go-toは頼りになる人や物、場所を表す表現です。問題が発生した時に頼りになる人、必要な時に頼りになる物、必ず行くお気に入りのレストランなど、真っ先に思いつく第一候補を指します。

2) Call someone out(指摘する)
=================================
call someone outは相手の失礼な言動を指摘したり、不適切な発言をとがめることを意味します。例えば、新入社員に対して横柄な態度をとっている同僚を批判したり、いつも遅れてくる友達を非難するような状況で使われますが、この表現には、特に大勢の前で相手の良くない行為を指摘するニュアンスが含まれます。
<例文>
My boss called out the new employee for being late.
(私の上司は、新入社員が遅刻したので叱りました)
Tom was making excuses again so I called him out in front of everyone.
(トムがまた言い訳をしていたので、私はみんなの前で彼を責めました)
I don’t think he’s aware of his rude behavior. We need to call him out on it.
(彼は自分の失礼な行動に気づいていないと思うので、彼に説教をした方がいいと思います)

3) Boils down to(結局のところ〜)
=================================
boils down to は本来、シチューなどを「長時間煮詰める」ことを表しますが、日常会話では意見が出尽くし議論が煮詰まるような状況で、「要するに〜である」や「結局のところ〜ということになる」といった意味で使われます。話や問題の本質的な部分に迫るニュアンスがあり、例えばある問題について色々と議論をしたが「結局のところはお金だ」と言いたい場合は、“It boils down to money.” のように表します。
<例文>
This issue boils down to trust.
(結局のところ、この問題は信頼に行き着きます)
Becoming a good English speaker boils down to your willingness to speak.
(英語が上手に話せるようになるには、結局のところ「話したい」という気持ちが大切です)
Success boils down to grit and resilience.
(要するに、成功とはやり抜く力と立ち直る力ということです)

4) (Be) On Messenger(メッセンジャーをしている)
=================================
知り合いにインスタやツイッターなど、SNSを利用しているかどうかを尋ねるときに使われる定番の質問が、“Are you on ____?”です。例えば、「ツイッターやってる?」は“Are you on Twitter?”、「ツイッターやってるよ」は“I’m on Twitter.”という具合に言います。be onの代わりにuseを使って、“Do you use Twitter?”と言うこともできます。
<例文>
Are you on Twitter or Instagram?
(ツイッターかインスタはやっていますか?)
I’m on LINE. I’ll send you my QR code.
(LINEをやっているのでQRコード送ります)

5) Split down the middle(均等に分かれる)
=================================
splitは「割る」、down the middleは「真ん中」を意味することから、split down the middleは真っ二つに割ることを意味します。今日の会話でサラは“It splits down the middle nicely.”と言いましたが、これはメッセンジャーを使うアメリカ人の友達と、LINEを使う日本人の友達が半々であることを意味します。
また、split down the middleは「割り勘」を表す時にもよく使われます。レストランで会計をするときに“Let’s split the check/bill down the middle.”と言うだけで、「割り勘にしよう」という意味になります。日常会話では、会計を意味するcheckやbillをitに置き換えて、シンプルに“Let’s split it down the middle.”と表現してもOKです。
<例文>
Some of my friends eat bread for breakfast while others eat rice. It splits down the middle.

蒜蓉蒸大蟶子
材料:
大蟶子5隻
蒜頭5粒
薑1小舊
蔥1條
辣椒仔1隻
處理:
1. 薑,清水洗淨,拍鬆。
蔥,切去根部,洗乾淨,切段。
辣椒仔,洗乾淨,切粒。
2. 預備豉油汁:
a. 大火在鑊中燒熱油1茶匙。
b. 放薑、蔥落鑊。
c. 轉慢火,加入:
▪︎清水3湯匙
▪︎生抽3湯匙
▪︎糖1/4茶匙
滾起後,用隔篩過濾在碗內。
3. 揸住蟶子,在中間用小刀向兩端開,掰開它,刮去黑色部分,清水沖洗乾淨,擎乾水。
4. 蟶子,排好在碟上。
5. 預備蒜蓉汁:
蒜頭,去皮,拍鬆,切碎,放碗內。 加入調味料:
a. 生粉1/4茶匙
b. 糖1/4茶匙
c. 雞粉1/4茶匙
d. 大火在鑊中燒熱油2湯匙,灒入蒜蓉內,撈勻。蒜蓉,擎乾油,鋪在蟶子上。
烹調:
1. 大火煲滾1鑊水。
2. 大火蒸蟶子3分鐘。
3. 蒸好,淋上豉油汁。
4. 加上辣椒粒。
5. 完成,可享用。
Steam razor clams with homemade garlic sauce
Ingredients:
Razor clams (large) 5 Nos.
Garlics 5 Nos.
Ginger (small) 1 No.
Green onion 1 No.
Chili 1 No.
Preparation:
1. Ginger, rinse, beat well.
Green onion, cut the root, rinse and cut in lengths.
Chili, rinse and dice in cubes.
2. Prepare the sauce:
a. Heat up oil 1 tsp at high flame in wok.
b. Add in ginger and green onion.
c. Turn to low flame, add in:
▪︎water 3 tbsp
▪︎light soya sauce 3 tbsp
▪︎sugar 1/4 tsp
Wait for boiling up, filter into a bowl.
3. Hold the clams, cut in the middle towards both ends. Remove the dirts. Rinse thoroughly. Drain.
4. Razor clams, put in rows on plate.
5. Prepare the garlics sauce:
Garlics, peel it, beat well and chop well. Put in a bowl. Add seasoning:
a. Tapioca starch 1/4 tsp
b. Sugar 1/4 tsp
c. Chicken powder 1/4 tsp
d. Heat up oil 2 tbsp at high flame in wok. Pour oil into the garlics sauce, mix well. Garlics sauce, drain the oil, put on top of the clams.
Steps:
1. Heat up a wok of water at high flame.
2. Steam the razor clams at high flame for 3 minutes.
3. Steam well. Pour the sauce on top.
4. Add in chili cubes.
5. Complete. Serve.
