引致便秘的成因眾多,壓力大也是常見原因之一,從中醫角度來看,情緒或久坐少動都會令體內的氣運行不順暢,以致氣滯大腸,大便滯留引發便秘,伴隨症狀包括心情鬱悶、多嘆氣、肋骨脹滿、乳房脹痛、噯氣等。如遇上壓力型便秘,要避免食用辛辣、煙、酒、濃茶等刺激性食物,配合體質適量食用有疏肝理氣的食材,如白蘿蔔、金桔、陳皮、玫瑰花,以及有潤腸通便功效的食材,如熟香蕉、火龍果、木瓜、蘋果、蜂蜜等,要解決壓力來源始能根治便秘問題。
食材小貼士:
哈密瓜性寒,具清暑熱、解煩渴、利小便的功效,且果肉水份充沛,可消暑清熱。如感到身心疲倦、心神焦燥不安,食用哈密瓜有肋清熱解燥。惟注意脾胃虛寒勿吃。
哈密瓜霸王花佛手湯
功效:理氣和胃通便,紓緩壓力型便秘、大便不暢順或粒粒大便等症狀。
材料:哈密瓜1個、霸王花1-2朵、黃耳2塊、佛手9克、腰果30克、南北杏15克、陳皮1角、無花果3枚
做法:
1. 所有材料洗淨,黃耳泡水至軟身;哈密瓜去皮去籽切塊。
2. 鍋中加入2500毫升水及全部材料,武火煮至水滾,調文火煮1小時,最後下鹽調味即可。
備註:體質虛寒或容易腹瀉者不宜飲用。

Soup to relieve constipation
Stress is one of the common causes of constipation. From the perspective of Chinese Medicine, being overly emotional and living a sedentary lifestyle can disrupt the circulation of the qi in the body, causing qi stagnation in the large intestines. The stagnation of feces in the bowels leads to constipation.
Other accompanying symptoms include feeling emotional, frequently sighing, hypochondrium distension, breast swelling, and belching. If constipation is stress-related, cut down on spicy food, alcohol, rich-flavored tea, and avoid smoking. Based on the individual body constitution, consume an appropriate amount of ingredients that can soothe the liver and qi, such as white radish, kumquat, dried citrus peel, and rose flower.
We can also consume ingredients that can moisten the intestines and promote bowel movements, such as ripe banana, dragon fruit, papaya, apple, and honey. Above all, in order for us to relieve constipation effectively, we still need to tackle the source of stress.
Tip on the ingredients:
Cantaloupe is cold in nature, can clear summer heat, relieve thirst, and promote diuresis. The flesh is juicy and can clear summer heat effectively. If you feel tired and anxious, cantaloupe can also decrease irritability. Note that those with asthenic cold spleen and stomach should avoid cantaloupe.
Cantaloupe and night-blooming cereus soup with fingered citron
Effects: Regulates qi and stomach, relieves constipation. Suitable for those with stress related constipation and alleviates symptoms such as difficulty passing stool or hard lumpy stools.
Ingredients: 1 cantaloupe, 1-2 night-blooming cereus, 2 yellow fungus, 9g fingered citron, 30g cashew, 15g sweet and bitter almond, 1 dried citrus peel, 3 dried fig
Preparation:
1. Rinse all ingredients thoroughly. Soak the yellow fungus into water until softened. Peel and core cantaloupe and cut into pieces. Cut the peeled and pulped pumpkin into pieces. Cut the peeled carrot into pieces. Peel the chestnuts.
2. Combine all ingredients with 2500ml of water in a pot and cook on high heat until boiling. Turn to low heat and simmer for 1 hour. Add salt to taste.
Individuals with cold body conditions and prone to diarrhea, should limit their consumption of the soup.

