Lai Yee's Kitchen - Rice Paper Chee Cheong Fun and rice paper crackers

Too much work to make your own Chee Cheong Fun at home or miss having Dim Sum? Here is a great tip I have learnt from @jeanabeanstudio today. It is fun and easy to make. Good try! Cheong fun (肠粉) is on the menu of every Dim Sum restaurant. Cheong fun has a light and soft texture, non-oily, and is served hot right from the steamer. You only need simple ingredients to make it, primarily a batter of rice flour and some shrimp and char siu, or served right with a savory sauce consisting of premier-grade soy sauce and some sugar. BUT if you do not have the right steamer or patience, you won't even bother to make it yourself. Try this Jean's way. Damn easy and works well for me. JUST use those Vietnamese's rice paper for spring rolls! I have even gone a little further by showing you what else you can use these rice papers besides making into spring rolls or cheong fun. My fillings are more like the Ipoh's style cheong fun. Ok Jom!

Ingredients for filling:
. 2 carrots, shredded
. 100g minced ginger
. 1 whole garlic, finely chopped
. 500g minced chicken
. 2 tbsp oyster sauce
. 1 tbsp soy sauce
. 2 tsp white pepper
. 1 tsp sesame oil
. Oil

For Cheong Fun:
. The cooked filling
. Rice papers
. 2 eggs, beaten
. 1 cup Chopped coriander or spring onions
. A bowl of hot water to soften the rice papers
. Oil for rolling the cheong fun
. Water

For Rice Paper Crackers :
. The cooked filling
. Oil for deep frying (must be super hot to achieve the best result)
. Rice papers

For Sweet Sauce :
. 5 tbsp Hoisin sauce
. 1 tbsp soy sauce
. 1 tbsp oyster sauce
. 1 tbsp minced garlic
. 1/2 tbsp minced ginger
. 1 tsp white pepper
. 1 tsp sesame oil
. 1/2 cup water

For Garnishing :
. Chopped Spring onions or coriander
. Fried Shallots
. Toasted sesame (it is good to have)

One filling, two ways of serving it. Fast, easy and appetizing meal for a weekend or a lazy day! Make sure you have really nice spicy sauce to drizzle over the crackers and cheong fun. I had my Mel's Kidnap Me Sauce on standby. I am happy! Thanks Jean for sharing, it works!

【材料】
●米：2.5合
●もち米：0.5合(もち米じゃなくても十分美味しいですよ)
●薄口しょうゆ：大さじ2(普通の醤油でももちろんOK)
●塩少々
●かつお節：40g
●乾燥昆布：20g
●水：1000ml
[おかか、鰹の佃煮]
●醤油：大さじ2
●みりん：大さじ2
●砂糖：大さじ1
※昆布の方は細切りにしておかかと同じ調味料を入れていい感じに水分が飛んだら炒りゴマを足せば出来上がりです。
材料は本当にシンプルですが今まで食べてきたおにぎりの中で間違いなく一番美味しいです。
噛めば噛むほど旨みと香りが溢れてきて毎日食べても飽きない至高のおにぎりだと思いました。
セブンイレブンのかつおめしが大好きな方には是非一度食べて頂きたいです。
自分で炊きたてで作るこの金のおむすびはレベルが全然違います。
色もそうですがまさに金メダル級の美味しさです♪
鰹の佃煮も想像以上に美味しいですよ!!
作り方は昆布だしだけ時間はかかりますがとっても簡単です。
是非作ってみて下さい。
【Ingredients】
●Rice：375g
●Sticky rice：75g(Even if you don’t have it, you can make deliciously)
●Light Soysauce：2 tablespoons (Regular soy sauce is totally OK)
●Salt: proper mount
●Bonito Frake：40g
●Dried Kelp：20g
●Water：1000ml
[Bonito、Simmered bonito with seasoning]
●Soy sauce：2 tablespoons
●Sweeten Japanese Sake：2 tablespoons
●Sugar：1 tablespoon
Cutting Kelp the same size as bonito and simmering with seasoning. After simmering, add roasted sesame.
The best Rice ball ever even though the ingredients are very simple. Each bite you can feel Umami and good flavor. You will want to eat almost every day. This is the absolutely addictive Rice ball.
If you are a Bonito rice lover at Seven Eleven, then I would like you to try it
It is totally a different level of Rice ball you can make with freshly cooked rice.
The color is also gold, but the taste also deserves to a gold medal
Simmered bonito is also delicious!!
Cooking Kelp stock needs time, but an easy way to make it.
Please try to cook it!

築地為東京廚房、大阪有黑門市場、札幌就有二條市場做代表 Tsukiji is Tokyo Kitchen, Kuromon Market in Osaka, and Nijo Market in Sapporo

札幌廚房起源於明治初期, 起初只是一排排的魚檔, The Sapporo kitchen originated in the early Meiji period.At first it was just rows of fish stalls.

發展至今，已經有好多餐廳、乾貨和生果售賣 Until now there have been many restaurants, dried goods and fruit sales.

二條市場最大的賣點, 就是地理位置方便 The biggest selling point of the Nijo markets is the convenient location

說回二條市場, 有大約15間水產公司和魚店，販賣當日入貨最新鮮的海鮮。 Speaking of Nijo Market, there are about 15 aquatic companies and fish shops that sell the freshest seafood that day.

除了鮮魚之外，亦有好多店舖販賣乾貨和海產加工品。In addition to fresh fish, there are also many shops selling dry goods and processed seafood.

有好多店舖提供寄送服務, 當然是要附加費用啦。 There are many shops offering delivery services, of course at an additional cost

北海道有三大名蟹, 就是帝皇蟹、松葉蟹，以及毛蟹。There are 3 famous crabs in Hokkaido, namely emperor crab, Matsuba crab and hairy crab.

帝皇蟹又細分為鱈場蟹、棘蟹、花咲蟹與油蟹4種，King crab is further subdivided into 4 types: Red King Crab, spiny crab, flower crab and oil crab.

蟹肉特別結實，粗壯而肉質飽滿的蟹腳更是賣點，Crab meat is particularly strong, thick and plump crab legs are a selling point
