雪珍姐在菜市場的道上,一如往常地因為並沒有招牌所以很容易錯過。
問為何做那麼多年不做招牌,雪珍姐笑笑地說好吃不怕人不知道,純做口碑不打廣告?自信度大大的燃起五花肉的鬥志。
米粉湯吃下第一口的味道感覺平平?
米粉湯沒有很華麗的湯頭口感是為了配合小菜,不搶走小菜豐富的層次感,讓小編覺得這是近期吃過最好吃的黑白切。
豬皮的彈勁好像吃了一口扎實的膠原蛋白。
嘴邊肉跟肝連的軟嫩度恰好肉香跟容易食用都顧到了!
(有些店家肝連處理方式不佳會有不容易咀嚼的情形)。
大腸跟粉腸乾淨不腥。
名滿天下的油豆腐,光旁邊的一位阿姨一個人就點了三大塊油豆腐,油豆腐外層油炸過後的香氣配上軟嫩內層濃郁豆香,搭上醬油膏和韭菜,非常相輔相成。
跟一般的黑白切不同,放的不是蔥,放的是滿滿的韭菜(如果不吃韭菜要提前跟老闆說),但韭菜跟黑白切很契合,非常建議暗黑們就吃韭菜吧!
如果要飽足感可以再配上一碗乾意麵,乾意麵是道地台南味,Q彈的口感在多次的咀嚼後,麵香會在口中散發。
不怕辣的暗黑們,強烈建議可以沾點辣椒食用,這裡的自製辣椒醬真的是很特別的味道,那股辣味的香氣很多層次,卻不會破壞掉你的味覺又充滿了味道,五花肉真想問問老闆娘是怎麼做的。

XueZeng’s rice noodle shop is located in a traditional market, there’s no sign like many of those small old restaurants, easy to be missed.
If you ask why not hang out a signboard for more attention, XueZeng the owner would smile and tell you:” If your foods are good, never worry to be forgotten.”
The confidence bring up my curiosity, now I have to try it!
You may think the first taste is not as special as you expected.
Let me tell you, the simple noddle soup is a competent supporting role to upgrade the texture of the side dishes. The “Black and White dishes” here are the best I have ever had so far. “Black and White dish” is a Taiwanese common saying of the side dishes in a noodle shop, you can pick whatever you want to make it a dish.
You will be surprised by the springy mouthfeel of the pig’s skin, the tenderness of pork, and the freshness of intestines.
The most popular Black n’ White dish here is the fried tofu, the lady who sat next to me ordered 3 for herself, and it’s a common scene you can see here. The flavorful fried skin and the soft tofu make a great combination
The specialty of the Black n’ White dish here is they add Chinese chives, instead of spring onion like other restaurants. If you don’t hate Chinese chives, I highly recommend you to give it a try.
If there’s more room in your stomach, you can order a bowl of dry noodle. The dry noodle is very Tainan style, you can also try their homemade chili sauce with the noodle. The spicery of the chili sauce is full of textures, but not too strong to dominate your taste buds.