Relieve stress to have healthy bowel movement
Many things can cause constipation. Stress can lead to difficulty passing stool and sometimes constipation. If you have lumpy stool, or the stool is watery, and accompanied by abdominal pain, stomach gurgling, and fart, you may have qi stagnation body condition. Emotions affect qi in the body which leads to poor qi circulation, and intestine with qi stagnation condition can easily cause difficulty passing stool. In order to relieve these symptoms, in addition to eating ingredients that can loosen the bowels to relieve constipation in moderation, you should also relieve stress and regulate qi. Drinking floral tea such as rose tea, moderately cooking soup with white radish, hairy fig root and dried citrus peel, can help relieve qi stagnation symptoms. Meanwhile, you should avoid eating spicy food and staying up late. You can have healthy stool one day.

Ingredients: water, dragon fruit juice, rock sugar, honey, rose, lemon juice concentrate, oolong tea
Effects: loosens bowel to relieve constipation, relieves stress, aids digestion and burns fat. Suitable for those with difficult passing stool, stress, frequent sigh and dull complexion.
Note: not suitable for menstruating women, but can have this tea before period. Not suitable for pregnant women.

Hello friends! Today we're going to share with you how to make the super fluffy but light in the texture American style pancakes.
The pancake's shape and structure varies worldwide. But fluffy American pancakes are on my A-list. Everybody loves pancakes because they're so easy to make, but NOT THAT EASY. I mean if you want to make the most delicious one.
So we did some research to find the recipe. New York Magazine has voted Clinton St. Bakery Co’s pancakes are the best in New York city twice, so no doubt, we tried their recipe. And we love it. They are rich in flavor but light in texture. Super Yummy. Their pancakes are famous for a reason.
In this video, we’ll share the secret of these pancakes step by step, and how to make the fluffy texture (almost like a cake). They are great for a weekend brunch, and we strongly recommend topping with maple butter and blueberries compote. Of course you can also add some crisp fried bacon with it, they are a classic American breakfast dream team forever :). Wow~so enjoyable. Every day should start like this.

How to make blueberry pancakes
☞ Yield: 8~10 servings, using ¼ cup to scoop the batter
✎ Ingredients
📍 pancake
all purpose flour 160g
milk 220g
baking powder 6g
granulated sugar 70g
salt 2g
unsalted butter 58g, melted
egg 2, M~L size
vanilla extract 2g
📍 maple butter
maple syrup 160g (about 1/2 cup)
cold unsalted butter 110g, cubed (about 1/2 cup)
📍 blueberry compote
fresh or frozen blueberries 178g (1 cup)
granulated sugar 22g (2 tbsp)
lemon juice 5g (1tsp)
✎ Instructions
📍 pancake
1. Sift flour and baking powder together into a large mixing bowl. Then add sugar and salt and mix well.
2. Separate egg yolks from egg whites. Add vanilla extract, milk and melted butter into yolks bowl, and whisk until combined.
3. Beat the egg whites by electric mixer or by hand with a whisk until foamy, then add sugar in 3 batches and continue whisking until they reach medium soft peaks.
4. Pour the egg yolk and milk mixture into the dry mixture, just mix until the flour is dissolved, the batter will be slightly lumpy. Don't over mix it.
5. Next, gently mix half of the whipped whites into the batter, using the whisk to mix from the bottom, then add the rest of the whipped whites and keep folding it in, but no need to fully incorporate.
6. Heat the griddle until hot about 190°C. Drop half cup of pancake batter on the griddle to test the temperature and let set. Once bubbles form and pop, flip it. If the color is nice, the heat is enough. (A common mistake many people make is they don't heat the griddle enough, which is why we need to test the first one.) BTW, if you prefer the crispy on the edge, you can grease the hot surface with a little oil or butter.
7. Add 1/4 cup pancake batter, as the pancake cooks, you will see bubbles start to form on top, once the bubbles pop and become holes, it's time to flip. (3~3.5 mins per side)
8. Repeat the process with remaining batter, you can add some blueberries on top to create fruit flavor. Cooking several pancakes at a time. Transfer cooked pancake to a plate and garnish with confectioners’ sugar on top. Serve warm with maple butter and blueberry compote. Enjoy! To keep the pancakes warm while you make more, you can preheat the oven to 50°C and transfer cooked pancakes in to keep warm.

