡。
17. 熄火,鋪上海鮮及香葉並合上蓋子。按照以下焗爐/ 爐頭版繼續加熱。

1. 放入已預熱的焗爐用180度焗30分鐘。
2. 最後加上香草和檸檬伴碟。
🔹爐頭版🔹
1. 小火加熱20分鐘,熄火焗10分鐘。
2. 最後加上香草和檸檬伴碟。
🔹小TIPS🔹
1. 薑黃粉是番紅花的替代品,味道相近。
2. 懷孕的女生不能吃番紅花。
3. 如果有蘑菇及貝類海鮮,本身水份高,可以不用額外加水。米:水=1:1.2。
4. 如果用蝦/魚高湯代替水,再加月桂葉和番紅花煮會更佳。

4. Chicken essence sauce 10 ml

6. Salt 1 teaspoon

8. White Wine Chardonnay 50 ml
9. Saffron 0.5-1 teaspoon
10. Bay leaves 3 pieces
🔸Garnish🔸
1. Lemon

🔸Steps🔸
1. Soak saffron and bay leaves in water.
2. Clean and devein the prawns. Peel it if necessary.
3. Clean the squid and cut into round pieces.
4. Sautee the seafood with salt and pepper.
5. Clean the veggie and rice if necessary and set aside. Cut the top and bottom of tomato and soak in hot water before peeling the skins.
6. Chop the chorizos into pieces.
7. Heat the saffron and bay leaves water in low heat. Turn it off when there is water bubbles. Add paprika, chicken essence sauce, fish sauce and butter inside after cooling down.
8. Heat the pan with oil.
9. Fry the prawns head around 5 minutes and squeeze the prawns head juice with tools.
10. Fry the onions and garlic into golden color.
11. Add white wine.
12. Squeeze the prawns head in the sieve for the last time.
13. Fry the chorizos.
14. Fry the tomatoes and mini peppers until the veggie juice mix with the sauce.
15. Add the seasoned saffron and bay leaves water.
16. Add the rice and stir it evenly with the sauce lightly. The rice and the sauce are well mixed together and there is no water on the pan when you stir the rice.
17. Turn off the fire, put the seafood and bay leaves on the rice. Cover it with the lid.
18. Cook it with oven or cast iron pot.

Preheat the oven at 180‘C and bake with 30 minutes.
🔹Cast iron pot🔹
Cook the paella in low heat for 20 minutes. Turn it off and leave it for 10 minutes.
19. Garnish with herbs and lemon and then you are ready to serve your guests 😀

●創味シャンタン:小さじ1/2~1(ウェイパー、コンソメでも美味しいよ♪)
●マヨネーズ:大さじ1
●炭酸水:70㏄(冷水でも大丈夫だけど炭酸水だとサクサク感と軽やかさが出ます)
●ガーリックパウダー(無くてもOK♪):小さじ1
●薄めの味付けにした場合はお好みで黒コショウ、塩、ケチャップ、マヨネーズもオススメ
※衣の味付けは薄めがお好みの方は小さじ1/2、しっかりめがお好み方は小さじ1入れて下さい。
※しっかりした衣がお好みの方は最初に片栗粉をまぶす時しっかりめに!薄めの衣がお好みの方は少なめにして下さい。

●最初に卵と冷えてる炭酸水、あれば氷を入れて混ぜる。上に残った泡はすくってあげる

味の付いたサクサクのやみつき衣がとにかく美味しくて
ほのかなピーマンの苦みも超たまらないんです。
今回大きめのピーマン6個で作りましたがマジ秒で無くなりましたw
ピーマンの苦手なお子さんもきっと喜んでくれると思いますし
薄衣なので糖質制限されている方にもオススメだと思います。
今回は出来るだけ簡単に、少ない油で誰でも気軽に作れるよう
特製の味付け衣に付けて焼くだけ(揚げ焼き)というレシピにしてみました。
とっても簡単ですが秒で無くなる最高のピーマン料理になってます。
余った衣は他の野菜で作っても超美味しいですよ♪
是非作ってみて下さい。
[Ingredients]
● Green pepper: 6 pieces
● Potato starch (for dusting first)
● Rice oil (You can use regular oil, but rice oil will be lighter ♪)
● Batter
● Potato starch: 3 tablespoons
● Flour: 3 tablespoons
● 1 egg
● SOMI shantung (Weipa or consommé is also good): 1/2 to 1 teaspoon
● Mayonnaise: 1 tablespoon
● Soda water: 70 cc (cold water will also work, but soda water will
give it a crispy and light texture ♪)
● Garlic powder: 1 teaspoon (fine without it ♪)
● Black pepper, salt, ketchup, and mayonnaise are also recommended if
you prefer a lighter seasoning.
※ If you like your batter lightly seasoned, add 1/2 teaspoon; if you
like it firm, add 1 teaspoon.

