一塊陳皮 1 dried tangerine peel
馬蹄碎30克 30g water chestnut
半茶匙鹽 1/2 tsp salt
調味料: Marinade:
生粉兩茶匙兩湯匙水 2 tsp potato starch + 2 TBS water
半茶匙胡椒粉 1/2 tsp ground pepper
半隻發勻雞蛋 1/2 egg
半茶匙糖 1/2 tsp sugar
一茶匙麻油 1 tsp sesame oil

食材份量 Ingredients
兩碗冷飯 2 bowls cooked rice
兩隻雞蛋 2 eggs
一粒大乾瑤柱(浸發好) 1 dried conpoy (soaked)
130克雞胸肉 130g Chicken breast
80克 (12隻)冰鮮蝦 80g (12 pcs) frozen / fresh prawns
50克紅蘿蔔 50g carrot
兩隻乾冬菇重10克 (浸發) 10g dried Shittake mushrooms
蘆筍一條或兩條芥蘭梗 1 stick of asparagus or 2 sticks of Gai Lan stalks
打芡調味料: Sauce ingredients:
一湯匙蠔油 1 TBS Oyster sauce
1/6茶匙胡椒粉 1/6 tsp ground pepper
一茶匙麻油 1 tsp sesame oil
1.5茶匙生粉加1湯匙水 1.5 tsp potato starch + 1 TBS water
1/4茶匙糖 1/4 tsp sugar
400毫升雞湯或菜湯 400ml chicken or vegetable stock
加100毫升的水 100ml water : use the soaked liquid from conpoy &
mushroom
(留起浸乾瑤柱及浸冬菇的水加入)
一粒紅蔥頭 1 shallot
一片薑 1 ginger slice
