「夏天多吃瓜果,冬天多吃葉菜」入冬過後逛街市就發現不少當造靚菜,例如茼蒿、芥蘭等,但論矜貴度一定不及豆苗,因為價格比其它蔬菜昂貴,一般會以半斤標價,接近農曆新年時豆胚更隨時賣過百元一斤!豆胚豆苗怎麼分?豆胚是豆苗最幼嫩的胚芽部分,嫩滑無渣,而豆苗則是荷蘭豆的莖葉。豆苗售價昂貴,是因為要把握適當時機人手採摘,時機一過或者摘下過老的葉子,吃下去便有渣了。從中醫角度來看,豆苗性平,有調和脾胃之效,趁當造時吃就最好了。