1. Heat maple syrup in a small saucepan over medium heat.
2. Add cold butter to warm syrup (never bring to a boil), whisking until sauce is smooth and all of the butter is incorporated. Maple Butter can also be kept refrigerated for up to two months. Reheat before using.
📍 blueberry compote
1. Simply combine blueberries, sugar and lemon juice in a small pot over medium-low heat, stirring continuously.
2. Once cooked, simmer for 4-5 minutes, keep stirring until a thick mixture has formed.

Bahan-bahan (Lapisan Pandan)
1 cwn tepung beras
1 cwn gula pasir
4 cawan air + 10 helai daun pandan (kisar)
Bahan-bahan (Lapisan Santan)
2 cwn santan
1 cwn air
4 sb tepung beras
1/2 sk garam
Cara memasak
1. Lapisan Pandan: Kisar air dan daun pandan sehingga halus. Tapiskan.
2. Dengan menggunakan api kecil, masak air pandan, tepung beras dan gula.
3. Teruskan mengacau sehingga adunan menjadi pekat dan tidak berketul. Ketepikan.
4. Taburkan sedikit gula ke dalam cawan kaca. Tuangkan adunan lapisan pandan hingga memenuhi separuh cawan.
5. Lapisan Santan: Masukkan air dan masak santan, tepung beras, garam secukup rasa dengan menggunakan api kecil.
6. Kacau berterusan sehingga adunan santan menjadi pekat dan tidak berketul.
7. Kemudian, tuangkan adunan ke atas lapisan pandan tadi. Sejukkan di dalam peti ais.
8. Kuih Tepung Pelita siap untuk dihidangkan.

1. Pandan Layer: Blend water with pandan leaves until smooth. Then, filter the juice.
2. On low heat, cook pandan juice, rice flour, and sugar.
3. Keep stirring until the mixture is thickened and not lumpy. Set it aside.
4. Sprinkle a bit of castor sugar into glass cups. Pour the pandan batter until half-full.
5. Coconut Milk Layer: Pour water and cook coconut milk, rice flour, a bit of salt on low heat.
6. Keep stirring until the mixture is thickened and not lumpy.
7. Then, pour on top of the pandan layer. Chill them in the fridge.
8. Tepung Pelita is now ready to be served.

みかんの抹茶大福
2個分
材料:
みかん 2個
白こしあん 120g
■ぎゅうひ
白玉粉 80g
砂糖 50g
抹茶パウダー 小さじ2
水 80-100ml
片栗粉 適量
抹茶パウダー(仕上げ用) 適量
作り方:
1.みかんは皮をむいて白い筋も取り除く。
2.白こしあんを2等分して丸く広げ、(1)のみかんを包む。
3.ぎゅうひを作る。小鍋に白玉粉、砂糖、抹茶パウダーを入れて混ぜたら水を少しずつ加え、ダマにならないようにしっかりと混ぜ合わせる。
4.(3)を中火にかけて絶えず全体をよく混ぜ、なめらかになったら火を止める。
5.まな板の上に片栗粉をふり、(4)の生地を手に水をつけて取り出す。上からさらに片栗粉をまぶし、粗熱が取れたら手で広げて2等分にし、(2)を包む。
6.器に盛って、仕上げ用の抹茶パウダーを振りかけたら、完成!
Mikan Matcha Daifuku
Servings: 2
INGREDIENTS
2 Mikan
120g White bean paste
80g Shiratamako 80g
50g Sugar
2 teaspoons Matcha powder
100ml Water
Potato starch
Matcha powder (for topping)
PREPARATION
1. Peel the Mikan and remove the white fibers.
2. Divide the white bean paste into two equal parts, spread them into a circle, and wrap the mikan in it.
3. Put Shiratamako, sugar, and matcha powder in a small pot and mix, then add water little by little and mix well so as not to get lumpy.
4. Put (3) on medium heat and mix thoroughly well, then turn off the heat when smooth.
5. Sprinkle potato starch on a cutting board, and take out the dough from (4). Sprinkle more potato starch on top, and wait for it to cool. Spread it by hand and divide it into two equal parts and wrap (2) with the matcha dough.
6. Place in a bowl and sprinkle with matcha powder to finishing, and you're done!
7. Enjoy!