● Add the eggs, cold soda water, and ice if you have it. Scoop up any

● Do not overmix after adding the flour. It's okay if there are a few

I used 6 large bell peppers this time, and they were gone in seconds!

Resepi Milo Rice Bar Berbadam
Bahan-bahan
90 gm mentega
1 cawan serbuk Milo
120 gm marshmallow
100 gm bertih beras
15 gm susu pekat
30 gm badam (dihancurkan)
100 gm coklat putih
2 sb minyak jagung
50 gm coklat susu coin
Cara memasak
1. Cairkan mentega pada suhu sederhana. Kemudian, masukkan susu pekat dan kacau sebati.
2. Tambahkan serbuk Milo dan teruskan mengacau sehingga sebati.
3. Masukkan pula marshmallow dan kacaunya hingga cair.
4. Kemudian, masukkan bertih beras dan badam yang telah dihancurkan.
5. Kacau seketika dan tuangkan campuran tersebut ke dalam loyang empat segi yang telah dialas baking paper. Tekan sedikit supaya campuran menjadi padat dan biarkan seketika.
6. Seterusnya, cairkan coklat putih di dalam microwave selama 30 saat. Keluarkan dan tambahkan minyak jagung. Kacau seketika dan masukkan semula ke dalam microwave sehingga semuanya larut.
7. Tuangkan coklat putih ke atas permukaan rice bar yang telah set. Selepas itu, taburkan kepingan badam di atas. Biarkan coklat putih set sepenuhnya.
8. Cairkan pula coklat susu coin sehingga larut dan corakkan di atas permukaan coklat putih menggunakan piping bag. Biarkan set di dalam peti ais.
9. Keluarkan Milo Rice Bar daripada loyang dan potong mengikut saiz kesukaan masing-masing.
10. Milo Rice Bar Berbadam siap untuk dihidangkan.

Almond Milo Rice Bar Recipe
Ingredients
90 gm butter
1 cup of Milo powder
120 gm marshmallows
100 gm rice bubbles
15 gm condensed milk
30 gm almonds
100 gm white chocolate
2 tbsp corn oil
50 gm milk chocolate coins
Cooking methods
1. Melt butter over low heat. Then, put in condensed milk and stir well.
2. Add Milo powder and keep stirring until all combine.
3. Then, add marshmallow and stir until nicely melted.
4. Put in rice bubbles and almond chunks.
5. Keep stirring until well combined and pour the mixture into a square mold that has been layered with baking paper. Press down the mixture till flat and let them set aside.
6. After that, melt white chocolate in the microwave for 30 seconds. Take them out and add corn oil. Stir well and reheat in the microwave until everything is dissolved.
7. Pour the white chocolate on top of the rice bar and let them set. Then, sprinkle some almond flakes on top.
8. Next, melt the milk chocolate coins and drizzle them on top of the white chocolate layer. Chill in the fridge for a while.
9. Once set, take out the Milo rice bar and cut it into the desired sizes.
10. Crunchy Almond Milo Rice Bar is ready to be served.

懷舊小食 - 炸蕃薯餅 Hong Kong Street Food - Fried Sweet Potatoes
Ingredients:
Sweet potatoes --------- 300 g
Beaten egg ---------------- 1/2 pcs
Flour -------------------------- 60 g
Rice flour ------------------- 30 g
Baking powder ---------- 1/2 tsp
Ice water ------------------- 50 ml
Coconut milk ------------- 30 ml
Sugar ------------------------- 3 Tbsp

Preparation:
1. Beat the egg until bubbles are formed.
2. Prepare a mixing bowl. Sieve the flour and rice flour in it.
3. Add baking powder, sugar, salt, beaten egg, ice water and coconut milk. Mix well to become batter.
4. Coat the sweet potatoes slices with batter and deep fried.

【懷舊小食 - 炸蕃薯餅】
材料:-
蕃薯/地瓜(切片)............2個 (300g)
蛋液(打發至起泡).........1/2隻
麵粉...............................60g
粘米粉...........................30g
泡打粉/發粉...................1/2茶匙
冰水...............................50ml
椰漿/椰奶.......................30ml
糖...................................3湯匙
鹽...................................少許
做法:-
1. 蛋液打發至稍為起泡備用。
2. 麵粉、米粉過篩,加入泡打粉、糖、鹽、蛋液、冰水、椰漿/椰奶拌勻成粉漿。
3. 蕃薯/地瓜切片沾上粉漿,放入熱油鍋炸至金黃熟透便可。(吃時可隨個人喜好沾上少量干邑和白砂糖進食)
